STIR-FRIED SZECHUAN GREEN BEANS & SHIITAKE MUSHROOMS



Stir-Fried Szechuan Green Beans & Shiitake Mushrooms image

You'll be amazed at how authentic these Szechuan green beans taste -- plus, they're so easy to make.

3 tablespoons soy sauce
3 tablespoons water
1½ tablespoons dry sherry
½ teaspoon Asian/toasted sesame oil
1¼ teaspoons sugar
½ teaspoon cornstarch
¼ teaspoon red pepper flakes
¼ teaspoon dry mustard
Vegetable oil
1 pound green beans, ends trimmed
7 ounces shiitake mushrooms, stems removed and sliced
3 cloves garlic
1 tablespoon grated fresh ginger

Steps:

  • In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and mustard together. Set aside.
  • Heat 2 tablespoons oil in a 12-inch nonstick skillet over high heat until very hot and shimmering. Add the beans and cook, stirring frequently, until tender, puckered and browned, about 7-10 minutes (cooking time will depend on the size of the beans). Transfer beans to large plate.
  • Add 1 teaspoon oil to pan. Add shiitake mushrooms and cook, stirring occasionally, for 3-4 minutes until slightly browned. Reduce heat to medium, then add the garlic and ginger and cook, stirring constantly, until fragrant, about 20 seconds. Return the beans to the pan and add the sauce. Toss and cook until the sauce is slightly thickened and the vegetables are evenly coated, about 10 seconds. Transfer to serving dish and serve immediately.
  • Note: This recipe works best with thinner green beans (but not the super thin French haricots verts). If your beans seem really long, thick or a bit tough, cut them in half so they cook evenly (there may be just a few in the bunch that you need to cut). Also, be sure beans are dry, otherwise oil will splatter.

1 1/2 pounds fresh green beans
1/4 cup slivered almonds
6 ounces fresh shiitake mushrooms
1 tablespoon olive or vegetable oil
1 tablespoon sesame oil
3 cloves garlic, finely chopped
2 tablespoons soy sauce

Steps:

  • Remove ends of beans. Leave beans whole, or cut into 1-inch pieces. Place steamer basket in 1/2 inch water in saucepan or skillet (water should not touch bottom of basket). Place green beans in steamer basket. Cover tightly and heat to boiling; reduce heat. Steam 10 minutes.
  • Cook almonds in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown and fragrant.
  • Remove tough stems of mushrooms; cut mushrooms into 1/4-inch slices. Heat olive and sesame oils in 12-inch skillet over medium heat. Cook mushrooms and garlic in oil 3 minutes, stirring occasionally. Stir in soy sauce and green beans. Cook 2 to 3 minutes or until green beans are crisp-tender. Sprinkle with almonds.

Beef, Shiitake, and Green Bean Stir Fry image

1 lb Beef sirloin or flank steak
2 Tablespoons soy sauce (I really like Tamari)
1½-2 Tablespoons oil
1 red onion, sliced
1 large bell pepper or 4-6 mini peppers, thinly sliced or julienned
7 oz (2 packages 3.5 oz each) shiitake mushrooms or 8 oz any other fresh mushrooms
1 lb green beans, ends trimmed and green beans cut in half
3 cloves garlic, minced
¼ - ½ teaspoon grated or minced fresh ginger
½ cup chicken broth
green onions, to garnish
½ cup chicken broth
¼ cup oyster sauce
2 Tablespoons soy sauce (1 Tablespoon if it's not reduced sodium)
2 teaspoon sherry (or mirin or rice vinegar)
1 teaspoon cornstarch

Steps:

  • To cut the beef into thin strips, it really helps to place it in the freezer for about 15-30 minutes, which will make it easier to cut. Cut the beef in half lengthwise, with the grain. Then slice each half of beef against the grain, into thin pieces, about ¼-1/8 inch thin strips.
  • Marinate in 2 Tablespoons soy sauce. I really like the taste of Tamari. Set aside for 15 minutes, while prepping the rest of the ingredients.
  • In a 12 inch nonstick skillet, heat ½ Tablespoon of oil on high heat. Drain the beef and sauté on high heat in two batches for about 3 minutes, until the beef is spotty brown on one side. You will have some of the oil left each time, just add a bit more to the skillet if needed. Set the beef aside in a large bowl.
  • In the same skillet, add the onion and peppers. Saute on high heat for 3-5 minutes, until tender. Set aside with the beef.
  • Using the same skillet again, add another ½ Tablespoon of oil and add the shiitake mushrooms, cook for about 3 minutes.
  • Add the green beans, mix to combine and cook for 1-2 minutes on high heat, until the green beans are spotty brown.
  • Make a space in the middle of the skillet and add the garlic and ginger, cooking for about 30 seconds, until fragrant.
  • Mix to combine and pour in ½ cup of chicken broth, reduce the heat to medium, cover the skillet and cook until most of the broth is absorbed and the beans are as tender as you like them. Meanwhile, combine all the sauce ingredients together. When the beans are cooked through, pour in the sauce into the skillet, increase the heat to high and cook for just a few minutes until the sauce thickens up.
  • Return the beef, onion and peppers to the skillet, mix to combine and just heated through.
  • Serve with noodles or rice. Garnish with green onions.

  • Melt 3 tablespoons butter in large nonstick skillet over medium-high heat. Add shiitake mushrooms and sauté until tender, about 5 minutes. Transfer mushrooms to medium bowl. Melt remaining 3 tablespoons butter in same skillet. Add shallots and garlic and sauté until tender, about 2 minutes. Add green beans and toss to coat with butter. Pour broth over green bean mixture. Cover and simmer until liquid evaporates and green beans are crisp-tender, about 10 minutes. Stir in shiitake mushrooms. Season to taste with salt and pepper. Transfer to platter and serve.
