CHEESECAKE SHOT-GLASS DESSERTS



Cheesecake Shot-Glass Desserts image

Like personalized parfaits, these charming desserts, with hints of coffee and rich chocolate, make a sweet finish to any gathering.

2 packages (8 oz each) cream cheese, softened
3/4 cup sugar
1 tablespoon coffee-flavored liqueur or 1 teaspoon chocolate extract
2 teaspoons grated lemon peel
4 tablespoons chocolate cookie crumbs
Chocolate-covered coffee beans or grated chocolate
4 tablespoons graham cracker crumbs
Blueberries and raspberries

Steps:

  • In large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth. Divide mixture in half; place in separate bowls. Stir coffee liqueur into half; stir lemon peel into remaining half of cream cheese mixture.
  • Spoon 2 teaspoons chocolate cookie crumbs into bottoms of six 2-oz cordial glasses (shot glasses). Top with 2 tablespoons coffee liqueur cream cheese mixture. Sprinkle with 2 teaspoons cookie crumbs and another 2 tablespoons coffee liqueur cream cheese mixture. Top each with coffee bean.
  • Spoon 2 teaspoons graham cracker crumbs into bottoms of six 2-oz cordial glasses (shot glasses). Top with 2 tablespoons lemon cream cheese mixture. Sprinkle with 2 teaspoons graham cracker crumbs and another 2 tablespoons lemon cream cheese mixture. Top each with blueberries and raspberries. Refrigerate desserts at least 30 minutes before serving.

10 gingersnap cookies
2 oz 1/3-less-fat cream cheese (Neufchâtel), softened
1/2 cup marshmallow creme (from 7-oz jar)
1 container (6 oz) fat-free Greek honey vanilla yogurt
1/2 cup lemon curd (from 10-oz jar)
36 raspberries
1/2 cup Cool Whip lite frozen whipped topping, thawed

Steps:

  • In 1-quart resealable food-storage plastic bag, place cookies; seal bag. Crush with rolling pin; place in small bowl.
  • In medium bowl, beat cream cheese and marshmallow creme with electric mixer on low speed until smooth. Beat in yogurt until blended. Place mixture in 1-quart resealable food-storage plastic bag; seal bag. In 1-pint resealable food-storage plastic bag, place lemon curd; seal bag. Cut 1/8-inch opening diagonally across bottom corner of each bag.
  • In bottom of each of 12 (2-oz) shot glasses, place 1 raspberry. For each glass, pipe about 2 teaspoons yogurt mixture over raspberry. Pipe 1/4-inch ring of lemon curd around edge of glass; sprinkle with about 1 teaspoon cookies. Repeat.
  • Garnish each dessert shot with dollop of about 2 teaspoons whipped topping and 1 raspberry. Place in 9-inch square pan. Refrigerate 30 minutes or until chilled but no longer than 3 hours.

3/4 cup graham cracker crumbs (about 12 squares)
2 tablespoons sugar
2 tablespoons butter, melted
FILLING:
1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
1 can (21 ounces) cherry pie filling

Steps:

  • In a small bowl, combine the cracker crumbs, sugar and butter. Divide among 8 dessert dishes, about 4 rounded teaspoonfuls in each., In a small bowl, beat cream cheese until smooth. Gradually add milk until blended. Beat in lemon juice and vanilla. Spoon 1/4 cup into each dish. Top with pie filling, about 1/4 cup in each.

1 c butter
1 - 1/2 c flour
1/2 c chopped nuts ( optional ) i don't always use them, depend who i'm making this for.
1 - 8 oz cream cheese,softened
1 c confectioners' sugar
1/4 c milk
1 - 3/4 c sugar
1/2 c water
4 c blackberries
6 Tbsp corn starch
12 oz whipped cream

Steps:

  • 1. Preheat oven to 350 degree F.
  • 2. Melt butter and mix with the flour and ( nuts ) if using. Press into a 9 x 13 pan.
  • 3. Bake for 20 minutes and cool.
  • 4. Mix cream cheese,powdered sugar & milk together and spread evenly over cooled crust. Refrigerate while making the filling.
  • 5. Mix sugar, water, blackberries & cornstarch in a medium saucepan, bring to a boil and cook 3 minutes or until thickened; then set aside to cool.
  • 6. Pour cooled blackberry topping over cream cheese layer.
  • 7. Top with whipped topping, refrigerate for a couple hours before serving.

Steps:

  • Add Oreo cookies into a blender and pulse until it forms fine crumbs.
  • In a separate bowl, add the crumbs and cream cheese, and mix until it forms a mealy dough. You may want to mix with your hands.
  • Pack Oreo and cream cheese mixture into shot glass molds and coat the inside with melted chocolate, getting rid of any excess.
  • Freeze for 15 minutes, pour in milk, and garnish with whipped cream and mini Oreos. Enjoy!

I made this dessert when I wanted to make something small and sweet for dessert. All I had in the house was cream cheese and chocolate chips, and thus the Shot Glass Cream Cheese Dessert was born. It is so simple and can be whipped up in an instant. You can substitute crushed graham crackers instead of mini chocolate chips if you'd like more of a crust.
