SHERRY CHICKEN AND MUSHROOMS

This recipe was a favorite in my household growing up and is now one of my kids' favorite meals. It's easy and quick.

4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
garlic powder, or to taste
2 tablespoons butter
1 small onion, chopped
1 (8 ounce) package sliced fresh mushrooms
1 tablespoon olive oil
¼ cup cream sherry
¼ cup chicken broth, or as needed
4 slices provolone cheese

Steps:

  • Season chicken with salt, pepper, and garlic powder.
  • Heat butter in a skillet over medium heat; cook chicken in the melted butter until no longer pink in the center and juices run clear, 3 to 4 minutes per side. Remove chicken from skillet.
  • Cook and stir onion and mushrooms in the same skillet; add olive oil. Cook until onion and mushrooms are slightly tender, 5 to 10 minutes. Pour sherry and chicken broth into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon, about 2 minutes.
  • Return chicken to the skillet, cover, and simmer chicken and onion mixture until liquid is slightly reduced, about 15 minutes. Spoon onion and mushrooms atop each chicken breast and top each with a slice of provolone cheese. Remove skillet from heat; cover skillet until cheese melts, about 5 minutes.

A rich seafood chowder made with milk instead of cream plus mushrooms, garlic, leeks, and a dash of sherry.

Number Of Ingredients 16

1 large potato, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil
3 leeks, sliced 1/8-inch thick
1 shallot, minced
5 cloves garlic, minced
1 ½ cups chopped wild mushrooms
1 teaspoon dried thyme
½ cup sherry, or to taste
4 tablespoons butter
¼ cup all-purpose flour
3 cups vegetable stock
3 cups milk
1 teaspoon ground ginger
salt and ground black pepper to taste
1 pound bay scallops, cut into bite-sized pieces
1 pinch cayenne pepper, or to taste

Steps:

  • Place potato into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 5 minutes. Drain.
  • Heat oil in a large skillet over medium heat. Add leeks and shallot and cook, stirring frequently, until soft, 3 to 5 minutes. Add garlic and stir until fragrant, about 1 minute. Add mushrooms and thyme and cook until mushrooms are soft but not browned, another 3 to 5 minutes. Add 1/2 sherry and stir until reduced by about half, about 5 minutes more.
  • Melt butter in a large soup pot over medium heat. Add flour and stir to create a paste. Slowly whisk vegetable stock into the flour mixture until fully incorporated and smooth. Add milk and stir to mix fully. Transfer mushroom mixture from the skillet to the soup pot, being sure to scrape all of the glaze from the skillet as well. Add ginger, salt, and pepper to taste, keeping it mild for now. Add an additional dash or 2 of sherry to the soup, if desired.
  • Bring soup to a boil, about 5 minutes. Add scallops and boil for 3 minutes; test one to be sure they are cooked before serving. Stir in cooked potatoes and season with additional salt, pepper, and cayenne pepper as desired.

2 tablespoons butter
8 ounces mushrooms, sliced (3 cups)
1/2 cup onion, chopped
2 cloves garlic, minced (or more)
2 cups diced potatoes, unpeeled
1 cup water
1/2 cup carrot, chopped
10 ounces frozen creamed corn (or canned, I use more)
1 cup skim milk
fresh ground black pepper

Steps:

  • Melt butter in saucepan over medium heat.
  • Add mushrooms, onion and garlic.
  • Cook about 5 minutes until mushrooms are tender.
  • Stir in potatoes, carrot and water.
  • Bring to a boil, reduce heat to low, simmer about 10 minutes until potatoes are tender Add corn, milk,and pepper.
  • Increase heat to high, cook until chowder is done stirring occasionally, about 5 minutes.

CHICKEN WITH A SHERRY MUSHROOM SAUCE

One of my favorite recipes, this chicken with a sherry mushroom sauce is tender and loaded with rich flavors. Plus it comes together in under an hour, with just 20 minutes of active preparation time.

Number Of Ingredients 8

4 Chicken Breasts
Salt and Pepper
2 tablespoons Butter
2 cloves of Garlic (crushed or chopped)
8 ounces Sliced Mushrooms (I like baby bella)
1 cup Dry Sherry
1/3 cup Heavy Cream
1/2 teaspoon Thyme

Steps:

  • Heat your oven to 350 degrees.
  • Melt 1 tablespoon of butter in a large skillet over medium-high heat. Generously salt and pepper both sides of the chicken breasts. Once the butter has melted, add the chicken to the skillet. Then add 1/4 cup of sherry. Cook the chicken for 3 minutes per side, until browned. Then remove the chicken from the skillet and place it on a plate while you work on the sauce.
  • Melt another tablespoon of butter in the same skillet you just used to cook the chicken. Add the garlic and stir, scraping up any brown bits. After a minute add the mushrooms. Generously salt and pepper and toss until the mushrooms are evenly coated with butter. Cook for 2 minutes. Then add the remaining sherry. Let the mushrooms simmer for another 4 minutes. Then stir in the cream and thyme. Let the sauce reduce for 5 minutes then add the chicken back to the skillet. Place the skillet in the oven for 30 minutes so that the chicken can finish cooking. (Make sure you are using an oven-safe skillet!)
  • After 30 minutes in the oven the chicken should be done - serve it with pasta or rice pilaf. Spoon the sauce over the top.

