SHREDDED WHEAT BANANA BREAD



Shredded Wheat Banana Bread image

2 Cups Flour
3/4 Tsp Baking Soda
1/2 Tsp Salt
1 Cup Sugar
1/4 Cup Butter (Softened)
2 Large Eggs
1 1/2 Cups Mashed Ripe Bananas
3/4 Cup Mom's Best Cereals Shredded Wheat (Crushed & Divided)
1 Tsp Vanilla Extract

Steps:

  • Preheat the oven to 350*.
  • Combine the flour, baking soda, salt, sugar, and butter in a large mixing well.
  • Add in the eggs and mix well.
  • Add in the banana, 1/2 cup shredded wheat, and vanilla.
  • Grease a 9-inch loaf pan and spoon batter into it, spreading it evenly.
  • Top it with the reserved shredded wheat.
  • Bake for 1 hour at 350* or until when poked with a toothpick in the deepest part it comes out clean.
  • Cool and carefully remove from pan.
  • Serve.

SOFT MULTIGRAIN BREAD

This is wholesome multigrain bread with an irresistibly soft and fluffy interior. For best success, take the time to review the recipe notes before starting. Though not required, an instant read thermometer is helpful in a few of these steps.

1/2 cup (60g) dry multigrain cereal mix or rolled oats (see note)
1 and 3/4 cups (410ml) boiling water
2 and 1/4 teaspoons (7g) instant or active dry yeast (1 standard packet)
3 Tablespoons (37g) packed light or dark brown sugar
3 Tablespoons (45g) unsalted butter, softened to room temperature
1 and 1/2 teaspoons salt
3 and 1/3 cups (433g) bread flour, plus more as needed and for hands/work surface
optional: 1/2 cup (60g) sunflower seeds, chopped nuts, pepitas, raisins, or dried cranberries

Steps:

  • Place cereal mix in a large heatproof bowl (you can also use the bowl of your stand mixer). Pour boiling water on top. Let the mixture cool until a digital thermometer reads about 110°F (43°C). This usually takes 20 minutes. Pay attention to the temperature because if it's too hot, it will kill the yeast. If it became too cool, however, it's not a problem- the dough may just take a few extra minutes to rise.
  • Whisk the yeast, sugar, and all of the warm water/cereal mixture in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5-10 minutes or until foamy and bubbly on the surface.
  • Add the butter, salt, and 1 cup (about 130g) flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add another cup of flour. Beat on medium speed until relatively incorporated (there may still be chunks of butter). Add all of the remaining flour and the seeds/nuts (if using), then beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If it seems too sticky, add more flour, 1 Tablespoon at a time until it begins to pull away from the sides of the bowl. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer (and switch to the dough hook if you used the paddle) and beat for an additional 2 minutes OR knead by hand on a lightly floured surface for 2 minutes. Dough is soft, yet heavy.
  • Lightly grease a large bowl with olive oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×5 inch loaf pan.
  • When the dough is ready, punch it down to release the air. Lightly flour a work surface, your hands, and a rolling pin. Roll the dough out into a large rectangle, about 8×15 inches. It does not have to be perfect- in fact, it will probably be rounded on the edges. That's ok! Roll it up into an 8 inch log and place in the prepared loaf pan.
  • Cover shaped loaf with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until it's about 1-2 inches above the top of the loaf pan, about 1 hour. (See photo above for a visual.)
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the bread towards the bottom of the oven so the top doesn't burn.)
  • Bake for 35-40 minutes- if you notice the top browning too quickly during bake time, loosely tent the pan with aluminum foil. How to test for doneness- give the loaf a light tap. If it sounds hollow, it's done. For a more accurate test, the bread is done when an instant read thermometer reads the center of the loaf as 195°F-200°F (90°C-93°C).
  • Remove from the oven and allow bread to cool for a few minutes before slicing and serving. Feel free to let it cool completely before slicing, too.
  • Cover leftover bread tightly and store at room temperature for 2-3 days or in the refrigerator for up to 10 days.

1 cup bite size frosted wheat cereal
1 cup brown sugar
½ cup shortening
1 teaspoon salt
1 cup boiling water
2 (.25 ounce) packages active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
2 eggs
6 cups bread flour

Steps:

  • In a large bowl, combine cereal, brown sugar, shortening and salt. Pour boiling mixture over mixture. Let cool to room temperature.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Combine cereal and yeast mixtures. Add eggs and two cups flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until brown, about 30 minutes. Remove from pans and let cool on a wire rack.

  • 1. to the boiling water and the 2tsp sugar add the nabisco shredded wheat. crumble it up. let set until warm and add the yeast. add the melted butter, sugar, salt, and honey, eggs. start adding the flour to make a soft dough.knead and rise. form into two loaves and rise. bake until hollow sounding bake at 350
  • 2. shredded wheat use to come in large rectangles. so depending on what kind i buy, it could be 2-3. one time i used 4 so this is a forgiving recipe.

1 cup crushed Shredded Wheat cereal
1/2 cup molasses
2 tablespoons shortening
1-1/2 teaspoons salt

5-1/2 to 6-1/2 cups all-purpose flour
Melted butter, optional

Steps:

  • In a large bowl, pour boiling water over cereal. Add the molasses, shortening and salt. Let stand until mixture cools to 110°-115°, stirring occasionally. , In a bowl, dissolve yeast in warm water. Add cereal mixture and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks. Brush with melted butter if desired. Cool.

3/4 cup milk
1 cup All-Bran
6 tablespoons butter, cubed
1/3 cup dark molasses

2 cups whole wheat flour
3-1/4 to 3-3/4 cups all-purpose flour

Steps:

  • In a saucepan, combine 1 cup water and milk; bring to a boil. Remove from the heat; stir in the cereal, butter, molasses, sugar and salt. Cool to lukewarm. Heat remaining water to 110°-115°; pour into a large bowl. Sprinkle with yeast; stir until dissolved. Add cereal mixture and whole wheat flour; beat well. 5 teaspoons baking soda

Steps:

  • In a large bowl, combine oats, Shredded Wheat and bran. Add buttermilk, water, oil and eggs; stir for 1 minute. Stir in brown sugar. Combine flour, baking soda and salt; add to the cereal mixture until blended. , Fill greased or paper-lined muffin cups two-thirds full. 2 shredded wheat biscuits
2 tablespoons butter
2 teaspoons salt
1/3 cup molasses
1 (1/4 ounce) package dry yeast
1/4 cup warm water
5 cups flour (approxmately)

Steps:

  • Measure the boiling water, butter, salt, and molasses into a mixing bowl, and crumble the shredded wheat into this; cool to lukewarm.
  • Dissolve the yeast in the 1/4 cup warm water and let proof for a few minutes.
  • Add this to the above lukewarm mixture.
  • Add the flour by cupfuls, using as much as you need to have a fairly stiff dough.
  • Knead 100 times.
  • Grease a bowl and place dough into it.
  • Let rise for 2 hours, covered.
  • Punch down and rise another hour.
  • Turn out on lightly floured board, punch down, and let rest for 10 minutes.
  • Make into two loaves, place in greased pans, let rise till double.
  • Bake 400 degrees for 50 minutes, covering with foil if it gets too brown.
