1 cup Land O Lakes® Butter softened
1/2 cup sugar
2 cups all-purpose flour
1/2 teaspoon salt
Caramel
1 (14-ounce) can sweetened condensed milk
1 cup firmly packed brown sugar
1/2 cup Land O Lakes® Heavy Whipping Cream
1/2 cup light corn syrup
1/2 cup Land O Lakes® Butter
1/2 teaspoon salt
1 teaspoon vanilla extract
Chocolate
8 ounces bittersweet chocolate, finely chopped
1 teaspoon flaky sea salt

Steps:

  • Heat oven to 350°F. Line 13x9-inch baking pan with foil, extending foil over edges; set aside.
  • Combine 1 cup butter and sugar in large bowl; beat at medium speed until creamy. Add flour and 1/2 teaspoon salt; mix to combine (mixture will be crumbly). Press into bottom of prepared pan. Bake 20-25 minutes or until edges are light golden brown. Remove from oven; let cool while making caramel.
  • Stir all Caramel ingredients together except vanilla in heavy-bottomed saucepan. Cook over medium heat, stirring frequently, 20-25 minutes or until candy thermometer reaches 236-239°F. Remove from heat; stir in vanilla. (Caramel may be speckled with brown bits.) Pour caramel over baked crust and spread evenly (mixture will be very hot). Let cool 1 1/2 hours.
  • Microwave chocolate at 50% power in 30-second intervals until melted and smooth. Spread over cooled caramel; sprinkle with sea salt. Refrigerate 20 minutes or until chocolate is just set. Let bars sit at room temperature 20 minutes before cutting.
  • To cut into sticks, remove from pan using foil overhang. Cut bars in half into 2 (9x6 1/2-inch) rectangles. Cut each rectangle into thirds to make 6 (1/2x3-inch) rectangles. Cut each of these rectangles into 8 (3x3/4-inch) sticks.

The original recipe (called Shortbread Stars) came from my McCall's recipe box collection, which I subscribed to in the 80's. It was the first shortbread recipe I ever made, and I've never found a better one. The ingredients are so basic and easy that you'll soon have them memorized. Other recipes don't seem to produce the same perfect texture and flavor. My modification to the original was to try using a 9 x 13 pan rather than chilling, rolling out, and cutting into shapes. (Who has time for that, except on special occasions?) However, using a 9 x 13 pan changes the baking time, and the time given is approximate and based on my experience with a convection oven. I tend to overbake them a bit because I like shortbread very crisp. These are perfect with a cup of tea, of course, and ideal for tea parties or even a quick dessert for company. You nearly always have the ingredients on hand. Now you'll never need to buy (delicious but expensive) Walker's shortbread again!

Steps:

  • Preheat oven to 300°.
  • Cream butter and sugar together.
  • Add flour and mix till texture is like clay.
  • Press dough into ungreased 9 x 13 inch pan, prick all over with a fork, and sprinkle with sugar (tilt pan to cover the top evenly, then shake excess sugar back into the sugar canister).
  • Bake for about 40-45 minutes (till very lightly browned--just golden around the edges).
  • Let stand for 5 minutes, then cut into 24 squares while warm.
  • Leave in pan to cool thoroughly. (Shortbread will not be crisp until cool.).
  • Less easy method: Chill dough. Roll into 1-inch balls, then press balls to about 1/4-inch thickness on ungreased cookie sheets with the bottom of a glass dipped in sugar (sometimes you can find a glass with a pretty design on the bottom, like a star). Bake at 300° for about 20-25 minutes (until edges are very lightly browned).
  • Least easy method: Chill dough. Roll out to about 1/4-inch thickness, sprinkle with sugar, then cut with cookie cutters. Bake on ungreased cookie sheets at 300° for about 20-25 minutes (until edges are very lightly browned).
  • Variation: Add 2 tablespoons dried lavender to the creamed butter and sugar before adding flour. It may sound strange, but the flavor is subtle and elegant. Food-grade lavender is usually available in herb bins at health food stores, and I recently found it at a great price from Atlantic Spice online (their Lavender #1).
  • Variation: After cutting shortbread into squares (it will still be warm), scatter 1 cup of chocolate chips over the top, let the chocolate soften completely, then spread as a thin layer and let cool completely before removing from pan. (No need to sprinkle shortbread with sugar before baking if you plan to do this.).
  • Variation: Stir 1 cup chocolate chips or butterscotch chips into the dough before pressing into pan. You can also try melting the butterscotch over the top, as above. In England, you'll find "caramel shortbread," which has a layer of caramel and a layer of chocolate on top of the shortbread. It's wonderful (of course!). I've tried various ways of doing this and various kinds of caramel, but it's been a while and I don't remember what works best. It can be tricky not to make a mess!

