SHRIMP NAAN PIZZAS
These personal Naan Shrimp Pizzas are ready in under 20 minutes for a fresh, delicious meal on a busy day.

Steps:
- Preheat oven to 400F.
- Toss the shrimp with lemon pepper seasoning (or garlic powder), add salt if your seasoning doesn't have salt. Heat the olive oil in a medium skillet and cook shrimp about 2 minutes per side, or until fully cooked. Set aside.
- Assemble the pizzas on a large baking sheet: Top each naan bread with half the marinara sauce, mozzarella slices, grape tomatoes, shrimp, and basil leaves. Sprinkle with freshly ground black pepper. Bake at 400F for 10-15 minutes, or until the cheese has melted and the pizzas are heated through. Garnish with the remaining fresh basil leaves.

GRILLED SHRIMP PIZZA

- Preheat a grill to medium high. Toss the shrimp and onion in a bowl with the olive oil and oregano. Season with salt and pepper.
- Stretch the pizza dough into a roughly 8-by-10-inch rectangle. Lightly brush the grill with olive oil. Lay the dough on the grill and cook until the top begins to bubble and the bottom is marked, about 3 minutes. Remove with tongs and put cooked-side up on a cutting board. Brush with olive oil.
- Grill the shrimp and onion, turning, until the onion softens and the shrimp are lightly charred, about 5 minutes. Top the crust with the shrimp and onion, then slide the pizza back onto the grill. Top with the tomatoes and feta, cover and grill until the dough is cooked through and the cheese is soft, about 5 more minutes.
- Carefully transfer the pizza to the cutting board. Sprinkle with the parsley and cut into pieces.

SHANNON'S SHRIMP ALFREDO
This recipe is easy to prepare because it uses some store bought items such as alfredo sauce, but impressive because you still do a lot of it yourself. It is prettey fast for prepare, less than an hour. My family loves it! I never have any left overs.

- Start the pasta boiling. Peel the shrimp and devein them if you would like. Set them aside.
- Dice onion and saute in butter with the garlic. When onions are crisp-tender (3-5 min.), add tomatoes and shrimp. If a whole can of tomatoes is more than you think your family will want, then only add half. Cook, stirring often until shrimp is done. If you overcook the shrimp it will be tough. Remove pan from heat. If there is a lot of juice from the tomatoes, pour some out. A little juice is good. Add alfredo sauce and stir. Return to low heat to warm sauce.
- Drain pasta noodle. Pour shrimp and alfredo sauce over noodles and stir.
- Like most of my recipes, this one is very forgiving and easy to manipulate. Sometimes I leave the tomatoes out, sometimes I add some fresh basil. I hope you enjoy.
