After doing a search, I couldn't find a decent Shepherd's Pie recipe... I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy!

1 lb lean ground beef
1/2 slice bread, finely chopped
1 whole egg
1/2 small sweet onion, finely chopped (such as Vidalia)
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons ketchup
1/4-1/3 cup half-and-half cream
1 sweet onion, sliced in rings (such as Vidalia)
4 butter potatoes, cubed
1/3 cup half-and-half cream or 1/3 cup milk
2 tablespoons butter
1/4 cup cheddar cheese, shredded
1 (8 ounce) box frozen peas, thawed and drained
1 (8 ounce) box frozen carrots, thawed and drained

Steps:

  • Preheat oven to 350 degrees.
  • Prepare meatloaf: Combine first eight ingredients in a large bowl.
  • Smooth into a loaf baking dish.
  • Bake uncovered for 1 hour.
  • While meatloaf is baking, prepare potatoes: Boil potatoes until tender, drain water.
  • Mash potatoes with fork, stirring in 1/3 cup of half & half.
  • In skillet melt margarine and brown slices of onions.
  • Put on lid and cook, stirring occasionally, making sure all of the onions get brown (usually about 10 minutes).
  • Mix potatoes and onions in a medium-size bowl.
  • Place mixture in 2-qt baking dish and top with cheese.
  • Bake at 350 for 20 minutes.
  • When meatloaf and potatoes are done, remove from oven.
  • Assemble shepherd's pie: Drain the meatloaf of grease and spoon into a 3-qt casserole dish (The meatloaf will break apart as you spoon it out.) Mash the meatloaf down into a flat layer.
  • Mix peas and carrots together and add them on top of the beef.
  • Spoon mashed potato mixture on top of the vegetables. The potatoes should form the top layer, so be careful not to mix the vegetables with the potatoes.
  • Bake at 350 degrees for 20 minutes.

2-1/2 pounds potatoes, peeled and cooked
1 cup sour cream
Salt and pepper to taste
2 pounds ground beef
1/2 cup chopped onion
1 medium sweet red pepper, chopped
1 teaspoon garlic salt
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (16 ounces) whole kernel corn, drained
1/2 cup milk
2 tablespoons butter, melted
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.

2 lb ground beef
1/2 c grated onion
1 c fresh bread crumbs
1/2 c chicken broth
2 eggs, lightly beaten
2 clove garlic, minced
1 Tbsp tomato paste
2 Tbsp worcestershire sauce
2 Tbsp fresh chopped parsley, or 1 tbsp. dried
1/2 tsp salt
1/2 tsp ground black pepper
1 c frozen peas and carrots
TOPPING:
2 c cooked mashed potatoes (i use bob evans prepared)
1/4 c frozen peas and carrots

Steps:

  • 1. In a large bowl, mix together all meatloaf ingredients until well combined. Form into a loaf, about 9x5-inches and transfer to a loaf pan that has been sprayed with cooking spray.
  • 2. Bake in a preheated 350-degree oven for 40 minutes. Then increase oven temperature to 400 degrees.
  • 3. Remove meatloaf from oven and top with mashed potatoes, spreading out with spatula to seal edges. Sprinkle with remaining 1/4 cup peas and carrots. Return to oven and bake an additional 20 minutes.
  • 4. Remove meatloaf from oven to a cooling rack. Transfer meatloaf to a cutting board or platter and rest 10 minutes before serving.

We stuck with tradition and made our shepherd's pie with lamb, but you could easily swap in ground beef. The saucy filling is packed with tender vegetables and the creamy topping is inspired by the Irish potato dish, colcannon, and is filled with cabbage, leeks and cheese.

2 pounds russet potatoes, peeled and quartered (about 4 medium potatoes)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1/4 small head green cabbage, thinly sliced (about 6 ounces or 2 cups)
1 leek, white and light-green parts only, chopped
2 cloves garlic, chopped
3/4 cup heavy cream
1 cup shredded sharp white Cheddar (about 3 ounces)
3 large egg yolks
2 teaspoons extra-virgin olive oil
3 medium carrots, peeled and thinly sliced
1 medium yellow onion, diced
1 stalk celery, sliced
2 cloves garlic, chopped
2 teaspoons fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1/4 cup tomato paste
2 pounds ground lamb
1 cup frozen peas, thawed
1/4 cup all-purpose flour
1 1/2 cups low-sodium chicken broth
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • For the topping: Put the potatoes in a large saucepan and cover with cold water. Season with 2 teaspoons salt. Bring to a boil and cook until tender, about 20 minutes. Drain and reserve the saucepan.
  • Meanwhile, make the filling: Heat the olive oil in a large nonstick skillet over medium heat. Add the carrots, onion, celery, garlic, thyme and 2 teaspoons salt. Cook, stirring occasionally, until the vegetables are soft and tender, about 15 minutes.
  • Stir in the tomato paste and cook until it turns brick red, about 8 minutes. Add the lamb, 1 1/2 teaspoons salt and a few grinds of black pepper. Cook, breaking up with a wooden spoon, until the meat is no longer pink, about 7 minutes.
  • Stir in the peas. Stir in the flour until incorporated, about 1 minute. Add the broth and Worcestershire and cook until thickened, 3 to 5 minutes.
  • To finish the topping, melt the butter in the large saucepan over medium heat. Add the cabbage and leeks and cook until tender, about 10 minutes. Add the garlic and cook until fragrant, 1 minute. Add the heavy cream, 1 tablespoon salt, and a few grinds of black pepper, and cook until warm, about 1 minute. Return the potatoes to the pan with the cabbage and add the cheese. Mash with a potato masher or wooden spoon. Remove from the heat and stir in the egg yolks.
  • Transfer the filling to a 9-by-13-inch baking dish. Add the topping, swirling to create texture. Make sure that the sides are sufficiently covered so the filling doesn't leak through. Bake until the filling is bubbly and the top is lightly golden, about 35 minutes. Let rest 15 minutes before serving.