1 16 oz. Jar of the Jam of your choice (equivalent of 1 1/2 cups)

Steps:

  • Add butter to a mixer and cream until fluffy (2-3 minutes.)
  • Add Powdered Sugar and mix until combined.
  • Add Baking Soda with the Flour (one cup at a time) and mixed just until combined.
  • Divide the dough into two equal portions. Wrap one in plastic wrap and refrigerate.
  • Press half of the dough into a parchment paper-lined baking pan (we used a 7x11" Brownie Pan to have a little bit of a thicker shortbread layer but a 9x13" pan will work too.)
  • Bake the Shortbread crust in an oven preheated to 325 degrees for 20 minutes.
  • Remove the pan from the oven. It should be a little bit brown, just around the edges of the crust.
  • Stir the jam to smooth it out and then pour it into the center of the pan. Smooth the jam over the entire cookie crust.
  • Take the second portion of shortbread dough out of the refrigerator. Scatter pieces of the dough on the top of the jam.
  • Increase the oven temperature to 375 and place the pan back in the oven. Cook the cookie bars for an additional 15 minutes or until the top is a light golden brown.
  • Allow the cookies to cool completely before cutting into individual cookie bar pieces.

1 teaspoon pure vanilla extract

6 to 7 ounces very good semisweet chocolate, finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
  • When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
  • Drizzle 1/2 of each cookie with just enough chocolate to coat it.

1 cup all-purpose flour, spooned into measuring cup and leveled-off
¼ cup dark brown sugar
2 teaspoons cornstarch
¼ teaspoon salt
1 stick (½ cup) cold unsalted butter, cut into ½-inch cubes
1 tablespoon ice water
1 large egg yolk
1 (14-oz) can sweetened condensed milk
½ cup dark brown sugar
6 tablespoons unsalted butter
2 tablespoons golden syrup (such as Lyle's Golden Syrup) or dark corn syrup
1 teaspoon vanilla extract
Generous pinch salt
6 ounces semi-sweet chocolate, broken into small pieces, best quality
3 tablespoons heavy cream

Steps:

  • Preheat the oven to 350 degrees. Line a 9-inch square pan with aluminum foil, pushing the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or grease with butter.
  • In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain. Add the butter and pulse until a coarse meal forms. Add the ice water and egg yolk and blend until moist clumps form. Dump the dough into the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and bake until golden, about 20 minutes. Set aside to cool.
  • Whisk the sweetened condensed milk, brown sugar, butter, golden syrup, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes. Pour the caramel over the warm crust; cool for about 15 minutes, or until caramel is set.
  • Place the chocolate and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is about 75% melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate, until smooth (if necessary, place the chocolate back in the microwave for a few more; just be sure not to overheat or the mixture will curdle). Spread the chocolate over the caramel layer. Refrigerate the bars until the chocolate is set, at least 1 hour. Using the foil overhang, lift the bars out of the pan and transfer to a cutting board. Cut into small squares and store in the refrigerator until ready to serve.
  • Note: The shortbread layer will crumble a bit when you cut it; that's just the nature of it.
  • Freezer-Friendly Instructions: These can be frozen for up to 3 months. After they are completely cooled, double-wrap them securely with aluminum foil or plastic freezer wrap. Thaw overnight on the countertop before serving.

1 1/2 cups powdered sugar
4 cups flour
1/2 tsp baking powder
1/2 tsp salt
approx. 1/4 cup red coloured sugar

Steps:

  • Line a 13x9 pan with parchment paper (or foil)
  • Preheat oven to 350F
  • Using an electric mixer, cream together the butter and powdered sugar until smooth.
  • In a separate bowl, whisk together the flour, baking powder and salt.
  • Slowly beat the dry ingredients in the butter mixture until it is fully combined and there are no lumps or dry flour in the dough.
  • Spread the dough in the lined pan, patting it so that it is evenly spread across the pan.
  • Prick the dough many times with a fork. Sprinkle the coloured sugar evenly across the cookie dough.
  • Bake for 33-37 minutes. The edges should be starting to brown.
  • Cool on a wire rack.
  • Cut into small 1 inch squares. Store in an airtight container for 2 weeks or in the freezer for 2 months.

3/4 c confectioners' sugar

1 can(s) strawberry pie filling, 21 oz.**

Steps:

  • 1. Combine flour and powdered sugar in a medium mixing bowl.
  • 2. With a pastry blender, cut in the softened butter, til mixture resembles coarse crumbs, or pulse in a food processor.
  • 3. Spread half the mixture into a 9x13" baking dish that has been prepared with food release spray. (it doesn't say whether or not you should press the mixture, but I think I would)
  • 4. Bake 12-15 minutes, or until the edges are beginning to brown. Remove the pan to a cooling rack. Allow to cool 5 minutes.
  • 5. Spread the fruit pie filling over the crust. Sprinkle the remaining crust mixture over the top of the fruit filling, as evenly as possible. Gently press the top crust down with a metal spatula.
  • 6. Return the pan to the oven, and bake another 30-35 minutes, or until the top crust is lightly golden. Remove from oven and cool completely to room temp. Cover the pan and refrigerate the bars until thoroughly chilled. Cut into brownie-sized pieces. If you wish, garnish with powdered sugar.
  • 7. ** You may use another berry filling, such as raspberry or blueberry, or other fruit pie filling, as you prefer. NOTE: If you choose a fruit filling with larger fruit pieces (like peach, cherry, apple, apricot, etc.) cut the fruit pieces into smaller bits, or pulse briefly in the food processor.
