BEST CLASSIC SHEPHERD'S PIE RECIPE
The Best Classic Shepherd's Pie - AKA Shepards Pie or Cottage Pie. Ground Beef (or lamb) with vegetables in a rich gravy, topped with cheesy mashed potatoes and baked.

Steps:
- Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.
- Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon. Add the parsley, rosemary, thyme, salt, and and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.
- Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.
- Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
- Add the broth, frozen peas and carrots, and frozen corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
- Set the meat mixture aside. Preheat oven to 400 degrees F.
- Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
- Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
- Add butter, half & half, garlic powder, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
- Add the parmesan cheese to the potatoes. Stir until well combined.
- Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.
- If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn't bubble over into your oven. Bake uncovered for 25-30 minutes.** Cool for 15 minutes before serving.

- Heat oil in a skillet set over medium heat. Add the onion, garlic, thyme, rosemary, and half of the salt and pepper. Cook, stirring often, for 5 to 7 minutes. Preheat the oven to 350 F (180 C).

EASY RUSTIC SHEPHERD'S PIE WITH THE CHEESIEST MASHED POTATOES
My take on the classic - shepherd's pie! Of course, like with any of my other recipes this shepherd's pie is loaded with herbs and spices to give it the best flavor. Finally, we'll top it off with the cheesiest Irish cheddar mashed potatoes your shepherd's pie has ever seen!

- potatoes: boil the potatoes in a large pot of salted water until fork tender. Sometimes I'll throw in a couple cloves of garlic in with the potatoes too. Drain, mash and mix in the remaining mashed potatoes ingredients and season with salt and pepper to taste.
- cook the meat and veggies: heat the olive oil in a large oven-safe pot over medium-high heat. Add the ground lamb and crumble the meat using a wooden spoon. Cook for 4-5 minutes or until the meat browns, drain any excess grease leaving just 1 tablespoon. Add the mirepoix and season the veggies with a small pinch of salt and allow the veggies to cook down until translucent, about 7-9 minutes. Add the garlic and let cook another 30 seconds or until fragrant.
- beef gravy: Position a rack in the center of the oven and preheat the oven to 425ºF. Sprinkle the ground meat mixture with the cinnamon, nutmeg, and cornstarch, stir to combine and let cook for 15 seconds before adding the Worcestershire sauce, tomato paste, herbs, bay leaf, and beef stock. Allow the gravy to come to a simmer before reducing the heat to low and letting it simmer for 15 minutes. Remove the herbs, stir in the peas, taste and adjust with salt and pepper as desired.
- bake and serve: Drop large dollops of the prepared mashed potatoes on top of the beef gravy then smooth out gently. Bake for 15 minutes then, finish it under the broiler if you want it to be golden brown on top. Let cool for several minutes before serving.
SHEPHERDS PIE WITH ROSEMARY, THYME AND BRANDY GRAVY
I created a non-traditional shepherds pie using the ingredients I had at my fingertips. It turned out absolutely delicious - a happy accident that the family enjoyed, and I hope you all will too!

- On a stovetop, use a large stock pot to saute onions in 2 tablespoons olive oil until translucent, add carrots, potatoes and garlic, season with rosemary, thyme, salt and pepper. Cook until a little softened, about 10 minutes on medium heat, occasionally stirring to keep even heat. If it looks too dry, add a little oil. Push all veggies to the sides to create a "hole" in the center*, add the butter. As the butter is melting, add flour and stir it into the butter. Add broth, use a whisk or fork to combine. Turn up heat to bring a slight boil, once bubbly, turn down to simmer for 10 minutes. Stir in cognac at this time so the alcohol burns off while simmering. When the liquid is reduced by half, stir in the the cooked chicken, then pour contents into a 9x12 casserole dish and cover with shredded cheese. Bake at 400 degrees for 10-20 minutes or until cheese is brown and bubbly. Serves 6.
- *Note: If you prefer to remove veggies at this point to make the gravy in the pot, this would be the time to do so. Simply transfer the veggies to a bowl and loosely cover with foil. After gravy is made, add veggies back to pot, give it a stir and continue with the directions from there.

- Preheat the oven to 425°F (220˚C).
- Heat the oil in a large pan over medium-high heat until shimmering. Add the ground lamb, season with salt and pepper, and fry for 5 minutes, until cooked through.
- Add the onion, carrots, garlic, thyme, and rosemary, stir, and cook for about 10 minutes, or until the veggies are softened and the meat is well-browned.
- Add the tomato paste and Worcestershire sauce and stir to incorporate. Cook for 1-2 minutes, stirring constantly, until the liquid evaporates and the meat is aromatic.
- Pour in the red wine and reduce until almost completely evaporated.
- Add the chicken stock, bring to a boil, and cook the meat until the stock has evaporated, 5 minutes.

