I found this recipe on The World According To Eggface. I have not tried this recipe, but I'm posting it for safe keeping.

1 egg, beaten
3 tablespoons milk (I used Vanilla Soy)
2 tablespoons sugar free torani syrup (I used Sugar Free Caramel)
2 tablespoons unsweetened applesauce
2 tablespoons canola oil
3 tablespoons multigrain pancake mix (I use this)
1 teaspoon cinnamon
1 tablespoon pecans, chopped
1 tablespoon raisins
1 scoop vanilla protein powder
1 pinch salt

Steps:

  • In a measuring cup or microwave safe mug, mix egg, milk, syrup, applesauce and oil and combine thoroughly.
  • In a separate bowl, mix pancake mix, cinnamon, nuts, raisins, protein powder and salt.
  • Tip dry ingredients into wet ingredients and stir till combined.
  • Microwave for 2 minutes. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.
  • I topped it with Land O Lakes Sugar Free Whipped Cream, a drizzle of Smuckers Sugar Free Caramel Sauce and some chopped nuts.

180 g butter (soft at room temperature)
180 g caster sugar
2 large eggs (at room temperature)
180 g self raising flour, sifted
30 g sultanas
3 large firm apples, eg.granny smiths peeled,decored and sliced
30 g blanched almonds, roughly chopped
2 tablespoons caster sugar
2 teaspoons cinnamon
coffee sugar or coarse brown sugar

Steps:

  • Place the butter in a mixing bowl with the caster sugar.
  • Beat them together until they are light and creamy.
  • While mixing slowly add the eggs one at a time until they are well combined.
  • While mixing slowly add the flour and mix it until the batter is smooth and well combined.
  • Stir in the sultanas until they are well combined.
  • Preheat an oven to 180°C.
  • Grease a loose bottomed 20cm cake tin.
  • Spread half of the batter evenly over the base of the cake tin (the batter may seem quite thick).
  • Place a layer of the apples over the cake mix and scatter over the almonds.
  • Mix the remaining caster sugar and cinnamon together and sprinkle it over the apples and almonds.
  • Spread the remaining batter over the apples evenly.
  • Sprinkle over the coffee sugar or brown sugar over the cake mixture.
  • Place the cake on the centre shelf of the preheated oven and leave it to cook for 45 minutes.
  • The cake should be firm and light golden, a skewer when inserted into the centre of the cake should come out clear.
  • Remove the cake from the oven and leave it to cool slightly then remove it carefully from the tin.

If you haven't made one of these... it's like a weight loss surgery friendly Easy Bake Oven cake. Kids think it's magic. So if you have children or grandchildren making one of these cakes with them is a MUST DO. I found this recipe on The World According To Eggface. 3 tablespoons milk (I used Vanilla Soy)
2 tablespoons sugar free torani syrup (I used Sugar Free Peppermint)
2 tablespoons canola oil
3 tablespoons multigrain pancake mix (I use this)
2 tablespoons cocoa
1 scoop chocolate protein powder
1 pinch salt

Steps:

  • In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil and combine thoroughly. In a separate bowl, mix pancake mix, cocoa, protein powder and salt. Tip dry into wet and stir till combined.
  • Nuke in microwave on full power for 2 minutes* adding 20 seconds if still wet on top. *Microwaves vary and mine is getting old so I just recently upped the time these cook to 2 minutes and 20 seconds on mine. Let the cake sit for three or so minutes (it pulls away from the sides) before tipping it onto a plate. Yields 4-5 slices. You can serve it warm or I love these cakes when they cool I think they taste even more chocolatey.
  • Top with Sugar Free Chocolate Syrup, Sugar Free Whipped Topping and Crushed Sugar Free Candy Canes, Chocolate Mint Candies or grated Sugar Free Andes Mint Chocolate.

200 g sugar
4 eggs
450 g flour
1 (15 g) packet baking powder
2 tablespoons cinnamon
600 g apples

Steps:

  • Mix butter,sugar and eggs together until nice and creamy.
  • Sift in the flour,cinnamon and baking powder.
  • Then add the apples (peeled and cut into preferred size (I usually keep them pretty small).
  • The mixture is probably very thick at the moment, but DON'T be tempted to add milk, the cake will fall apart! Place mixture in a greased tin.
  • Bake for 55-65 minutes until GOLDEN!

1 1/4 cups all-purpose flour
2/3 cup Splenda sugar substitute
1 tablespoon baking powder
1/4 teaspoon salt
1 cup skim milk or 1 cup low-fat soymilk (has a slight taste though)
1/2 teaspoon vanilla
4 cups golden delicious apples or 4 cups gala apples, cored and sliced thinly (or other fave variety)
1/2 tablespoon 40% fat margarine (stick)
cinnamon (about 3/4 TSP)

Steps:

  • Preheat oven to 350*F.
  • Melt the margarine in 9 x 13 inch pan, only enough to cover the bottom, let cool Stir together flour, splenda, baking powder, and salt.
  • Gradually mix in the milk and vanilla (the batter may be thick, don't add more milk or water!) Pour the batter into the pan over the margarine (don't stir).
  • sprinkle with half of the cinnamon.
  • place the apples ontop of the batter.
  • sprinkle with remaining cinnamon.
  • (don't mix) Bake in the oven for 30-50 minutes, or until golden brown and bubbly.
  • Enjoy with some fat free vanilla ice cream!

Steps:

  • Heat oil to 375 degrees f.
  • combine in a bowl the beaten egg, milk, spelenda, nutmug, all spice, cinnamon, and sour cream. mix well and add flour.
  • dip apples in batter and carefully place in oil. cook for 1 to 2 minutes. turn and cook 1 to 2 minutes more. remove fritters and drain. maybe sprinkled with powdered sugar, if desired. serve warm but i prefer cold with sugar free ice cream.
