ANYTIME FRUIT SALAD



Anytime Fruit Salad image

Add some fun to an otherwise typical fruit salad recipe with yellow bell peppers, walnuts, vegetable oil, and mild cheddar cheese.

1/4 cup vegetable oil
2 Tbsp. fresh lime or lemon juice
2 tsp. sugar
1/4 tsp. pepper
1/4 tsp. hot pepper sauce
1 tart apple, cut into thin wedges and halved
1/2 yellow bell pepper, cut into slices and halved
3 kiwi, peeled and sliced
1/2 cup each halved seedless red and green grapes
1/2 cup (2 oz.) coarsely chopped walnuts
1 cup (4 oz.) Sargento® Shredded Mild Cheddar Cheese - Fine Cut
Lettuce

Steps:

  • Blend oil, lime juice, sugar, pepper and pepper sauce in small bowl; set aside.
  • Combine apple, bell pepper, kiwi, grapes and walnuts in large bowl. Add lime dressing; toss. Refrigerate 30 minutes. Toss with cheese. Serve on lettuce-lined salad plates.

2 stalks celery, sliced thin
2 apples, grated
6 radishes, grated
1 cup raisins
1/2 cup chopped dates
1/2 cup chopped dried apricot
1/2 sliced almonds
1 cup plain yogurt or 1 cup vanilla yogurt
1/2 teaspoon salt
1/2 cup lemon juice
1/4 cup honey
3/4 cup oil
1 dash salt

Steps:

  • In a large bowl, combine all the grated vegetables, apples, dried fruit, and nuts.
  • In another bowl, stir together the remaining ingredients.
  • Pour over the salad and toss to combine.
  • Chill before serving.
  • Line a salad bowl with some lettuce leaves and fill with the fruit and vegetable mixture for a pretty presentation.

3/4 cup chopped red apple
1/2 cup seedless red grapes, halved
1/4 cup reduced-fat mayonnaise

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine the mayonnaise and salt. Stir into pepper mixture. Cover and refrigerate for at least 1 hour. Serve on lettuce leaves.
