1 pound ground beef chuck
1 medium onion, chopped
1 garlic clove, minced
1/4 teaspoon dried thyme
2 tablespoons ketchup
1 tablespoon all-purpose flour
1 box (10 ounces) frozen mixed vegetables (no need to thaw)
Coarse salt and ground pepper
3 cups mashed potatoes

Steps:

  • Preheat oven to 425 degrees. Heat a large (5-quart) heavy pot or Dutch oven over high. Cook beef, breaking up meat with a spoon, until no longer pink, 4 to 5 minutes. Add onion and garlic; cook until softened, about 4 minutes.
  • Add thyme, ketchup, and flour; stir until combined. Add 1/2 cup water and vegetables. Cook until vegetables are warmed through and liquid has thickened, about 3 minutes. Season with salt and pepper.
  • Spoon beef mixture into a 2-quart baking dish. Spread potatoes evenly over beef; using a fork, decorate potatoes with lines and peaks. Place dish on a rimmed baking sheet, and bake until potatoes are lightly browned, 10 to 15 minutes. Serve.

4 large potatoes, peeled and cubed
1 tablespoon butter
1 tablespoon finely chopped onion
¼ cup shredded Cheddar cheese
salt and pepper to taste
5 carrots, chopped
1 tablespoon vegetable oil
1 onion, chopped
1 pound lean ground beef
2 tablespoons all-purpose flour
1 tablespoon ketchup
¾ cup beef broth
¼ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
  • Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)
  • Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until golden brown.

2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Steps:

  • Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
  • While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
  • Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

1 lb. 90% lean ground beef (-or ground lamb)
2 teaspoons dried parsley leaves
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
2 garlic cloves (-minced)
2 tablespoons all purpose flour
2 tablespoons tomato paste
1 cup beef broth
1 cup frozen mixed peas & carrots*
1/2 cup frozen corn kernels
1 1/2 - 2 lb. russet potatoes (-about 2 large potatoes peeled and cut into 1 inch cubes)
8 tablespoons unsalted butter (-1 stick)
1/3 cup half & half
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup parmesan cheese

Steps:

  • Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.
  • Add the ground beef (or ground lamb) to the skillet and break it apart with a wooden spoon. Add the parsley, rosemary, thyme, salt, and and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.
  • Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.
  • Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
  • Add the broth, frozen peas and carrots, and frozen corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
  • Set the meat mixture aside. Preheat oven to 400 degrees F.
  • Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
  • Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
  • Add butter, half & half, garlic powder, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
  • Add the parmesan cheese to the potatoes. Stir until well combined.
  • Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.

1/2 cup onion (chopped)
2 large cloves garlic (pressed or finely minced)

1 tablespoon all-purpose flour
1/2 cup beef broth
1/2 cup heavy cream
1/2 cup peas (frozen)
2 cups hash brown potatoes (frozen or deli-packed, shredded, packed)

Steps:

  • Gather the ingredients. Preheat oven to 375 F.
  • Place ground beef, mushrooms, onion, garlic, 1 teaspoon salt, and pepper in a large heavy skillet.
  • Sauté, breaking up ground beef, until the juices have almost evaporated.
  • Stir in Worcestershire, then flour.
  • Cook 1 minute, stirring often.
  • Add beef broth, stirring to combine, then heavy cream.
  • Simmer until the gravy thickens.
  • Pour into a glass baking dish .

3/4 cup onion

3 tablespoons canola oil, divided

This Shepherd's pie is the ultimate of comfort food! This recipe combines seasoned ground beef and veggies topped with creamy mashed potatoes before being baked.

2 pounds potatoes (peeled and cut into big chunks)
4 tbsp butter (half a stick)
1/4 cup sour cream
¼ to ½ cup milk
Salt and pepper to taste
1 pound ground beef
1 small onion (diced )
2 cloves garlic (minced )
2 cups of frozen peas carrots and corn medley
2 tbsp flour
1/2 cup beef broth
1 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp rosemary
1/2 tsp thyme
1 bay leaf

Steps:

