QUICK CHOUCROUTE GARNIE
Classic choucroute garnie combines sauerkraut, potatoes and a variety of meats. This version uses smoked sausage and is fast to get on the table.

Steps:
- Cut the sausage into 3-inch lengths, then halve lengthwise.
- Heat oil in heavy large skillet over medium-high heat. Add sausage, cut side down, and cook until browned on bottom, about 3 minutes.
- Turn over sausage; add onions, and sauté until onions are beginning to soften, stirring occasionally, about 5 minutes.
- Stir in remaining ingredients. Cover and simmer until flavors blend, stirring occasionally, about 10 minutes. Discard bay leaf. Season to taste with salt and pepper and serve.

Steps:
- Drain sauerkraut, reserving juice. Rinse in two changes of cold water, wring out well, and set aside. Heat oven to 325 degrees.
- In a large casserole,at least 5 quarts,cook salt pork or bacon over medium heat until golden. Remove,draining well.Leave fat in casserole. Add onions and carrots, and saute until soft. Add garlic and apple, and cook, stirring, several minutes. Add sauerkraut, and return pork or bacon to casserole, tucking it into sauerkraut. Add stock and wine. Bring to a simmer.
- Add bay leaf, peppercorns, cloves and juniper berries. Season to taste with salt and pepper. Cover,and bake 2 hours.
- Tuck sausages into sauerkraut. If sauerkraut looks dry, add stock. If sauerkraut needs more bite, add a little reserved juice. Cover,and bake 20 minutes.
- Place smoked pork on sauerkraut. Cut ham slices in half, and add them to top. Cover with parchment cut to fit inside casserole and placed directly on ingredients. Cover pot,and return to oven 15 minutes.
- While meats cook, simmer potatoes in salted water until tender. Drain.
- Serve choucroute directly from casserole, placing potatoes on top first. Or spread sauerkraut on a platter, and top with meats and potatoes. Serve with mustard.
CHOUCROUTE GARNIE 1-2-3
Choucroute garnie traditionally combines sausages and thick chunks of bacon with larger cuts of meat like smoked pork chops and even hunks of pork shoulder. This faster version includes only sausages and bacon. The grated potato adds body and silkiness to the sauerkraut, which, if not homemade (see page 143), should be purchased refrigerated (not canned).

- Preheat the oven to 350°F.
- Heat the fat in a heavy, shallow 3-quart enameled cast-iron pot or other heatproof baking dish over low heat. Sauté the onions until soft and fragrant but not browned, about 8 minutes. Stir in the potatoes, season lightly with salt, and cook until wilted, 2 to 3 minutes. Add the sauerkraut, bay leaves, juniper berries, peppercorns, wine, and just enough stock to nearly cover the sauerkraut. Bring to a simmer and remove from the heat.
- Nestle the bacon into the sauerkraut, cover, and bake in the oven for 30 minutes, until the bacon is starting to render. Remove the cover and add the sausages in one layer, pushing them down a bit into the sauerkraut, which should still be quite moist. If it seems dry, moisten it with a little additional chicken stock. Bake, uncovered, for 45 minutes to 1 hour, until the top of the sauerkraut is golden and the sausages and bacon are cooked through and browned. Bring the dish to the table and serve with strong mustard and lots of cold beer or white wine.
CHOUCROUTE
Enjoy this alsatian specialty with some good beer. I like making this with crunchy, bright, and tart fresh sauerkraut, which my mom brings me from France. It's also delicious with regular sauerkraut. I love how the meat juices infuse the cabbage and potatoes for a satisfying one-pot meal.

- Heat a 5-quart Dutch oven or pot over medium-low eat. Melt the duck fat and butter, then add the onion. Cook, stirring occasionally, until the onion is softened and golden but not browned, about 10 minutes.
- Meanwhile, rinse the sauerkraut under hot water to remove excess salt. When it starts to stick to your fingers, drain well and squeeze out as much liquid as possible with your hands.
- Add the sauerkraut, bay leaves, and juniper berries to the onions, season with salt, and stir once. Arrange the knuckles, ribs, and both bacons in the sauerkraut, partially burying them in the mixture. Top with the garlic, then add the wine. Cover, bring to a boil, then reduce the heat and simmer for 2 hours.
- About 30 minutes before serving, arrange the potatoes in a single layer over the meat. Cover and continue cooking until the potatoes and meat are tender.
- About 20 minutes before serving, place the knacks in a medium saucepan and cover with cold water. Bring to a very gentle simmer and cook until heated through, about 15 minutes. Do not let the water boil or the knacks will explode.
- Transfer the potatoes and meat from the Dutch oven to a large serving platter, let cool slightly, and slice the meat. Transfer the sauerkraut to the platter. Top with the knacks. Serve with mustard and horseradish sauce on the side.
CLASSIC CHOUCROUTE

