The Best Ever Bison Chili Recipe image

Provided by Jerry

Categories     Soups and Stews

Time 1h50m

Number Of Ingredients 21

2 lbs. Al natural bison chuck roast, cut in 1/2″ cubes
1 onion, chopped fine
2 tbsp. tomato paste
2 - 14.5 oz. can fire roasted diced tomatoes
1 8oz. can tomato sauce
1/4 cup red chili powder
1 Dried ancho chili pod, chopped fine or ground.
1 1/2 tsp cumin, ground
1/2 tsp. paprika
2 tbsp garlic powder
24 oz of your favorite dark beer, I recommend Shiner Bock or Ziegen Bock (Any good German beer will do)
1 medium butternut squash, peeled, seeded and cut in 1/2 cubes.
4 cups cooked pinto beans (or about 3 cans, if you don't want to cook them.)
10 oz. whole kernel corn (or the corn from 2 cobs)
4-6 oz. chicken stock or water.
1 1/2 tsp dried Mexican oregano
2 tsp dried cilantro leaves
2 tbsp corn masa flour (Masa Ferina)
Salt and pepper to taste.
2 tbsp vegetable oil or bacon grease.
Beef stock if needed to thin chili during cooking.

Steps:

  • Heat oil or bacon grease in a large pot or dutch oven over medium heat. Add cubed bison in batches, browning well on all sides. Remove browned pieces and place in a large bowl until all buffalo is browned well.
  • Return browned bison to pot with whatever juices collected in bowl. Add onion and cook for about 2 minutes, stirring often. Add tomato paste and continue stirring until paste no longer smells raw (Your nose will know, the paste will start to smell a bit sweet and the aroma will deepen.)
  • Add tomatoes, tomato sauce, ancho chili, chili powder, cumin, paprika, garlic powder and beer. simmer for 30 minutes and taste for seasoning. (it will still taste bland at this point, just make sure the amounts are close.)
  • Add butternut squash and simmer 45 minutes to 1 hour or until squash is just about fork tender, stirring occasionally to avoid sticking.
  • Add remaining ingredients and simmer uncovered for 1 hour, stirring often to prevent burning. Add beef stock or water as needed to achieve desired consistency.Taste for seasoning and adjust if necessary.
  • Simmer uncovered for an additional hour, adding liquid if necessary. Allow to rest 15 minutes before serving
  • Serve with cheddar or jack cheese, sour cream and a slice of good cornbread .

TEXAS STYLE CHILI

Texas Style Chili image

Provided by Food Network

Categories     main-dish

Time 2h55m

Yield 6 to 8 servings

Number Of Ingredients 21

1/4 cup rendered bacon grease or vegetable oil
3 pound tri-tip or boneless sirloin or chuck roast, cubed
1 large white onion, chopped
3 large jalapeno or serrano peppers, stemmed, seeded and chopped
5 cloves garlic, peeled and crushed
5 New Mexican green or red chiles, roasted, stemmed, seeded and chopped
6 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons Mexican oregano
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 large tomatoes, peeled, seeded, and chopped
1 (12-ounce) bottle Lone Star or Shiner Bock beer
2 ounces tequila
3 chipotle chiles in adobo, chopped
4 to 5 cups beef stock
1/4 cup to 6 tablespooons masa harina
Chopped fresh cilantro leaves, garnish
Finely chopped white onions, garnish
Sour cream, garnish
Fresh hot cornbread, accompaniment

Steps:

  • In a large heavy pot (such as a cast iron Dutch oven), heat the fat or oil over high heat. Add the meat and sear, stirring, until no longer pink. Lower the heat to medium-high. Add the onions, jalapenos, garlic, chiles, and chili powder, and cook, stirring constantly, until the onions are wilted and start to color, 4 to 5 minutes. Add the cumin, oregano, salt, and pepper, and cook until fragrant, about 20 seconds. Add the tomatoes and cook, stirring, for 1 minute. Add the beer and tequila and cook, stirring, to deglaze the pan. Add the chipotles and adobo sauce and 4 cups of the stock, stir well, and bring to a boil. Reduce the heat and simmer partially covered, stirring occasionally, until the meat is very tender, 2 to 3 hours, adding the remaining cup of stock as needed if the chili becomes too dry or thick. When the meat is tender and the chili is ready, add the masa harina 1 teaspoon at a time to thicken to desired consistency, stirring well and cooking after the addition of each before adding more.
  • Remove from the heat and correct the seasoning, to taste. Skim any fat from the surface.
  • Ladle into bowls and garnish each with cilantro, chopped onions, and a dollop of sour cream. Serve with hot cornbread.

