- Heat taco shells according to package directions. Meanwhile, in a large skillet, combine chicken and 1/2 cup peanut sauce; heat through., In a small bowl, mix cucumber, carrot and cilantro. Serve chicken in taco shells with cucumber mixture and remaining peanut sauce.

- Trim the lemongrass of its outer sheath and its tough ends. Whack the stalk in a few places with the back of a knife to smash it and then cut it into 2 or 3 pieces.
- In a large skillet or medium saucepan, combine the oil, onion, and garlic and turn the heat to medium. Cook, stirring, for 1 minute.
- Then add the lemongrass, curry paste, galangal or ginger, and lime leaves. Cook, stirring, for 3 or 4 minutes, then add the stock. Bring to a boil, then reduce the heat to medium, and cook at a moderate boil for about 15 minutes. (You can cool, cover, and refrigerate the soup base for up to 2 days.)
- While the broth cooks, cut the chicken breast into 1/2- to 3/4-inch chunks. Remove the stems from the shiitakes and discard or reserve for stock. Cut the caps into quarters or eighths.

- In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until no longer pink in center. Stir in coconut milk and taco seasoning mix. Reduce heat to medium; simmer uncovered 2 to 3 minutes, stirring frequently, until thickened.
- Meanwhile, in medium bowl, beat peanut butter, vinegar, soy sauce, chile garlic sauce, brown sugar and gingerroot with whisk. Add spinach, carrots and green onions; toss to coat.
- Heat bowls as directed on package. Divide spinach mixture among bowls. Divide chicken mixture among bowls; top each with peanuts and cilantro.

- If using shell-on shrimp, shell and clean them, then (recommended) roast the shells, and add to the spice bouquet. Wrap the ingredients for the herb bouquet in cheesecloth, and tie closed.
- Sweat the onions and ginger in the oil on medium heat for 5 minutes, stirring occasionally. Add the chicken of the woods mushrooms, stir, and cook for 5 minutes more, or until wilted, and a yellow oil starts to form.
- Put some of the garnishes in each bowl, then ladle the soup on top, or, alternately, pass a soup pot at the table and let guests garnish their bowls individually. Drizzling chili oil over the top gives it a dramatic look.
