LINGUINE WITH SHRIMP AND ASPARAGUS

Steps:
- Melt 1/4 cup butter in large skillet over medium-high heat. Add shrimp; sautée until opaque in center, about 2 minutes. Using slotted spoon, transfer shrimp to bowl. Add shallots and asparagus to saucepan; sautée until shallots are tender and slightly brown, about 3 minutes. Add plum tomatoes, cream, vodka and sun-dried tomatoes. Simmer until tomatoes are tender, about 4 minutes. Add shrimp; toss to coat.
- Meanwhile, cook linguine in large pot of boiling salted water until tender but still firm to bite. Drain well, reserving 1/2 cup cooking liquid. Return pasta and reserved cooking liquid to pot. Add sauce; toss to coat. Season with salt and pepper. Transfer to serving dish. Sprinkle with basil and serve.

- Cook pasta according to package directions. Meanwhile, sprinkle shrimp with salt and pepper flakes. In a large skillet or wok, heat 1 tablespoon oil over medium-high heat. Add shrimp; stir-fry until pink, 2-3 minutes. Remove; keep warm. , In same skillet, stir-fry the next 5 ingredients in remaining oil until vegetables are crisp-tender, about 5 minutes. Add wine and seasonings. Return shrimp to pan., Drain pasta; add to shrimp mixture and toss gently. Cook and stir until heated through, 1-2 minutes. Sprinkle with Parmesan cheese. Serve with lemon wedges.

Steps:
- Cook linguine as directed on package. Drain, reserving 1/4 cup of the pasta cooking water.
- Meanwhile, melt butter in large, deep skillet on medium heat. Add asparagus and leeks; cook and stir 5 minutes or until asparagus is tender-crisp and leeks are softened.
- Stir in half-and-half, tarragon, lemon peel, lemon juice and salt. Bring to boil.
- Stir shrimp into skillet. Reduce heat to low; simmer 5 minutes or just until shrimp turn pink.
- Add linguine and reserved pasta cooking water; toss to coat well. Serve immediately.
- Serve with a salad and sourdough bread.

Steps:
- All items are prepared simultaneously.
- Cook past according to package directions.
- In large skillet, add the oil and 1/4 cup butter. Once melted add 2 tablespoons of garlic and saute for 1-2 minutes. Add the asparagus and shrimp, with light salt and pepper to taste. Simmer on low.
- In second large skillet, melt remaining 1/2 cup butter. Add cream, garlic, light salt and pepper to taste. Bring to a slow boil and slowly whisk in Parmesan cheese. Keep stirring to prevent sticking for about 2-3 minutes. Remove from heat.
- Drain pasta and combine with sauce and shrimp/asparagus mixture. Sprinkle with Parmesan cheese when served.

- Boil water in a large pot and salt generously. Cook pasta per package directions. Trim the tips off the asparagus, down to about 3 inches from the tip. Add the asparagus tips into the boiling water with the pasta for the last 2-3 minutes of cooking.
- Meanwhile, heat the cream, butter salt and pepper in a large skillet over low heat. Add the lemon zest, lemon juice and Parmesan and stir to combine. Add the (cooked, thawed) shrimp to the sauce. Keep warm over low heat until the pasta is done.
- If draining pasta and asparagus, remove 1 cup of the pasta cooking water and set aside, otherwise, use tongs to transfer the pasta and asparagus to the skillet with the cream/shrimp mixture. Add 1/4 cup of the pasta cooking liquid and cook over medium-low heat, tossing well, until well coated and the shrimp is warmed through. Taste and add more salt, pepper and additional lemon juice, as needed.
