A classic Turkey Club sandwich made healthy, piled high with turkey breast, bacon, lettuce, and tomato on whole grain bread, the perfect easy lunch.

2 slices center cut bacon (cut in half)
2 slices whole grain bread (Daves Killer Bread thin sliced Good Seed)
1 tablespoon light mayo
2 slices iceberg lettuce
3 ounces turkey breast (sliced thin (Boars Head))
2 slices ripe tomato

Steps:

  • Cook bacon until crisp then drain fat on a paper towel.
  • Toast the bread the spread mayo on both pieces. Top with 1 slice lettuce, turkey, tomato, bacon and remaining lettuce and close.
  • Slice in half and enjoy!

Steps:

  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

3/4 pound fresh asparagus, trimmed
8 turkey breast cutlets (about 1 pound)
1 tablespoon Dijon-mayonnaise blend
8 slices deli ham
8 slices provolone cheese
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
8 bacon strips
SAUCE:
2/3 cup Dijon-mayonnaise blend
4 teaspoons 2% milk
1/4 teaspoon poultry seasoning

Steps:

  • Bring 4 cups water to a boil in a large saucepan. Add asparagus; cook, uncovered, for 3 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Spread the turkey cutlets with Dijon-mayonnaise. Layer with ham, cheese and asparagus. Sprinkle with poultry seasoning and pepper. Roll up tightly and wrap with bacon., Cook roulades in a large skillet over medium-high heat until bacon is crisp and turkey is no longer pink, turning occasionally, 12-15 minutes. Combine sauce ingredients; serve with roulades.

1 medium Gala apple
1 lemon wedge
4 slices smoked turkey deli meat
2 slices Cheddar, cut in half
2 slices bacon, cooked and cut in half

Steps:

  • Core the apple and slice into 1/4-inch-thick round slices, slicing from the center of the apple to get even pieces. Coat the apple slices with lemon juice. Place down an apple slice as the base of the sandwich and top with 2 slices of turkey, 1 slice of cheese crisscrossed, 1 slice of bacon crisscrossed and 1/4 cup arugula. 1/2 cup mayonnaise, preferably Hellmann's
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 clove garlic, minced (1 teaspoon)
Kosher salt and freshly ground black pepper
8 slices white bread, lightly toasted
1 head Bibb lettuce
8 slices ripe tomato
8 slices thin bacon, cooked until crisp
12 slices thinly sliced oven roasted turkey
Potato chips, for serving

Steps:

  • Toast the bread in a toaster to desired doneness.
  • In a small bowl, combine the mayonnaise, herbs, garlic and a pinch each salt and pepper. Spread 1 tablespoon of the mayo mixture on one side of each slice of bread, crust to crust.
  • To build the sandwiches, layer the ingredients on four slices in the following order: Place one piece of lettuce, then two slices of tomato side by side, another piece of lettuce, two slices of bacon and then finally, the turkey.
  • Top each sandwich with another slice of bread, mayo-side down. Cut the sandwiches in half with a serrated knife and serve with your favorite potato chips.

CLASSIC CLUB SANDWICH

12 slices white bread
3/4 cup mayonnaise
8 romaine lettuce leaves
16 slices vine-ripened tomatoes
Kosher salt and freshly ground black pepper
16 slices crispy cooked bacon
16 ounces sliced roasted turkey
16 frill picks, or plastic cocktail swords
Potato chips
Sweet pickles

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
  • To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
  • Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

Mayonnaise and plum or tomato jam, for spreading
4 slices white sandwich bread
2 large romaine or other crisp lettuce leaves, torn into pieces
8 ounces thinly sliced roast turkey
2 ounces thinly sliced aged Gouda
2 slices whole-wheat or multigrain bread
2 thick slices beefsteak or heirloom tomato
Kosher salt and freshly ground pepper
4 slices bacon, halved, cooked until crisp, and drained on paper towels

Steps:

  • Spread a thin layer of mayonnaise over one side of each white-bread slice. Heat a skillet (preferably cast iron) over medium-high; add white bread, mayo-sides down, and reduce heat to medium-low.
  • Cook, undisturbed, until a crisp, golden-brown crust forms, about 2 minutes. Transfer bread to a cutting board or plate, toasted-sides down.
  • Spread a thin layer of jam over untoasted sides of 2 white-bread slices; divide half of lettuce, half of turkey, and all of cheese evenly on top. Spread a thin layer of jam over one side of each wheat-bread slice and place on top. Stack remaining turkey on wheat-bread slices.
  • Top with tomato, season with salt and pepper, then top with bacon and remaining lettuce; sandwich with remaining 2 white-bread slices, toasted-sides up. Serve immediately.
