Steps:
- Heat 1 tablespoon oil in a Dutch oven/soup pot over medium-high heat. Add chicken and brown on both sides, approximately 2 minutes, but don't cook through. Remove to a plate.
- Add one tablespoon olive oil to now empty pot and heat over medium high heat. Add onions and carrots and sauté 3 minutes. Add mushrooms, ginger and garlic and sauté for 1 minute.
- Add chicken BACK TO POT followed by chicken broth, soy sauce, rice vinegar, rice wine, and chili paste. Bring to a boil then reduce heat to medium-low and gently simmer for 10 minutes or until chicken is tender enough to shred. Remove chicken and shred when cool enough to handle. Continue to simmer soup without chicken if you like more tender mushrooms.
- Add ¼ cup miso paste to a medium bowl. Add a ladleful of hot broth then whisk until the miso is completely dissolved. Set aside.
- Add rice noodles and bell peppers to pot. Simmer 2 minutes then turn off heat. Add bok choy, shredded chicken and entire miso mixture. Cover pot just until noodles are al dente and bok choy is wilted, 1-2 minutes.
- Do NOT simmer/boil the soup with the miso, as the miso will become gritty.

MISO SHIITAKE BREAKFAST SOUP
This is a wonderful light and filling soup. It's a great way to start the day. This is very healthy. Miso is a soy protein and shiitake is a type of mushroom. You should be able to find these in most health stores, or Asian grocers.

- Start by getting the soup base going. Put a pot of water (or vegetable broth) on medium-high heat. If using water, add the "Better than Bouillon" or similar product to the water and stir until dissolved. Add the white and light green parts of the chopped green onions. Stir occasionally while performing other tasks until it is time to combine ingredients for the soup.
- Meanwhile, add the eggs to cold water and bring to a boil for 5 minutes. Remove from heat and place in an ice bath. Once cooled, peel the eggs and set aside (cut in half lengthwise before serving)
- In a pan, drizzle the olive oil and sesame oil. Sautee the mushrooms for 4- 5 minutes, stirring occasionally.
- Meanwhile, add the miso paste to the soup base and stir until dissolved (soup base should be below a boil but emitting steam). Add noodles and cook for 4 - 5 minutes.

- Pour the veggie broth into a large soup pot and bring to a boil. Remove from heat, add the dried mushrooms, cover, and let stand 20 minutes, or until mushrooms have softened. If using fresh mushrooms, you can skip this soaking part.
- Remove the rehydrated mushrooms from broth with a slotted spoon. Cut off and discard the mushroom stems. Thinly slice the caps and set aside. If you make your own veggie stock, the stems would be perfect to add to your scrap bag in the freezer.
- I also sometimes buy dried mushrooms that are already sliced thin, which makes this recipe (and others) come together even faster because there’s no need to slice the mushrooms.
- I like to slice the broccoli into small bite-sized florets and grate carrots. However, if you want to just purchase a bag of julienne carrots already prepped, that would eliminate another step for this recipe.

- Prepare the mushrooms by remove the stems and cleaning with a damp cloth or paper towel. Then slice the mushrooms.
- Heat the olive oil in a large saucepan over medium heat. Add the mushrooms and a few pinches of salt and stir. Let the mushrooms cook until soft, about 5 minutes, stirring only occasionally. Add the scallions, garlic, and ginger, and cook 1 more minute. Add the water and bring to a low simmer. Scoop some of the simmer water into a small bowl and add the miso paste, stirring until it dissolves, then add it back into the soup pot. Simmer over low heat for 15 minutes.
- Bring a medium pot of water to a boil. Prepare the noodles according to the instructions on the package (*I prefer to cook them fairly al dente, because they will be going into the hot soup). Drain the noodles and add them to the soup pot, followed by the spinach, tamari (or soy sauce, if using), sesame oil, rice vinegar, and red pepper flakes. Stir until the spinach is wilted. Season to taste with tamarin and a drizzle of toasted sesame oil.