- Boil ham hocks in unsalted water until tender, at least 1 1/2 hours. Meanwhile, wash sauerkraut in cold water; drain. Wash again, in hot water; drain and squeeze dry.
- In a heavy, ovenproof pot, melt 3 tablespoons of the fat over medium heat. Add the onion, and cook it until soft and tender; do not brown. Add wine and 1 cup water, then bacon. Cover,and cook 20 minutes. Preheat the oven to 325 degrees.
- Season sauerkraut with pepper and a tiny bit of salt; add to pot,covering bacon. Combine garlic, juniper berries, caraway and bay leaf in cheesecloth and tie into a sachet. Bury this in the sauerkraut. Lay a circle of parchment paper directly over sauerkraut, cover, bring to a boil, transfer to oven and bake 1 hour.
- Add pork loin, top with potatoes, and return to oven for 30 minutes, or until potatoes are tender.
- About 15 minutes before potatoes are done,add bratwursts and frankfurters to the pot with hocks. Reduce heat to simmer, and heat through. Heat remaining fat in a skillet, and carefully brown blood sausages (they burst if overcooked).
- Add kirsch to sauerkraut; taste and add salt if necessary. Discard herb sachet.
- To serve, slice bacon and pork loin.Cut sausages and hocks into pieces. Put sauerkraut on large platter with meats and potatoes on top and around it. Serve with hot mustard and beer or white Alsatian wine.
SLOW-COOKER CHOUCROUTE

- Stud each onion quarter with a clove. Layer the bacon, sauerkraut, garlic, onion quarters, herb sprigs, bay leaves, pork chops, kielbasa, apples, and potatoes in the slow cooker in the order listed, then pour the wine and gin over the top. Cover the cooker and set it on LOW. Cook until the pork is falling off the bones and the potatoes are fork-tender, at least 6 and up to 8 hours.
- Arrange the meats, potatoes, apples, onions, garlic, and sauerkraut on a large platter. Serve with pumpernickel rye bread, mustards, cornichons, and horseradish.
CHOUCROUTE GARNIE (GARNISHED SAUERKRAUT)

- Put the sauerkraut in a colander and rinse well. Press with the hands to extract excess liquid.
- Heat the lard in a large, heavy casserole or Dutch oven. Add one cup of the chopped onions and the garlic. Cook, stirring, until wilted chopped and add the pork hocks. Scatter sauerkraut over all. Add the wine and chicken broth.
- Tie the parsley sprigs, bay leaf and thyme into a small bundle and add it. Add the cloves and juniper berries. Cover closely and bring to a boil.
- Meanwhile, heat the butter in a saucepan and add the remaining half cup of chopped onion. Cook, stirring, until wilted.
- Put the pork in a mixing bowl and add the cooked onions, caraway seeds and chopped parsley. Add salt and pepper to taste.
- Blend the pork mixture well. Shape it into 12 balls of approximately the same size. Arrange them on top of the sauerkraut. Add the smoked pork butt and continue cooking.
- When the sauerkraut and meats have cooked for 30 minutes after the first boil, add the kielbasa. Cover and cook 15 minutes longer. Serve the sauerkraut with the sliced meats and potatoes.

- Wash sauerkraut, and drain well.Combine with onion, juniper berries and wine in a large skillet or broad pot. Add enough water to come about two-thirds of the way up the side of the sauerkraut (in some pots,the wine may provide enough liquid). Turn heat to high and bring to a boil.
- Lower heat, and nestle the bacon in the sauerkraut. Cover,and cook 1 hour; then, add sausages and pork chops,Recover,and cook another 30 to 45 minutes.Sauerkraut should be tender but retain some crunch.Season with salt and pepper to taste.
- Cut meat into pieces and serve on platter with sauerkraut, hot mustard on the side.
