MUSHROOM BRIE SOUP
This Mushroom Brie Soup is decadent, rich, earthy, creamy, and so easy to make. Browned butter makes the flavor extra deep for this one pot, vegetarian recipe.

Steps:
- Melt the butter (4 tablespoons) in a medium or large pot over medium high heat. Once it's melted, continue heating until foamy and beginning to turn brown.
- Immediately add the diced onion and mushrooms. Season with salt and pepper. Stir, turn heat down to medium, then allow to sauté untouched for approximately 5 minutes, or until liquid has mostly evaporated.
- Add flour (1/4 cup); stir to coat.
- Add chicken broth (4 cups), stir, bring to a boil.
- Turn heat down to simmer. Add cubed brie (8 oz.) and continue simmering until melted (if there are a few chunks that won't melt, don't worry about it).
- Use an immersion blender to puree the soup to desired consistency (alternatively, you can use a standard blender in batches).
- Add the heavy cream (1 cup) to soup and stir in. Turn off heat, and taste and adjust seasonings if necessary.
- Serve hot, garnished with croutons and/or parsley, if desired.

Steps:
- Trim the rind from the brie and then roughly tear it into 2-inch pieces. (It is easy to trim if you first place the cheese in the freezer for 30 minutes or until it is sufficiently hard.) Set aside.
- In a small saucepan, reduce the sherry over medium-high heat to 1 cup. Set aside.
- in a medium stockpot over medium-high heat, melt the butter. Add the mushrooms, shallots, and lemon juice and cook 4 minutes, stirring constantly. Remove from the heat, add the flour, and stir until the flour is fully incorporated.
- Return the mixture to heat and add the beef broth and reserved sherry. Raise the heat to high and bring the mixture to a boil. Reduce the heat and simmer for 15 minutes.
- Add the trimmed Brie, stirring until the cheese has melted. Add the half and half and pepper and continue to simmer without boiling for 5 minutes.
- ladle the soup into separate bowls and garnish each with 1 to 2 tablespoons of the chives.

- Sauté onions, shallots, and mushrooms in margarine for 5 minutes in a non stick skillet.
- Add 3 Tbsp sherry and chicken stock and simmer for 10 minutes.
- Add milk and cheese and stir until cheese is melted and soup begins to thicken.
- Combine cornstarch and remaining 3 Tbsp of sherry and stir into soup.
- Continue cooking until soup is thickened.
- Season with pepper and nutmeg.
- Taste; add salt if needed.

- Dissolve Brie in hot chicken stock in large heavy pan. Strain.
- Melt butter in Dutch oven over low heat while cheese is dissolving. Add mushrooms, carrots, and green onions; sauté til tender. Add cheese mixture. Stir in sherry and cream. Note: If thicker soup is desired, gradually stir 1 cup hot soup into 1 Tbsp. flour. Return to soup and stir til thickened. Serves 4 to 6

Steps:
- Heat oil in a Dutch oven over medium high heat.
- Add onion, carrot, and celery; saute 6 minutes or until tender.
- Reduce heat to medium; add mushrooms and garlic.
- Cook 7 minutes or until mushrooms are tender, stirring frequently.
- Add water, sage, salt, pepper, and broth; bring to a simmer.
- Cover and simmer for 25 minutes.
- Remove from heat, cool for 5 minutes.
- Place half of mushroom mixture in a blender or food processor; process until smooth.
- Pour pureed soup into a large bowl.
- Repeat procedure with remaining mushroom mixture.
- (NOTE: You can also use a stick blender and puree the soup in the pot.) Return soup to pan.
- Stir in half-and-half and sherry; cook over low heat 5 minutes or until throughly heated, stirring frequently.
- Sprinkle each serving with minced fresh parsley and/or parmesan cheese.
