SHEILA'S SWEDISH CREME

Sheila's Swedish Creme image

This is a "must have" on our Christmas dessert table, but it is equally as good any time of year, or for any occasion. Although I use berries, it is wonderful with all different fresh fruits, such as kiwi or peaches. It is also very versatile and can be layered with fruit in a parfait dish if you prefer, nestled in a puff pastry or dessert shell, or set in a mold. We always serve it in one large stemmed glass bowl. Preparation time does not include chilling time.

SWEDISH CREAM CHEESE CREPES

Swedish Cream Cheese Crepes image

I call these Swedish crepes because I use a Swedish pancake instead of a regular crepe. My entire family loves these. I have to make a huge batch every time I make these. These also refrigerate very well for 2 to 3 days. Sprinkle crepes with powdered sugar before topping with berries, if you wish.

Categories     100+ Breakfast and Brunch Recipes     Crepes

Time 8h44m

Yield 15

Number Of Ingredients 16

3 cups milk
1 cup all-purpose flour
2 eggs
2 tablespoons melted butter
2 tablespoons white sugar
½ teaspoon salt
1 (16 ounce) package cottage cheese
1 (8 ounce) package cream cheese
1 cup confectioners sugar, or more to taste
2 teaspoons vanilla extract
1 ½ cups blueberries
2 cups water, or as needed
½ cup white sugar, or more to taste
3 tablespoons cornstarch, or as needed
1 ½ tablespoons cold water, or as needed
¼ teaspoon butter, or more as needed

Steps:

  • Mix milk, flour, eggs, melted butter, 2 tablespoons white sugar, and salt together in a bowl. Cover batter with plastic wrap and refrigerate 8 hours to overnight. Thin batter with water, mixing well, if it becomes too thick.
  • Mix cottage cheese, cream cheese, confectioner's sugar, and vanilla extract together until well blended; the filling will not be smooth.
  • Place blueberries in a saucepan and cover with water. Add 1/2 cup sugar and cook over medium-high heat until mixture starts to boil. Reduce heat a bit; simmer for 3 to 5 minutes to allow berries to release juice. Add more sugar if desired; simmer for 3 to 5 minutes more.
  • Mix cornstarch with cold water in a bowl until dissolved. Remove berry mixture from heat and slowly pour in cornstarch mixture. Stir constantly until thickened.
  • Melt 1/4 teaspoon butter in a skillet over medium heat. Pour batter into the skillet to make an 8-inch pancake. Cook until lightly browned, 2 to 3 minutes. Flip and brown the other side, about 1 minute more. Transfer to a plate to cool slightly. Add filling to the center of the pancake, roll up, and transfer to another plate. Top with berries. Repeat cooking, filling, and topping with the remaining batter.

  • Pour the heavy cream and sugar into a sauce pot over medium heat. Stir and watch. Once the cream is almost to a boil, remove from heat and quickly whisk in the gelatin. Then stir in the extracts and salt.
  • Allow the mixture to cool for 5-10 minutes. Then whisk in the sour cream, one cup at a time. Once smooth, pour the mixture into 4-ounce ramekins or plastic cups. (These plastic cups are great for taking to a parties.) Place the cups on a large rimmed baking sheet and refrigerate.
  • Remove the stems from the strawberries. Place all the berries, gelatins, sugar and salt in a large sauce pot over medium heat. Bring to a boil and allow the mixture to simmer and cook down for 5-10 minutes. Use a wooden spoon to crush the berries, for a smoother consistency. Allow the berry compote to cool for 10 minutes. Then spoon a layer of berry compote over each Swedish Cream cup and place back in the refrigerator. Chill for at least 2 hours. Then cover until ready to serve. Garnish each cup with a strawberry rose if desired. (Video tutorial above.)

  • Swedish Cinnamon Rolls “Kanelbullar” Among all Swedish recipes, the Cinnamon rolls “kanelbullar” are by far the most popular ones. Swedes eat enormous quantities of them throughout the year and there is even a national day for cinnamon rolls every year on October 4th.
  • Swedish Multi-Seed Crispbread “Knäckebröd” Crispbreads are the new bread… at least in Sweden! Swedes love crispbreads and you can find countless of recipes, all different, from the classic plain one made with rye flour to the more advanced options with seeds and sometimes gluten-free.
  • Beet and Horseradish-Cured Salmon Gravalax. Cured salmon is definitely part of the Swedish culture, and something we prepare days in advance of any occasion, like Midsummer for instance.
  • Swedish Blueberry Vanilla Buns “Blåbärsbullar” Cinnamon rolls and all kind of buns are king in Sweden. Swedes have countless of variations adapted to each season.
  • Swedish Gooey Chocolate Cake “Kladdkaka” Swedes make an awesome Swedish Gooey Chocolate Cake “Kladdkakaka”, which literally means gooey (kladdig) cake (kaka).
  • Swedish Toast Skagen (Prawn Toasts): 2 Ways! You will find it absolutely everywhere in Sweden, whether you go in a regular restaurant or a café place for lunch.
  • Swedish Cardamom Buns “Kardemummabullar” These are my all time favorite Swedish treats – I like them even better than the classic cinnamon rolls “kanelbullar”.
  • Swedish Semlor. Usually eaten for Fat Tuesday in Sweden, the Swedish Semlor are a classic I could eat all year round. They are made out of a lovely sweet bun spiced with cardamom, almond paste, and generously filled with chantilly.
  • Swedish Vanilla Hearts “Vaniljhärtan” Swedish Vanilla Hearts “Vaniljärtan” are nothing but adorable heart-shaped cookies made with a shortbread crust and filled with a generous vanilla cream in the inside.
  • Triple Berry Crisp with White Chocolate Sauce. It’s not a secret, Swedes love berries. In Summer, they pick some fresh ones in the woods or anywhere in the nature, and in winter they eat some frozen ones.

2017-02-13 What I really liked about the recipe is how little flour and sugar it had in it. For 8 crepes you only use 1/2 a cup of flour and 1 tablespoon of sugar.
