SEAFOOD LASAGNA

Steps:
- Preheat oven to 350°. Spray a 2½-quart baking dish with nonstick cooking spray. In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook, stirring occasionally, for 8 minutes or until onions are tender. Add wine, and cook for 2 minutes. Stir in Alfredo sauce, shredded cheese blend, and nutmeg until cheese melts. Remove from heat, and stir in shrimp, crab, and flounder. In a medium bowl, combine ricotta, egg, and parsley. In bottom of prepared pan, spread ¼ cup ricotta mixture. Place 3 lasagna noodles over ricotta mixture (do not overlap noodles). Spread one-third of remaining ricotta mixture over noodles. Top with one-third of seafood mixture, and sprinkle with one-third of mozzarella. Repeat layers twice. Bake for 35 to 45 minutes or until hot and bubbly. Let stand for 10 minutes before serving.
CHICKEN ALFREDO WITH CRISPY BACON

- In a large skillet, cook bacon over medium heat until crisp. Let bacon drain on paper towels, reserving drippings in skillet. Chop bacon.
- Sprinkle chicken with pepper and salt; add to skillet, and cook for 3 to 5 minutes per side or until brown. Add broth, cover, and cook for 10 to 15 minutes or until cooked through. Remove chicken, and shred with forks.
- Add onion and garlic to skillet, and cook, stirring occasionally, over medium-high heat for 5 minutes or until tender. Add cream and chicken, and cook for 5 minutes or until slightly thickened. Remove from heat, and stir in cheese and parsley until melted. Add fettuccine and reserved cooking liquid, tossing to combine; sprinkle with bacon.

- Cook fettuccine according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth; gradually add half-and-half. Bring to a boil; cook and stir for 1 minute or until thickened. Drain fettuccine; stir into pan. Stir in the shrimp, cheese and salt; heat through. Sprinkle with parsley before serving.

FRIED SHRIMP

Steps:
- Preheat oil to 375 °F.
- Line a baking tray with paper towels and set aside. In a shallow baking dish, whisk together milk, buttermilk and hot sauce. In a separate shallow baking dish, whisk together flour, cornmeal, pepper and salt. Make sure your shrimp are dry and dredge in the dry mixture first, then wet mixture and finally the dry mixture again. Shake off excess between each dredging.
- Deep-fry in batches, but do not overload the fryer. Fry for 2 minutes or until golden brown. Remove from oil with a slotted spoon and drain on the paper towel lined baking tray. Serve warm.
SHRIMP & CRAB AU GRATIN BY PAULA DEEN
I watched Paula Deen make this and knew right away I had to make it! It's very rich but very, very good. I served this with crackers as an appetizer.

Steps:
- Melt butter in saucepan over low heat. Stir in flour and cook for 1 minute, stirring constantly. Slowly add the milk, stirring with whisk to remove all lumps. Cook for 2 more minutes.
- Add the wine, lemon juice, salt, black pepper & cayenne pepper, stirring well. Continue to cook until smooth and thickened.
- Remove from heat.
- In separate pan bring 2 cups water & 1/2 teaspoons salt to boil. Add shrimp, return to boil; cook for 1 minute. Drain immediately and rough chop.
- Place roughly chopped shrimp and cleaned crab meat in large bowl. Toss with hands to mix completely taking care not to break up crab meats.
- Pour sauce over the seafood. Gently fold using large spoon or spatula.
- Spray 8-inch dish and pour mixture into the dish. Top with grated cheese, making sure to completely cover the seafood mixture.
- Bake uncovered in preheated 350º oven for 25-30 minutes or until bubbly.

This is a super simple recipie For Alfredo sauce, I think it is better than the original version and you can cook the whole meal in about 20 minutes.

- Cook Broccoli according to package directions.
- Cook Fettuccini to package directions.
- In a large Skillet over medium heat saute chicken (or shrimp and garlic in butter).
- Remove and keep warm.
- In same skillet, over medium heat combine cream cheese, milk and parmesan cheese.
- Cook until cheeses are melted and smooth.
- Stir in Broccoli, chicken (or shrimp) salt and pepper.
- Drain Fettuccini and top with mixture.
