MILLIONAIRE'S SHORTBREAD

Millionaire's Shortbread image

With a layer of shortbread, a layer of soft caramel and a layer of chocolate, these bars taste like gourmet Twix bars.

Time 2h

Yield 20-25 squares

Number Of Ingredients 15

1 cup all-purpose flour, spooned into measuring cup and leveled-off
¼ cup dark brown sugar
2 teaspoons cornstarch
¼ teaspoon salt
1 stick (½ cup) cold unsalted butter, cut into ½-inch cubes
1 tablespoon ice water
1 large egg yolk
1 (14-oz) can sweetened condensed milk
½ cup dark brown sugar
6 tablespoons unsalted butter
2 tablespoons golden syrup (such as Lyle's Golden Syrup) or dark corn syrup
1 teaspoon vanilla extract
Generous pinch salt
6 ounces semi-sweet chocolate, broken into small pieces, best quality
3 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees. Line a 9-inch square pan with aluminum foil, pushing the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or grease with butter.
  • In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain. Add the butter and pulse until a coarse meal forms. Add the ice water and egg yolk and blend until moist clumps form. Dump the dough into the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and bake until golden, about 20 minutes. Set aside to cool.
  • Whisk the sweetened condensed milk, brown sugar, butter, golden syrup, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes. Pour the caramel over the warm crust; cool for about 15 minutes, or until caramel is set.
  • Place the chocolate and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is about 75% melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate, until smooth (if necessary, place the chocolate back in the microwave for a few more; just be sure not to overheat or the mixture will curdle). Spread the chocolate over the caramel layer. Refrigerate the bars until the chocolate is set, at least 1 hour. Using the foil overhang, lift the bars out of the pan and transfer to a cutting board. Cut into small squares and store in the refrigerator until ready to serve.
  • Note: The shortbread layer will crumble a bit when you cut it; that's just the nature of it.
  • Freezer-Friendly Instructions: These can be frozen for up to 3 months. After they are completely cooled, double-wrap them securely with aluminum foil or plastic freezer wrap. Thaw overnight on the countertop before serving.

SHORTBREAD COOKIES

Shortbread Cookies image

Bake Ina Garten's chocolate-dipped Shortbread Cookies for the perfect bite with tea, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     dessert

Time 1h15m

Yield 20 cookies

Number Of Ingredients 6

3/4 pound unsalted butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
6 to 7 ounces very good semisweet chocolate, finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
  • When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
  • Drizzle 1/2 of each cookie with just enough chocolate to coat it.

SHORTBREAD COOKIES - PRIZE WINNING

Shortbread cookies - Prize Winning image

I loved Lorna Doones as a kid. They were pricey, so Mom didn't buy them often. I developed this recipe as a young bride over 40 years ago. I entered them in a County Fair once and took a blue ribbon. We often just eat them plain, or dusted w/powdered sugar. If you make them in a triangle shape you can easily dip them into a lemon...

Time 35m

Number Of Ingredients 4

1 stick real butter, unsalted and room temp
3/4 stick imperial brand margarine
1/2 c powdered sugar, sifted
1 3/4 c all purpose flour

Steps:

  • 1. With electric mixer beat the margarine/butter until light and fluffy. Mix in the powdered sugar, until all blended, then the flour. Mixture will get crumbly.
  • 2. Stop mixer and gather dough into a large ball. It should easily pull away from the bowl and feel soft and tender.
  • 3. Sprinkle a large piece of waxed paper with a bit of powdered sugar. Set dough on paper, top with another piece of waxed paper and pat down to a flatter level. Refrigerate for about 30 minutes.
  • 4. When cooled, divide into smaller sections, and roll down a section at a time between waxed paper to about 1/4" thick. Cut into desired shape with a butter knife that has been dipped into powdered sugar for ease of cutting.
  • 5. Place cut cookies onto cookie sheet covered in parchment paper. I prefer air-filled baking sheets or crockery type (Pampered Chef) as opposed to teflon coated. Bake at 350 for 20 min or until edges are just golden. Teflon sheets may bake faster so watch the time.

SCOTTISH SHORTBREAD

Scottish settlers first came to this area over 150 years ago. My mother herself was Scottish, and-as with most of my favorite recipes-she passed this shortbread recipe on to me. I make a triple batch of it each year at Christmas, to enjoy and as gifts. -Rose Mabee, Selkirk, Manitoba

PRIZE SHORTBREAD

Prize Shortbread image

My mother made this every year for Christmas, and her daughters still do. Because it's very delicate, we have always just rolled out the dough and cut it into squares. The "edge" pieces get baked, too, and that what the cook and the kids get to nibble while the rest go in the freezer till the holidays. They're great, rich, and delicate - they shatter first when you bite them, and then melt in your mouth. Use fresh nutmeg for the best flavour.

  • Using a hand-held electric mixer (see notes), cream the butter, sugar, and vanilla until very creamy. Gradually beat in the cornstarch and flour. Continue to beat the batter until it looks like slightly overbeaten whipped cream, about 10 minutes. I always set a timer for 10 minutes as it feels like a long time.
  • Drop the batter by heaping tablespoons (or 3 level tablespoons, to be exact) onto the prepared cookie sheets. Add a colored cherry or dried cranberry in the center of each cookie. Note: if you don’t have 3 cookie sheets wait until you remove the baked cookies from one and it cools completely. Putting the cookie sheets outside in the cold winter weather cools them down very quickly.
  • Bake the cookies for approximately 15 minutes. You can bake two sheets at once, turning them halfway through. Remove the cookies from the oven just as they start to brown on the bottoms.
