2 tablespoons olive oil
1 boneless beef sirloin steak, 3/4-inch-thick (about 1 pound), cut into thin strips
2 medium red peppers, cut into 2-inch-long strips (about 3 cups)
1 medium onion, cut in half and sliced (about 1 cup)
2 cloves garlic, chopped
1 teaspoon dried oregano leaves, crushed
2 packets Swanson® Flavor Boost¿ Concentrated Beef Broth
1/4 cup water

Steps:

  • Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the beef and cook until well browned, stirring often. Remove the beef from the skillet. Pour off any fat. Heat the remaining oil in the skillet over medium heat. Add the peppers and onion and cook until the vegetables are tender, stirring occasionally. Add the garlic and oregano to the skillet and cook and stir for 1 minute. Return the beef to the skillet. Stir in the concentrated broth and water and cook until the beef is cooked through.

2 steaks
1 tbsp olive oil
½ wine glass brandy
½ cup cream ((100 ml))
1 tbsp black peppercorns (lightly crushed)
1 tsp worcester sauce
pepper
salt

Steps:

  • Take the steaks out of the fridge 30 minutes before you intend to cook them. Once the steaks are at room temperature, it will be easier to cook afterwards. Then season both steaks with pepper and salt on both sides. Pour the olive oil in a non-stick pan and place it over medium heat. Once the oil is hot enough, add the steaks.
  • Cook them the way you prefer them.
  • Once the steaks are cooked, remove them from the hot pan and put them on a clean plate. Cover with tinfoil and let them rest at room temperature for now.
  • Get rid of the remaining oil in the hot pan but leave the burnt bits on the bottom. They are packed with flavor and will add to the peppercorn sauce later. Put the hot pan over medium heat and add the brandy and worcester sauce.
  • Let it reduce for a couple of minutes until it is almost syrupy. Then add the lightly crushed peppercorns.
  • Stir a little. Add the heavy cream.
  • Let the cream cook and simmer for another couple of minutes per medium-low heat until it starts to thicken.
  • Stir regularly. Check the seasoning and add a little salt to taste if necessary. Put the cooked steaks onto warm plates and drizzle with the peppercorn sauce. Serve hot.

4 (6 to 8-ounce) strip steaks, 3/4 to 1-inch thick
Kosher salt
2 teaspoons black peppercorns, coarsely crushed
2 tablespoons clarified, unsalted butter
3/4 cup beef stock or broth
3 tablespoons cognac
3/4 cup heavy cream
1 tablespoon green peppercorns in brine, drained and slightly crushed

Steps:

  • Preheat oven to 200 degrees F.
  • Sprinkle steaks with kosher salt and crushed black pepper. Heat butter in a 12-inch, heavy bottomed saute pan over medium heat. Once butter is hot, add steaks and cook until browned on both sides, about 2 minutes per side for medium-rare and 3 minutes per side for medium. Remove steaks from pan and place on a rack set on a sheet pan; place in oven to keep warm.
  • Add the stock to the saute pan and whisk until the crispy bits release from bottom of pan. Allow the liquid to reduce for 3 to 4 minutes over medium-high heat. Add cognac, heavy cream, and green peppercorns to the pan. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will take 5 to 7 minutes.
  • Season the sauce, to taste, with kosher salt. Place steaks on plates, top with sauce, and serve immediately.

  • Place wine and cherries in a large saucepan. Bring to a boil; cook for 5 minutes or until liquid is reduced to 1/4 cup. 2 tablespoons olive oil
1 shell steak, 6 to 8 ounces
Coarse salt and ground pepper
1/2 small onion, thinly sliced
1 yellow bell pepper, quartered lengthwise and thinly sliced crosswise (ribs and seeds removed)
2 garlic cloves, thinly sliced
1/4 teaspoon dried oregano
3 tablespoons red-wine vinegar
2 tablespoons tomato paste
1/3 cup water

Steps:

  • In a small skillet, heat olive oil over medium heat. Trim and season steak with coarse salt and ground pepper; cook until desired doneness, about 2 minutes per side for medium-rare. Transfer steak to a plate; cover with foil to keep warm.
  • Make sauce: Add onion to pan; cook, stirring often, until starting to soften, about 3 minutes.
  • Add bell pepper, garlic, and dried oregano; season with salt and pepper. Cook until bell pepper is crisp-tender, about 5 minutes.
  • Add red-wine vinegar, and bring to a boil; continue boiling until almost evaporated, about 1 minute. Add tomato paste and 1/3 cup water; cook 1 minute more. Spoon pepper sauce over steak.

2 Shell Steaks, bone- in, each 1-inch thick, about 2 pounds.
2 tablespoons olive oil
2 garlic cloves, slightly crushed
salt and pepper to taste
1 cup flour for dredging
1 1/2 tablespoons chopped parsley
1/2 cup chopped re and yellow cherry peppers
1 cup beer
1/2 cup crumbled Gorgonzola
1/3 cup chicken broth
1/4 cup cream

Steps:

  • With a smooth mallet, pound the steak until very thin ( about 1/4 - inch thick ). In a large skillet or saute pan, heat the oil over medium - high heat. Add the garlic cloves and saute for 1 minute, bring careful not to burn them Season the steaks with salt and pepper, then dredge them in flour, and shake off the excess. Add to the saute pans. Saute 4 minutes on each side. Drain off the excess oil. Add the parsley and peppers and stir with a wooden spoon. Add the beer and stir to deg-laze the pan. Add the Gorgonzola and stir into pan juices, slipping the steaks again. Simmer 2 to 3 minutes . Add the broth. Simmer for another minute and stir in the cream. Re-season with salt and pepper. Serve with the pan sauce drizzled over the top.

2 tablespoons Worcestershire sauce
salt and pepper to taste
¾ cup red wine
1 pint fresh cherries, pitted and halved
1 tablespoon white sugar
1 tablespoon vanilla extract
½ teaspoon cornstarch
¼ cup water

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Rub the New York steaks on both sides with the Worcestershire sauce, then season to taste with salt and pepper.
  • Cook the steaks on the preheated grill until they are beginning to firm, and are hot and slightly pink in the center, 6 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Once the steaks are done, cover them with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes.
  • While the steaks are cooking, prepare the cherry sauce by bringing the red wine to a boil in a saucepan over medium-high heat; boil for 5 minutes. Stir in the cherries, sugar, and vanilla extract. Return to a boil, then reduce heat to medium, and simmer until the cherries are tender, 5 to 7 minutes. Dissolve the cornstarch in the water, then stir into the simmering cherry sauce. Cook for a few minutes until the cherry sauce thickens. Pour the sauce over the steaks to serve.
