SHIRATAKI NOODLE RAMEN (VEGAN + GF)

This Shirataki Noodle Ramen is made using noodles that are made from the roots of a yam plant, which work as a great gluten-free and grain-free alternative to regular ramen noodles.

2 tablespoons sesame oil
1 onion, diced
1 garlic clove, minced
1 cm (1/2 inch) ginger, minced
1 teaspoon sesame seeds
200 g (7oz) shirataki noodles
1 vegetable stock cube ((ensure gluten-free if necessary))
1 heaped teaspoon miso ((ensure gluten-free if necessary))
Handful shiitake or maitake mushrooms, roughly chopped
Salt + pepper, to taste
Handful of green leaves ( I used pea shoots and purple mizuna but watercress, baby spinach or cress would all work well)
Kimchi

Steps:

  • Heat sesame oil in saucepan and add onion, garlic, ginger and sesame seeds once hot
  • Meanwhile, prepare the noodles. Open the package over the sink and drain away the liquid it comes in. Rinse then noodles under cold water.
  • Once the onions etc have all browned nicely, add the noodles, stock cube, miso and mushrooms, with enough water to cover
  • Turn up the heat and bring to the boil, then simmer on a low heat for 10 minutes
  • Taste and add salt and pepper

Inspiration from Recipe #179764, I changed the seasonings a bit and used low calorie tofu noodles. Salt is optional, but so yummy! This is quick and easy, and brings back wonderful memories of my college days...with a lot less calories! 1 (8oz) package of the tofu noodles is only 40 calories.

1 cup nonfat chicken broth or 1 cup nonfat beef broth
1 (8 ounce) package tofu shirataki noodles (either spaghetti or angel hair shape)
1 -2 teaspoon instant chicken bouillon granules or 1 -2 teaspoon beef bouillon granules
1 tablespoon low sodium soy sauce
1/4-1/2 teaspoon garlic powder
1/4-1/2 teaspoon onion powder
1/4 teaspoon Chinese five spice powder
1/4 teaspoon ground cumin
1/4 teaspoon coriander
1/4 teaspoon sugar substitute
1 teaspoon salt (to taste) (optional)
1 pinch celery seed

Steps:

  • Rinse tofu noodles under hot water. Drain and cut noodles in half (into manageable pieces.) Set aside.
  • Mix all seasonings together. Bring broth to a boil and mix in the spices, stirring well until they are dissolved.
  • Add soy sauce and tofu noodles and simmer until heated through. If you wish, stir in some chopped green onions, or some cooked meat or veggies!
