SHISH TAWOOK MARINATED CHICKEN
A Middle Eastern low fat recipe for marinated chicken breasts, which can be baked in the oven or skewered with mushrooms and barbequed. They taste great with pita bread and some pickled turnips.

Steps:
- In a medium bowl, stir together oil, yogurt, ketchup, and mustard. Season with garlic powder, paprika, allspice, black pepper, cinnamon, and curry powder. Stir in chicken pieces, coating all sides with marinade. Cover bowl, and refrigerate overnight.
- To make dipping sauce, mix together mayonnaise, yogurt, garlic, and salt. Cover, and refrigerate.
- Preheat oven to 400 degrees F (200 degrees C).
- Transfer chicken pieces to a shallow baking dish. Bake in a preheated oven 30 minutes.

SHISH TAWOOK (LEBANESE CHICKEN SKEWERS)
Lemon and garlic bring a burst of flavor to these grilled chicken skewers. Middle Eastern Shish Tawook will make a great addition to your next cookout! NOTE: For best flavor, marinade the meat at least 4 hours, up to overnight, before grilling.

- In a small bowl, mix all the marinade ingredients together.
- Place the cubed chicken into a flat, sealable container and pour the marinade over the chicken. Mix the chicken with the marinade to be sure all the pieces are well-coated.
- Cover the container and let marinate in the refrigerator for at least 4 hours, up to overnight.
- Preheat your grill to a medium heat, roughly 350F. (You should be able to hold your hand about 3 inches from the cooking grate for 6-7 seconds.)
- Thread the chicken pieces onto the soaked skewers, pressing the pieces up against each other.
- Grill the chicken skewers for 8-10 minutes a side, until the chicken is firm and golden.
- Serve the shish tawook with pita bread (get our pita bread recipe here) and sliced tomatoes or with rice and grilled vegetables.

- In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
- Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.

SHISH TAWOOK CHICKEN RECIPE - GRILLED CHICKEN KABOBS WRAPS
Steps:
- Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
- Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
- Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
- Skewer the chicken right before grilling.
- Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
- Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
- Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
- Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
- Add 4-5 chicken kabobs.
- Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.
