Steps:
- In a skillet over moderate heat, melt the butter.
- Add in onions; cook/stir for 3 minutes.
- Add in mushrooms; cook, stirring a few times, until the liquid from the mushrooms has evaporated.
- Sprinkle the flour over the mushrooms and onions; stir until blended.
- Cook 2-3 minutes, stirring to make sure the vegetables don't stick to the bottom of the pan.
- Gradually stir in the broth and whisk it until it comes to a boil.
- Add in cream and sherry; cook, stirring, until the sauce thickens.
- Add in nutmeg; season with salt and pepper.
- Bring water t a boil in a saucpan; add in green beans; return water to a boil.
- Cook beans until crisp-tender, about 3 minutes; drain the beans.
- To serve, place warm beans in a serving dish and pour the warm sauce over them.

Steps:
- 1. Heat oven to 350. Lightly spray a 9" x 13" casserole dish w/ cooking spray. Place oil & butter in large skillet over low-med heat. Once butter is melted, add onions.
- 2. Stir & cook 5 minutes. Add the mushrooms and cook, stirring another 5 minutes. Stir in both cans of soup. Pour in the milk and stir until combined.
- 3. Spoon in the cream cheese, stirring until melted. Add salt & pepper to taste. Gently fold in green beans. Pour or spoon into the casserole dish, smooth out so that it's evenly distributed. Top w/ the fried onions. Bake uncovered for about 30 minutes, or until bubbly & top is light brown.
SHERRIED GREEN BEANS WITH PORTOBELLO MUSHROOMS
This is one of my favorite vegetable side dishes inspired by a similar dish by Rachel Ray. The sherry is what gives it the unique lip-smacking flavor, so try not to substitute anything for it.

- Simmer green beans in a skillet in salted boiling water, 5 minutes.
- Drain and set aside.
- Return skillet to medium heat.
- Add oil and 1 tablespoon of butter to pan.
- Add onions and sauté 2-3 minutes.
- Add garlic and mushrooms, season with salt and pepper.
- Sauté for 3-5 minutes.
- Return green beans to pan.
- Heat through while adding sherry and Worcestershire sauce.
- Reduce sherry for 3-4 minutes then add final tablespoon of butter.
- Transfer vegetables to a serving plate.

CREAMY GREEN BEANS AND MUSHROOMS
The two most important aspects of the classic to capture are the crispy onion topping and the creamy sauce. By roasting shallots with a bit of oil and tossing with crispy breadcrumbs you save the fat of the fried canned alternative. Low-fat milk, flavored with aromatics, and chicken broth thickened with a bit of flour make a creamy but light sauce that satisfies.

- Preheat the oven to 375 degrees F. Lightly mist a 2-quart baking dish with cooking spray. Toss the shallots with the oil and salt and pepper on a baking sheet, spread in a single layer, and bake until golden and crispy, stirring 3 to 4 times, about 20 minutes. Remove from the oven and immediately sprinkle the breadcrumbs over the shallots and toss well. Set aside to cool.
- Meanwhile, in a small pot combine the milk, thyme, bay leaves and peppercorns and bring to a simmer. Turn the heat off and let steep for 20 minutes. Bring a large pot of salted water to a boil. Add the beans and cook until bright green and crisp tender, about 6 to 8 minutes. Drain well and run briefly under cold water. Drain again and set aside.
- Strain the milk into a large skillet, add the mushrooms and season with salt and pepper. Bring to a simmer over medium heat and cook until the mushrooms have softened, 10 to 15 minutes. Stir the broth and flour together and pour into the skillet; cook, stirring, until the sauce thickens, 6 to 8 minutes. Remove from the heat and add the beans and nutmeg. Toss until the beans are well coated in the sauce and transfer to the baking dish. Scatter with the shallots and bake until the sauce is bubbly and the shallots are crisp, about 20 minutes. Let stand 10 minutes before serving.
GREEN BEANS WITH CREAMY MUSHROOM SAUCE

- Heat 2 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add shallots; cook until deep golden, stirring occasionally, 4 to 5 minutes. Drain shallots on paper towels, reserving drippings in skillet.
- Add green beans, water, 1/4 teaspoon salt, and 1/8 teaspoon pepper to reserved drippings. Cook over medium-high heat, covered, for 2 minutes. Cook, uncovered, until beans are crisp-tender and starting to blister, stirring occasionally, about 6 minutes more. Transfer to a platter; keep warm.
- For mushroom sauce, add the remaining 1 tablespoon oil to the skillet. Add mushrooms; cook and stir over medium heat for 1 minute. Add thyme, garlic, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook until mushrooms are golden, stirring frequently, about 2 minutes more. Mix in flour; gradually stir in milk. Cook and stir until thick and bubbly. Continue cooking and stirring for 2 minutes more.
- Pour mushroom sauce over beans and top with sauteed shallots and crumbled goat cheese.