  • Preheat oven to 350 degrees.
  • Boil the potatoes in water to cover until fork tender and then drain the water.
  • Add the butter, sour cream, milk and salt and pepper to taste and mash the potatoes with a hand masher or mixer until you reach your favorite mashed potato consistency. Set aside.
  • In a large skillet brown the ground beef along with the onions and garlic. Drain any excess grease.
  • To the same skillet add 2 cups of the frozen vegetables, cook for about 5-7 minutes, stirring occasionally.
  • Sprinkle the flour over the meat and veggies and stir to mix.
  • Add the tomato paste and stir to mix it in.
  • Then add the beef broth, Worcestershire sauce, rosemary, thyme, and bay leaf. Bring to a simmer and then reduce heat to low. Cook uncovered for 10 minutes, adding additional broth if necessary to prevent the meat from drying out.
  • Remove from heat. Remove Bay Leaf. Spread the meat mixture in an even layer in a 9x13 dish that has been sprayed with nonstick spray.
  • Top the meat with the mashed potatoes making an even layer of potatoes. You can get all fancy and pipe the potatoes onto the meat or you can use a spoon and spread the potatoes evenly and then use a fork to make designs and ridges in the potatoes. These little ridges will brown nicely!
  • Place the dish in the oven and bake for 30 minutes until brown and bubbly. You can place it under the broiler for a few minutes to brown the potatoes more if necessary.

2 tablespoons butter
1/2 - 1 cup milk
1/2 cup Parmesan cheese
1/2 cup shredded sharp cheddar cheese
Salt and pepper
1 teaspoon garlic powder
1 egg yolk
2 - 2 1/2 pounds ground beef (turkey, lamb, or sausage (or a combination of any))
1 cup chopped onion
2 large carrots chopped small (about 1 cup)
2 cloves garlic (finely pressed)
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons flour
1 tablespoon tomato paste
1 1/4 cups low-sodium beef or chicken broth
1 teaspoon worcestershire sauce
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme (or 1 teaspoon fresh)
1/4 teaspoon dried rosemary (or 1 teaspoon fresh)
1/2 cup frozen corn kernels
1/2 cup frozen peas
1 cup shredded sharp cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 9X13-inch pan with cooking spray (I've also used a slightly smaller ceramic casserole dish with good results, too, just makes the layers slightly thicker).
  • Place the potatoes in a medium saucepan and cover with 1-2 inches of water. Add a teaspoon of salt. Bring to a boil and cook for 15 minutes or so (it will depend on how large or small the potatoes are cut) until the potatoes are tender.
  • Drain the potatoes and return to the pot. Mash the potatoes lightly. Add the butter, milk (start with 1/2 cup and add more if needed), Parmesan and cheddar cheeses, salt and pepper to taste, and garlic powder. Mash together until smooth and creamy. Stir in the egg yolk until combined.
  • For the meat and vegetable mixture, in a large 12-inch nonstick skillet over medium heat, add the ground meat, onion, carrots, garlic, salt and pepper. Cook, breaking the meat into small pieces, until the meat is no longer pink and the vegetables are starting to soften, 5-7 minutes or so. Drain any excess grease from the mixture.
  • Sprinkle the flour over the meat and cook over medium to medium-high heat for a minute or so, stirring constantly. Stir in the tomato paste, broth, Worcestershire sauce, oregano, thyme, and rosemary. Bring to a simmer and continue to simmer gently for 10 minutes.
  • Stir in the corn and peas.
  • Pour the meat mixture into the prepared pan. Spread the mashed potatoes over the top all the way to the edges of the pan creating a seal over the meat mixture. Sprinkle the 1 cup cheddar over the top of the potatoes.
  • Bake for 35-40 minutes until the edges are golden and the casserole is bubbling. Let it rest out of the oven for 10 minutes before serving.

6 Servings servings prepared instant mashed potatoes
1 Can can corn kernels (drained)
8 oz. medium cheddar cheese (grated)

Steps:

  • Brown the ground beef. add some spices. I like to use garlic salt and everglades seasoning. While cooking the ground beef cook the instant mashed potatoes following the directions on the box.
  • When the potatoes are done speread them evenly in the bottom of an 8x8 baking dish.
  • Drain the ground beef well.
  • Spread the seasoned ground beef over the mashed potatoes.
  • evenly spread the can of corn over the beef.
  • Sprinkle the shredded cheese over the top of the corn.
  • Bake on 375 until the cheese is melted or in the microwave for 15 minutes until the cheese is melted.
