I love trying out different sponge cake recipes..the sherry in this recipe adds a nice flavour that's not normally found in sponge cakes.

3/4 cup almonds, finely ground
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 orange, zest of
8 eggs, separated
1 pinch cream of tartar
1 1/2 cups granulated sugar
1/3 cup sweet sherry or 1/3 cup milk
1/3 cup orange juice
powdered sugar
orange slice (to garnish)

Steps:

  • Preheat oven to 325°F.
  • Sift the flour, salt & cinnamon together in a bowl then add the almonds and zest and stir to combine.
  • In a separate bowl, beat the egg yolks until light then beat in the sugar, sherry (or milk), and orange juice until thoroughly combined. Stir in the dry ingredients until mixed.
  • Beat the egg whites and cream of tartar until soft peaks form. Fold a small amount of egg white mixture into the egg yolk mixture to soften the batter. Gently fold in the balance of the egg whites into the yolk mixture.
  • Pour the batter into an ungreased bundt springform pan. Bake for 50 - 60 minutes, or until a cake tester comes out clean.
  • Cool in pan.

1 cup margarine
1 ½ cups white sugar
4 eggs
1 teaspoon almond extract
2 cups all-purpose flour
1 (21 ounce) can cherry pie filling
2 tablespoons confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in eggs, one at a time, then stir in almond extract. Fold in flour until just blended. Spread batter into prepared pan. With the tip of a knife, mark squares in the batter. Spoon equal portions of pie filling in the center of each square.
  • Bake in preheated oven for 35 to 40 minutes, or until golden brown, and a toothpick inserted into the center comes out clean. Allow to cool, then dust with confectioners' sugar.

2 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
1 cup butter
1 (8 ounce) package cream cheese
1 ½ cups white sugar
4 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup maraschino cherries, drained and halved
¼ cup all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour an 8 inch tube pan. Mix together the flour, baking powder, and salt; set aside.
  • In a large bowl, cream together the butter, cream cheese, and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and almond extract. Beat in the flour mixture, mixing just until incorporated. Dredge cherries in 1/4 cup flour, then fold into batter. Spread into prepared pan.
  • Bake in the preheated oven for 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

1 cup butter
1 1/2 cups sugar
4 eggs
1 teaspoon almond extract
2 cups flour
1 (21 ounce) can cherry pie filling
powdered sugar

Steps:

  • In large bowl of an electric mixer, beat butter and sugar until fluffy; add eggs, one at a time, beating well after each addition Stir in almond extract and flour until well blended.
  • Spread batter in a well-greased 10x15-inch baking pan.
  • With a knife, lightly mark off batter into 15 equal pieces; then spoon equal portions of pie filling into center of each piece.
  • Bake in a 350° oven for 35-40 minutes or until cake is lightly browned and a toothpick inserted in center comes out clean.
  • Let cool in pan.
  • Dust with powdered sugar before serving.

  • Beat together the butter and sugar in a stand mixer or by hand until fluffy and pale. Beat in the eggs, one by one, then, using a metal spoon, gently fold in half the flour, the bicarbonate of soda and the vanilla extract. Add the sherry and fold in along with the remaining flour.
  • Pour everything into the prepared cake tin and bake for 35-45 minutes until risen and cooked through.