1 (12 ounce) jar beef gravy
1 (15 1/4 ounce) can whole kernel corn, drained (optional)
4 cups warm mashed potatoes
3/4 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup sliced green onion (optional)

Steps:

  • Place meatloaf slices in a greased 2 1/2 quart baking dish.
  • Cover with gravy; top with corn.
  • Combine potatoes, 1/2 cup cheese, sour cream, and onions.
  • Spread over corn.
  • Bake, uncovered, at 375° for 25 to 30 minutes or until heated through.
  • Sprinkle with remaining cheese.
  • Bake 2 minutes longer or until the cheese is melted.

For the Potatoes:
5 medium Yukon Gold potatoes, peeledand cut into chunks
5 tablespoons unsalted butter, divided
1/3 cup grated Parmesan cheese
1/4 cup milk
Kosher salt and freshly ground black pepper
For the Meatloaf:
1 tablespoon extra-virgin olive oil
1 medium onion, minced (about 1 cup)
1 rib celery, minced (about 1/2 cup)
2 meadium cloves garlic, minced (about 2 teaspoons)
2 large eggs
1/4 cup homemade or store-bought low-sodium chicken stock
1/2 teaspoon unflavored gelatin
1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1 tablespoon Worcestershire sauce
1 tablespoon Dijon or prepared mustard
1 1/2 tablespoons tomato paste
1/2 teaspoon smoked paprika
3/4 teaspoon dried thyme
21 Saltine crackers, finely crushed
1/3 cup finely grated Parmesan cheese
Non-stick cooking spray
3/4 cup frozen pea and carrots mixture, thawed, or the equivalent fresh and blanched
For the Sauce:
4 ounces Stilton cheese
1 cup heavy cream
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Potatoes: Cover potatoes with water in a large saucepan and place over medium-high heat. Bring to a boil and simmer until tender when pierced with a fork, about 20 minutes. Drain and return to pan. Add 3 tablespoons butter, Parmesan, and milk. Season with salt and pepper and whip potatoes using a hand-held mixer until airy, but do not over-mix. For the Meatloaf: Heat olive oil in a medium skillet over medium heat until shimmering. Add onion, celery, and garlic and cook, stirring often, until tender and translucent, about 7 minutes. Transfer to a large bowl and let cool. Adjust oven rack to lower-middle position and preheat oven to 375°F. Whisk eggs and chicken stock in a medium bowl. Sprinkle with gelatin and let stand for 5 minutes. Add the beef, pork, veal, Worcestershire sauce, mustard, tomato paste, paprika, thyme, 3/4 teaspoon salt, 1/2 teaspoon black pepper, saltines, and Parmesan cheese to bowl with cooled onion mixture. Add egg mixture and combine using hands. Do not over-mix. Spray loaf pan with cooking spray. Pack half of the meat lightly and evenly into the loaf pan, creating a well lengthwise down the center and leaving about an inch not indented on either end. Fill well with peas and carrots. Top with remaining meat, pressing gently to fuse top and bottom halves. Evenly spread mashed potatoes on the top and make a crosshatch pattern using the tines of a fork. Cut remaining 2 tablespoons of butter into small pieces and dot them on top of the potatoes. Transfer meatloaf to the oven to cook. For the Cheese Sauce: While meatloaf cooks, combine cheese, cream, and pepper in a small saucepan. Heat over medium-low heat, stirring frequently, until cheese is melted and sauces has thickened, about 10 minutes. Cover and keep warm. The meatloaf is done cooking when the potatoes are browned and an instant-read thermometer inserted into center of loaf reads 135°F to 140°F, 55 to 65 minutes.Remove from oven and let rest for 15 minutes before slicing. Serve immediately, passing Stilton sauce at table.

1 cup chopped onion
2 cups frozen corn, thawed
2 cups frozen peas, thawed
2 tablespoons ketchup
1 tablespoon Worcestershire sauce

1 tablespoon cornstarch
1 teaspoon beef bouillon granules
1/2 cup cold water
1/2 cup sour cream
3-1/2 cups mashed potatoes (prepared with milk and butter)
3/4 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted. Freeze option: Prepare beef mixture as directed but do not add sour cream. Freeze cooled meat mixture in a freezer container. To use, partially thaw in refrigerator overnight. Heat through in a large skillet, stirring occasionally and adding a little water if necessary. Stir in sour cream and proceed as directed.
