This delicious, easy goulash recipe is made with hearty beef, tender macaroni pasta, lots of vegetables and a savory tomato based sauce. Makes about 7 cups.

1 Tbsp olive oil
1 medium yellow onion, (chopped (1 1/2 cups))
1 cup chopped red bell pepper
1 medium carrot, (thinly diced (1/2 cup))
1 lb. lean ground beef
3 garlic cloves, (minced (1 Tbsp))
1 1/4 cups low-sodium chicken broth, (plus more as needed)
2 Tbsp tomato paste
1 (15 oz) can tomato sauce
1 (14.5 oz) can petite diced tomatoes
1 Tbsp Worcestershire sauce
1 Tbsp Italian seasoning
1 tsp paprika
Salt and pepper, (to taste)
1 2/3 cups (6.7 oz) macaroni pasta
1/4 cup chopped parsley

Steps:

  • Saute veggies: Heat a large pot over medium-high heat. Add onion, bell pepper and carrot and saute 6 minutes. Scoot to one far side.
  • Brown beef: Add beef in about 5 chunks and let brown on bottom, about 2 - 3 minutes then break up beef and toss with veggies. Cook beef through, tossing occasionally.
  • Drain fat, saute garlic: Drain off excess fat as needed*. Add garlic and saute 1 minute longer.
  • Add canned ingredients and seasonings, simmer: Pour in chicken broth, tomato paste, tomato sauce, diced tomatoes, Worcestershire sauce, Italian seasoning and paprika. Season with salt and pepper to taste. Bring mixture to a simmer.
  • Add pasta and cook to al dente: Add pasta and stir. Reduce to medium-low cover and let simmer, stirring occasionally until pasta is nearly tender, about 10 - 12 minutes. If needed add a little more broth to thin.
  • Let rest: Remove from heat and let rest a few minutes until pasta is tender and sauce has thickened.
  • Garnish: Stir in parsley. Serve warm.

Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
Kosher salt and freshly ground black pepper
1 teaspoon paprika
2 teaspoons Italian seasoning
1 tablespoon tomato paste
One 15-ounce can diced tomatoes
One 15-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 cup low-sodium beef broth
8 ounces cavatappi pasta
4 ounces sharp Cheddar, shredded on the large holes of a box grater (about 1 cup), plus more for serving
2 tablespoons chopped fresh parsley, plus more for serving

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
  • Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
  • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  • Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

This goulash is not only quick and easy to make, but it's also very satisfying. It can be made with any pasta sauce or spaghetti sauce. I make mine with Hunt's Garlic & Herb Spaghetti Sauce. I do add red pepper flakes, which gives this goulash a 'bit of a kick'. It's comfort food at it's best!

1 lb. ground beef
1-1/4 cups elbow macaroni, uncooked
1/2 of one large onion, finely chopped
2-3 cloves garlic, minced (or use 1 tsp garlic powder)
A few dash(es) lawry's seasoning salt
A few dash(es) black pepper
1/4 tsp. red pepper flakes
1/2 tsp. dried italian seasoning
2-1/2 cups hunts spaghetti sauce or pasta sauce
Optional: dried parsley flakes, add according to taste
Optional: kraft grated parmesan cheese, add desired amount

Steps:

  • 1. In a large deep skillet, add the ground beef, onion, and garlic.
  • 2. Season the beef mixture with the seasoned salt & black pepper.
  • 3. (While the beef mixture is browning, start cooking the macaroni according to package directions. I cooked mine for 9 minutes.)
  • 4. Once the beef mixture is done cooking, drain off any excess grease.
  • 5. Place the beef mixture back in the skillet, and then add the red pepper flakes, Italian seasoning, and the pasta sauce. Simmer over low heat while you finish cooking the macaroni; stirring the meat sauce frequently.
  • 6. When the macaroni is done cooking, drain it, then add it to the meat sauce, and finishing heating it through.
  • 7. Once heated through; sprinkle on a bit of dried parsley flakes.
  • 8. Serve immediately, and top with a bit of grated parmesan cheese.

8 ounces medium pasta shells
1 tablespoon olive oil
1 pound ground beef
1/2 medium sweet onion, diced
2 cloves garlic, minced
1 1/2 teaspoons Italian seasoning
2 tablespoons all-purpose flour
2 cups beef stock
1 (15-ounce) can tomato sauce
3/4 cup heavy cream
Kosher salt and freshly ground black pepper, to taste
6 ounces shredded extra-sharp cheddar cheese, about 1 1/2 cups

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 6-8 minutes. This is a hearty tomato and pasta dish. It is one of those recipes that is hard to mess up. You can basically add anything to it you like and it's still good. If it is too dry add more tomatoes or sauce. You can use any type of pasta you like, we like shells. Most people use elbow macaroni. You could even cook the macaroni from a box of mac and cheese and then stir the dry cheese into the final dish. This is a 'NO FAIL' recipe.

Steps:

  • Gather the ingredients.
  • Add the olive oil to a large Dutch oven or sauté pan and place the pan over medium-high heat. When the olive oil is hot and shimmering, add the ground beef and onion. Sauté, occasionally stirring with a spatula to break up the beef, until the meat is no longer pink, about 5 to 7 minutes.

2 c. water
1 c. mozzarella cheese, shredded
1/2 c. Parmesan cheese, shredded
Italian parsley, for garnish (if desired)

Steps:

  • Heat a large skillet over medium-high heat. Brown the ground beef. While it is cooking add in the minced onion and garlic. Brown completely and drain off any excess fat.
  • Continue to heat the skillet over medium-high heat and add in the diced tomatoes, tomato sauce, pasta, Italian herbs, garlic salt and onion powder. Stir well to combine and add in the water. Bring the ingredients to a simmer, and then reduce the heat to medium low. Cover skillet, and cook on medium low heat for 12-15 minutes or until pasta is cooked to al dente.
  • Once pasta is cooked, add in the shredded cheeses and stir so that the cheese melt into the goulash. Let cool for 5 minutes.
  • Serve with additional shredded Parmesan cheese and a sprinkling of Italian parsley, if desired.

I never got the recipe from her, but I remembered that the recipe was popular with everyone, contained shell pasta and was spicier than most goulash...

1 lb lean ground beef
1 can(s) 10.5 oz. tomato soup
1 can(s) 10 oz. diced tomatoes with green chilies
3 c small shell pasta, dry (or substitute elbow macaroni)
1 stick low-fat mozarella string cheese
1/2 c finely shredded cheddar cheese

Steps:

  • 1. Crumble ground beef in medium skillet and cook thoroughly, stirring occasionally. Drain juices from meat.
  • 2. While meat cooks, boil pasta until tender in medium-sized saucepan on stove top or in a large glass microwave-safe bowl in the microwave. Drain and rinse in colander.
  • 3. Prepare a 8 X 11 inch dish with vegetable spray. Mix meat and pasta well in dish. Dish will nearly be filled. Add in cans of tomato soup and tomatoes with chilies. Mix in, making sure to coat meat/pasta lightly with soup by stirring gently, but well. Shred the stick of mozarella string cheese and tear in to small bits, scattering over top of mixture. (This cheese will melt down through the mixture.) Sprinkle cheddar cheese over top of string cheese bits.
  • 4. Cover dish with paper towel and cook in microwave on high for 8 minutes, turning dish once or twice if not a carousel microwave. Let stand about 2-3 minutes before serving to allow cheeses to thicken.
