SWEET BAKED PLANTAINS

4 extremely ripe plantains, peeled and sliced lengthwise
8 tablespoons butter
3/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4-1/2 cup dark bacardi rum
1/4 cup chopped and toasted macadamia nuts (optional)

Steps:

  • Preheat oven to 350ºF.
  • Melt the butter in a medium saucepan.
  • Add the brown sugar and continue cooking, stirring occasionally until the sugar is dissolved and the sauce starts to thicken somewhat.
  • Add the cinnamon and the rum and remove from heat.
  • Place the plantains in a covered baking dish.
  • Pour the sauce on the plantains.
  • Cover and bake 20 to 25 minutes.
  • Add the macadamia nuts now, if using.
  • Turn the plantains over, baste with the sauce in the dish, and continue baking uncovered for about 15 minutes.
  • This will allow the plantains to brown slightly.
  • Wonderful eaten alone, on ice cream or with pound cake or angel food cake.

1 scoop vanilla ice cream
3/4 cup crushed ice
1/2 cup milk (to taste)

Steps:

  • Place whole kernels sweet corn and cream-style corn in a glass.
  • Add crushed ice.
  • Pour milk into the glass.
  • Top with a small scoop of your favorite vanilla ice cream.
  • Mix all ingredients with a spoon.
  • Enjoy!
  • Suggestions: You can use 2% or skim milk.

Steps:

  • Set aside six dessert bowls or tall dessert glasses. Spoon 1/2 cup cream-style corn and 2 tablespoons sugar into each bowl or glass.
  • Pour 1/2 cup milk or cream into each bowl then top with the crushed ice.

6 very ripe plantains, peeled and cut on the diagonal into 1/2-inch slices (about 3/4 pound each)
salt (optional)

Steps:

  • In 2 very large nonstick skillets, heat the oil until shimmering. Working in batches, fry the plantains in a single layer over moderate heat, approximately 7 to 8 minutes per batch, turning occasionally, until deep golden and tender. Drain the plantains on a paper towel-lined rack and, if desired, sprinkle lightly with salt. Serve warm.
  • Make ahead: The plantains can be fried early in the day and kept at room temperature. Reheat in a warm oven and sprinkle with the optional salt before serving.