4 cups sliced fresh mushrooms
1/2 cup chopped onion
1/2 cup diced carrot
1/2 cup diced celery
3 tablespoons dry sherry
1 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon white pepper
3 cups skim milk
1 cup evaporated skim milk
1/3 cup flour
2 tablespoons grated parmesan cheese

Steps:

  • Combine mushrooms, onions, carrots, celery.
  • sherry, thyme salt and pepper in a 3 quart saucepan.
  • Place on medium heat and cook (do not cover) stir frequently until the vegetables are tender and most of the liquid has evaporated.
  • Add 2 1/2 cups milk and all of the evaporated milk.
  • Cook stirring until the mixture comes to a simmer.
  • In jar with lid combine the remaining 1/2 cup milk with the flour shake until smooth.
  • Stir into soup continue cooking and stirring until soup thickens and is bubbling.
  • Divide into serving bowls top with parmesan cheese.

6 ears fresh yellow corn
4 cups low-salt chicken broth
3 cups whipping cream
2 tablespoons olive oil
7 bacon slices, cut crosswise into 1/4-inch-wide strips
1 1/2 cups finely chopped onion
1 1/2 cups finely chopped leeks (white and pale green parts only; about 2 medium)
3/4 cup finely chopped celery
1 teaspoon fennel seeds
1 3/4 pounds white-skinned potatoes, peeled, cut into 1/2-inch cubes
2 tablespoons (1/4 stick) butter
6 ounces fresh chanterelle mushrooms, thickly sliced
2 tablespoons dry Sherry
1 teaspoon fresh thyme leaves
1 pound fresh crabmeat
2 tablespoons chopped fresh parsley

Steps:

  • Cut kernels off corn cobs. Set kernels aside. Combine cobs, broth, and cream in heavy large saucepan. Simmer 5 minutes. Remove from heat.
  • Heat oil in heavy large pot over medium-high heat. Add bacon and sauté until crisp, about 8 minutes. Transfer bacon to paper towels to drain. Pour off all but 3 tablespoons pan drippings; add onion, leeks, celery, and fennel seeds to pot. Sauté until vegetables are crisp-tender, about 4 minutes. Stir in potatoes. Discard cobs from cream mixture; strain cream mixture into potato mixture. Simmer until potatoes are almost tender, stirring occasionally, about 10 minutes. Stir in corn kernels. Simmer chowder until potatoes are tender, about 5 minutes longer.
  • Meanwhile, melt butter in heavy large skillet over medium heat. Add mushrooms and sauté until tender, about 5 minutes. Stir in Sherry and thyme. Add mushroom mixture to chowder. Season to taste with salt and pepper.
  • Sauté crabmeat in same large skillet over medium-low heat just until heated through, about 3 minutes. Divide crabmeat, reserved bacon, and parsley among bowls. Ladle chowder over and serve.

1/2 pound oyster mushrooms* coarsely chopped
1/2 cup minced onions
1 cup cubed peeled potatoes
2 cups milk scalded
Salt to taste
Freshly-ground black pepper to taste
1 dash ground mace
1 dash Tabasco sauce
1 pinch dried thyme
2 egg yolks
1/4 cup dry sherry
1 cup half and half
Bread cubes browned in butter, drained well
Minced fresh parsley

Steps:

  • * Alternate Mushrooms: Shaggy Parasol Mushroom Melt 2 tablespoons of the butter in a large saucepan. Add the mushrooms and onions, and cook for 3 minutes or until tender. Remove with a slotted spoon and keep warm. Add the remaining 2 tablespoons butter to the pan and slowly cook the potato cubes for 10 minutes or until tender. Gradually stir in the milk. Add the salt, pepper, mace, Tabasco, and thyme. Allow this to come to a boil, then remove the pan from the heat. In a mixing bowl, combine the egg yolks, sherry, and half and half and slowly blend the mixture into the chowder. Add the onions and mushrooms and heat almost, but not quite, to a boil. Taste to correct the flavoring. Serve at once in soup plates. Float the bread cubes in the soup and sprinkle with parsley. This recipe yields 4 first course servings.

  • Add the the mushrooms in batches, 4 cups at a time, and cook until they have shrunk quite a bit, and are golden brown, stirring from time to time. Remove the mushrooms and add them to a bowl. This should take about 10 minutes per batch. Using some of the oil each time, repeat the process until all of the mushrooms have been sautéed. Add all of the mushrooms back to the pan.
  • Reduce the heat to low and deglaze the pan with the sherry. Return the heat to high and use a wooden spatula with a flat edge to loosen any mushrooms bits from the bottom of the pan. Mix and sauté until the sherry has evaporated just about completely.
