STRAWBERRY SHORTCAKE

- In a bowl, cream sugar and shortening. Add egg and vanilla; beat well. Combine dry ingredients and add alternately with milk to the creamed mixture. Spread in a greased 9-in. square baking pan. Bake at 350° for 20-25 minutes. Cool on wire rack. , Cut into nine servings. Split each serving horizontally and fill with whipped cream and strawberries. Replace top of cake; garnish with a dollop of whipped cream and more berries. Serve immediately.

STRAWBERRY SHORTCAKE WITH BASIL
Strawberry shortcake never tasted so good-or so nuanced. Heavy cream is steeped with basil then whipped, infusing it with its essence. Cover the cream with plastic wrap while it steeps to ensure that the basil flavor doesn't evaporate.

- Bring 1 1/2 cups cream to a gentle simmer in a small saucepan over medium heat. Bruise large basil leaves by hitting repeatedly with the dull side of a knife, and stir into cream. Remove from heat, cover tightly with plastic wrap, and let steep for 25 minutes. Strain through a fine sieve, pressing solids to extract liquid. Refrigerate until very cold, at least 5 hours.
- Preheat oven to 400 degrees. Whisk together flour, 3 tablespoons granulated sugar, the baking powder, and 3/4 teaspoon salt. Cut in butter with a pastry cutter or rub in with your fingers. (The largest pieces should be the size of small peas.)
- Whisk together 3/4 cup heavy cream, the eggs, and vanilla. Stir into flour using a fork until ingredients are moistened but not fully incorporated. (Do not overmix.)
- Turn dough out onto a parchment-lined baking sheet, and pat into a 9 1/2-inch circle. Brush dough with remaining 2 tablespoons heavy cream, and sprinkle with 1 tablespoon granulated sugar.
- Bake until light golden brown and just cooked through, about 25 minutes. Let cool completely, about 2 hours.
- Meanwhile, macerate strawberries with remaining 1/4 cup sugar, plus more if needed, depending on sweetness, stirring occasionally, for at least 1 hour.
- Toss berries with small basil leaves. Whisk basil cream with confectioners' sugar in the chilled bowl of a mixer on high speed until soft peaks form. Mound basil cream on shortcake. Spoon berries with juice over top.
SUMMER SHORTCAKE SUPREME
I made up this version for a friend's birthday potluck at church a few years ago.

Steps:
- 1. Prepare cake mix as directed on box for 9x13 pan. Let cool completely. I like to make ahead and refrigerate, covered.
- 2. Wash and hull strawberries, let dry til damp. Cut in half, or quarters if large, and place in large bowl. Wash peaches, smoothing fuzz with hands under running water. Let dry and cut into 1/2 - 1 inch chunks. Put in bowl with strawberries. Add 1/4 cup sugar and stir gently to distribute. Store in fridge a few hours to allow to make it's own sauce with the added sugar.
- 3. In another large bowl, make vanilla pudding with only 1 cup milk, mix as directed on package. Carefully fold in thawed whipped topping thoroughly. Can see if completely mixed because pudding will be different color than topping. Store, covered, in fridge until time to serve.
- 4. Cut cake into squares. Can be sliced in half horizontally if refrigerated. Scoop strawberries and peaches with some juice over cake. Top with combined pudding/whipped topping mixture. Repeat if sliced in half for a double decker version.

- STRAWBERRIES: Wash and cut your strawberries into quarters (reserve a few strawberries to cut in half for garnish if desired). Place in a medium sized bowl. Zest the orange and reserve for later, you will need about 1 1/2 teaspoons of zest. Juice the orange and add to the strawberries. Gently toss the strawberries and orange juice, set aside.
- WHIPPED CREAM: In a large bowl whip the cream, powdered sugar and vanilla together just until stiff peaks form. Gently fold in the reserved 1 1/2 teaspoons of orange zest, set aside. Cube the angel food in to small bite sized pieces.
- ASSEMBLY: First gently toss the strawberries in the juice one more time. Now, place a small amount of angel food in the bottom of a cup. Top with a few strawberries (don't be afraid to get some of the orange juice in there as well) then whipped cream. Repeat layers one more time. Repeat for remaining cups. Top with a strawberry half and mint leaf if desired. Refrigerate until ready to serve.