Time 45m

Number Of Ingredients 18

1 ½ tablespoons extra virgin olive oil
1 large onion, chopped (about 2 cups)
5 cloves garlic, minced
1 teaspoon kosher salt
2 teaspoons chili powder
1 teaspoon dried oregano
1 tablespoon tomato paste
1 chipotle chile en adobo, finely chopped
1 tablespoon adobo sauce (found in the can with the chile en adobo)
1 lb. ground beef (80/20 or 85/15 works beautifully)
12 oz. Shiner Bock Beer
28 oz. whole peeled tomatoes (and their juices)
1 cup chicken stock, low-sodium
15 oz. kidney beans, rinsed and drained
Cheddar cheese
Sour cream
Green onions or chives
Avocado slices

Steps:

  • Heat the olive oil in a large Dutch oven over medium-high heat.
  • Add the onion, garlic, salt, chili powder and oregano and cook, stirring until softened and fragrant. (About 5-10 minutes.)
  • Stir in the tomato paste and the chipotle chile with its sauce. Cook the ingredients for 5 minutes.
  • Add the beef, breaking it up with a wooden spoon (or a rubber spatula), and cook until the meat is browned. This will take around 10 minutes.
  • Add the beer and simmer until reduced by half, about 3 minutes.
  • Chop the tomatoes, then add them and the juices they let out in the chopping process to the Dutch oven. Alternately, add the tomatoes whole with their juices and break/smash them with the wooden spoon. (This method will require you to cook them longer, but it also works!)
  • Add the broth and the beans, and bring the mixture to a boil.
  • Cook, uncovered, until thickened.
  • Serve warm with the garnish of your choosing.

THE BEST AUTHENTIC TEXAS CHILI RECIPE

The Best Authentic Texas Chili Recipe image

An authentic Texas Chili with a homemade chili paste, chunks of beef chuck, a mix of dry spices, chocolate, and Texas beer for the ultimate "Bowl o' Red".

Categories     Dinner

Time 3h35m

Number Of Ingredients 20

2 dried Ancho chilies
2 dried Guajillo chilies
2 tablespoons chili powder
2 tablespoons paprika
2 tablespoons ground cumin
2 tablespoons cocoa powder
3 tablespoons masa flour
1 tablespoon garlic powder
1 tablespoon dried oregano
1 teaspoon ground cinnamon
1 tablespoon salt, plus more for seasoning if needed
1 tablespoon black pepper, plus more for seasoning if needed
2 tablespoons olive oil
3 pounds beef chuck roast, cut into 1/2 in. cubes
1 medium white onion
2 jalapeños
3 cups beef stock (divided 1 cup and 2 cups)
1 bottle (12 fl oz) Shiner Black Lager or Shiner Bock
2 tablespoons brown sugar
2 tablespoons apple cider vinegar

Steps:

  • Cut the stems off the dried chilies and remove all of the seeds. Place them in a blender with 1 cup of warm beef stock. Cover the blender and let them soak in the beef stock for 30 minutes.
  • While the dried chilies are soaking, cut the beef chuck roast into 1/2 inch cubes and dice the white onion and jalapeños.
  • In a bowl, mix together the chili powder, paprika, ground cumin, garlic powder, dried oregano, masa flour, ground cinnamon, cocoa powder, salt, and pepper. Set aside.
  • After 30 minutes, puree the chilies and beef stock together to create a homemade chili paste. Set aside.
  • Heat olive oil in a medium cast-iron Dutch oven. Brown the beef chuck cubes on all sides. If there is not enough room in the Dutch oven, brown the beef chuck cubes in batches. Do not remove the brown buts or liquid from the Dutch oven - this has all the flavor and will be used for the Texas Chili. Remove the browned beef chuck and set aside.
  • Using the remaining liquid in the saucepan, sauté the onions till translucent. Then add the diced jalapeños.
  • Deglaze the Dutch oven by adding the Shiner beer, remaining 2 cups of beef stock, and apple cider vinegar. Then scrape the bottom of the pan with a spatula to get all the bits of flavor incorporated.
  • Add the beef chuck back into the Dutch oven along with the homemade chili paste, dry ingredient mix, and brown sugar. Mix all of the ingredients together and bring to a boil.
  • Once it comes to a boil, lower the heat, slightly cover the Dutch oven, and simmer for 2 - 2.5 hours or until the beef chuck is tender. Make sure you stir the Texas Chili occasionally.
  • Once the beef chuck is tender, serve the Texas Chili with a dollop of sour cream, shredded cheddar cheese, sliced jalapeños, and a side of cornbread.

  • Prep the ribs: Check to make sure silverskin has been removed from rib racks. If not, remove the silverskin by sliding the end of a spoon under the translucent membrane that covers the bone side of each rib rack; loosen skin, pull off, and discard.
  • Season the ribs: In a small bowl, combine salt, peppers, sugar, and garlic and onion powder until will mixed; apply spice rub evenly across meat side of ribs, using roughly 1 tablespoon plus 1 teaspoon per rib rack.
  • Cook the ribs: If using a grill, preheat grill to medium; grill-roast ribs, uncovered, on an oiled rack for 40 to 45 minutes, turning every 15 minutes.
  • If using a smoker, wrap ribs loosely with aluminum foil; lay them bone-side down. Cook in a pecan wood smoker for 2 to 3 hours, or until tender.
