SOUTHWEST TAMALE PIE
I found this in a quick cooking magazine and it is so good and so easy. Most tamale pies seem dry but not this one. It is cheesy and tasty!

Steps:
- In a large skillet, cook beef and onion until beef is no longer pink; drain.
- Measure 1/2 cup green chile sauce sauce; set aside.
- Add remaining sauce to ground beef. Stir in taco seasoning and water. Bring to a boil.
- Stir in corn and olives. Spoon into a greased deep dish pie plate or a 1.5 quart casserole dish. Sprinkle with 1 cup of cheese.
- In a bowl, combine corn bread mix, egg and the reserved chile sauce; mix well.
- Spoon over cheese layer.
- Bake 400 degrees for 25 minute or until corn bread is done.
- Sprinkle with remaining cheese. (I use extra cheese for the top).

CHILE TAMALE PIE
This crowd-pleasing potluck dish is easy to prepare. It packs a little heat, a little sweet and a big-time authentic southwestern flavor. There is no substitute for freshly ground chiles. - Drain corn, reserving liquid; set corn aside. Place masa harina in a large bowl. In a small bowl, combine the broth, butter, egg and reserved corn liquid; stir into masa harina just until moistened. Set aside., In a large skillet coated with cooking spray, cook pork and onion over medium heat until pork is no longer pink. Add the beans, chiles, chocolate, orange juice, lime juice, garlic powder, cumin, reserved corn, and cilantro and jalapeno if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Meanwhile, preheat oven to 325°., Transfer to a greased 13x9-in. baking dish; sprinkle with cheese. Spread masa harina mixture over cheese. , Bake, uncovered, until golden brown, 50-60 minutes. Let stand for 10 minutes before serving.

OLD-SCHOOL TAMALE PIE
Delicious, old-school, comfort food, this tamale pie recipe is perfect for fall or winter nights.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
- Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
- Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

LAYERED TAMALE PIE
I originally got this recipe from my Great Grandma Ce. But I came up with the layered idea. Originally there were no corn tortillas, and it was more like a sort of meat loaf pie. This recipe is interesting, very tasty, and kid-friendly too!

Steps:
- Preheat oven to 350 degrees.
- Heat oil in large skillet and add onions; cook until tender, but not brown.
- Add beef, brown well and Drain.
- Mix in the Taco Seasoning and 3/4 Cup water; let simmer for 5 minutes, uncovered, stirring frequently, until spice mixture is no longer runny.
- Stir crushed tomatoes, corn, and cornmeal into the meat; mix well.
- In an 9X9 round pyrex (or well greased metal) baking dish, place 4 of the 8 tortillas on the bottom, spread out, to cover the pan, add 1/2 of the meat mixture over the tortillas,and then 1/2 of the cheese.
- Repeat this layering process, ending in cheese.
- Place in oven to heat through, and melt cheese (about 25 minutes).
- Cut into 8 pieces across, as you would a pie.
- Serve!
SHERYL'S SOUTHWEST TAMALE PIE
This is a quik easy dish to make. Real comfort food. I love having leftovers of this.

- 1. In a large skillet,cook ground beef and onion untill beef is no longer pink,drain.
- 2. Add cream of mushroom soup and water to beef mixture.
- 3. Stir in seasoning,heat to boil. Stir in corn and olives. Spoon into a greased 2 qt. cassorole dish. Sprinkle with 1 cup of cheese.
- 4. In a bowl combine corn bread mix , egg, milk. Spoon over cheese layer.
- 5. Bake at 400 degrees F. for 25 min. or untill crust is golden brown. And corn bread is done in middle. Sprinkle with remaining cheese.