- Spoon the lamb mixture into a large baking dish. Pipe the golden mashed potatoes over the lamb.

- Preheat the oven to 400 degrees and prepare a 9x13 baking dish by spraying with nonstick cooking spray.
- Fill a large pot with water and bring to a boil. Add the diced potatoes and cook until tender. Remove from water and set aside.
- While the potatoes are cooking, brown the ground beef in a large skillet with the diced onion and minced garlic. Season with salt, pepper, parsley, thyme, and rosemary.
- Stir in the frozen corn, peas, and carrots.
- In a small bowl or measuring cup, whisk together the beef broth and corn starch until well combined. Pour over the beef mixture and simmer over medium low heat until thickened.

SHEPHERD'S PIE
This incredibly hearty, restaurant worthy, comforting shepherd's pie recipe does not disappoint! A flavorful beef, veggie and gravy filling is made in a cast iron pan and layered with fluffy, perfectly creamy mashed potatoes and then it's broiled until golden brown.

- Add potatoes to pot with water: Place potatoes in a medium pot or large saucepan. Cover with water by 1-inch and season water with salt. Bring to a boil over medium-high heat.
- Cook potatoes until tender: Let gently boil until potatoes are fully tender when pierced with a fork, about 10 - 15 minutes. Drain in a colander and rinse under hot water for about 5 seconds to remove excess starches (which can make potatoes gluey).
- Rice Potatoes: Drain potatoes then pass through a food mill or potato ricer into same pot*.
- Stir with liquid ingredients: Melt 5 Tbsp butter and add to potatoes along with half and half and sour cream. Stir just to combine while seasoning with salt to taste and adding an extra 1 -2 Tbsp half and half to thin if needed. Cover and set aside if filling isn't yet complete.
- Saute veggies: Melt remaining 1 Tbsp butter in a 12-inch (and deep) cast iron skillet. Add onion, carrots, celery and saute until nearly soft, about 6 minutes. Add garlic and saute 1 minute longer.
- Cook beef: Add ground beef in chunks and cook and break up beef until no longer pink, about 6 minutes. If you find there's lots of excess fat then dab some up using balled up paper towels held by tongs (leave 1 - 2 Tbsp rendered fat).
- Add thickeners: Add flour and tomato paste and saute 1 minute.
- Pour in liquids, let reduce: Pour in red wine, beef broth, Worcestershire, thyme and rosemary. Bring to a simmer stirring frequently. Reduce heat to low and let simmer until reduced by about 2/3 (and alcohol scent has cooked off), about 8 - 10 minutes.
- Add remaining greens: Stir in peas and parsley and heat through, about 1 minute. Season filling with salt and pepper to taste.
- Assemble shepard's pie: Spread beef filling into an even layer. Dollop spoonfuls of mashed potatoes evenly over top then spread into an even layer**.
- Decorate: Run a fork along top to create a pattern of wavy rows.
- Bake: Move oven rack about 5-inches below broiler and preheat broiler to high. Transfer to oven and let broil until golden brown on top about 4 - 6 minutes (keep a close on it as every oven varies).
- Rest: Let rest a few minutes before serving. Garnish with parsley if desired.

- Add a drizzle of olive oil to a large skillet/pot over medium heat and add your lamb. Break up with a wooden spoon until it begins to brown, then season with salt & pepper. Continue to fry until completely browned and the liquid (if any) has disappeared. Pour into your baking dish.
- Add more oil as needed to the skillet/pot then add your onion, celery and carrot. Fry until they begin to soften and brown, then add your garlic. Fry for a minute longer, then stir in 2 tbsp tomato puree. Deglaze with 1/2cup / 125ml wine and allow to reduce for a few mins. Add back in your lamb and stir to combine.
- Pour in 2.5 cups / 375ml Beef stock then add 2 tbsp Worcestershire sauce, 2 tbsp gravy granules, 2 bay leaves, 1 tsp rosemary, 1/2 tsp thyme and salt & pepper to taste. Allow to simmer for 35-45mins or until thickened.
- Meanwhile, boil your potatoes in salted water until knife tender. Drain and mash in 4 tbsp butter. Once lump free, stir in 1/2 cup / 125ml cream and season to taste with nutmeg, salt and pepper.
