SHEILA'S SPLIT PEA SOUP

Sheila's Split Pea Soup image

After a holiday dinner, when I have served a ham, I retain the ham bone to make this soup. It has become part of the whole holiday tradition, and is true comfort food.

Provided by JackieOhNo

Categories     Ham

Time 2h

Yield 4 serving(s)

Number Of Ingredients 10

2 3/4 cups water
1 1/2 cups dried split peas, rinsed and drained
1 (14 ounce) can chicken broth
1 meaty ham bone (about 1- to 1-1/2 lb.)
1/4 teaspoon dried marjoram, crushed
1/8 teaspoon black pepper
1 bay leaf
2 medium carrots, pared and sliced thin
2 celery ribs, sliced thin
1 medium onion, chopped

Steps:

  • In a large soup pot, combine water, peas, broth, ham bone, marjoram, pepper, and bay leaf. Bring to a boil, then reduce heat. Cover and simmer for 1 hour, stirring occasionally.
  • Remove ham bone and let cool. When you are able to handle it, cut meat off the bone and dice. Discard bone (or donate to the family dog). Add diced ham to soup pot.
  • Stir in carrots, celery, and onion. Return to a boil; reduce heat, cover, and simmer for 30 minutes more, until vegetables are tender. Discard bay leaf.

SPLIT PEA SOUP A LA JULIA CHILD

Split Pea Soup a La Julia Child image

This is the only split pea soup I've ever made more than once. The basic recipe comes from Julia's "The Way to Cook", and has a very clean, fresh flavor. It requires some work, but I like that I can freeze the ham stock and then make the soup at a later date without the murky taste of a lot of one pot pea soups.

Provided by TCookie

Time 5h40m

Yield 6 serving(s)

Number Of Ingredients 15

2 well-washed and scrubbed split ham hocks
3 quarts water
1 cup chopped carrot (coarse is fine)
1 cup chopped onion
1 stalk celery, chopped
3 bay leaves
1 teaspoon thyme
5 whole cloves or 5 allspice berries
3 tablespoons butter
2/3 cup diced celery
2/3 cup diced onion
1/2 cup diced carrot
3 tablespoons flour
2 quarts ham stock, heated
1 1/2 cups split peas or 1 1/2 cups yellow split peas

Steps:

  • For the stock, put the ham hocks in a kettle with water to cover by 2 inches.
  • Make an herb bouquet with washed cheesecloth, using the bay leaves, thyme and cloves or allspice.
  • Put this in the pot, along with the carrots, onions and celery.
  • Simmer 3 to 4 hours with the kettle cover slightly open.
  • Or, simmer in crockpot for 8 hours on low.
  • Skim occasionally.
  • Strain and degrease.
  • Easiest way to degrease is to make ahead and chill, remove fat when cold.
  • Freeze if you want.
  • To make the soup, set a saucepan over medium heat and melt the butter.
  • Saute the vegetables, stirring, for 5 minutes.
  • Blend in the flour and cook, stirring for 3 minutes.
  • Remove from the heat and cool briefly, blend in the hot ham stock and the split peas.
  • Bring to a simmer, stirring.
  • Cover and cook about 45 minutes until peas are tender.
  • Salt and pepper to taste after 1/2 hour of simmering.
  • When cooked, mash or puree the soup depending on the consistency you want.
  • Garnish with homemade croutons or sauteed ham bits if desired.

VEGAN SPLIT PEA SOUP I

Vegan Split Pea Soup I image

This makes a very thick vegetarian split pea soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally, and add water if it gets too dry. Seasonings can be altered to taste. Tastes even better reheated.

SPLIT PEA SOUP

Grandma Joy's recipe for Goodness! Absolutely delicious!

Provided by Sheila Devor

Categories     Other Soups

Time 1h35m

Number Of Ingredients 9

1 - 16oz pkg dried green or yellow split peas
4 oz smoked sausage links, sliced and quartered
5 c water
1 - 14oz can(s) chicken broth
1 medium onion, chopped
2 medium carrots, chopped
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp black pepper

Steps:

  • 1. Rinse peas thoroughly in colander under cold water, discarding any debris or blemished peas.
  • 2. Combine peas, sausage, water, broth, onion, carrots, basil, oregano and pepper in Dutch oven. Bring to a boil over high heat. Reduce heat to medium-low and simmer, uncovered, 1 hour 15 minutes or until peas are tender, stirring occasionally. Stir frequently near end of cooking to keep soup from scorching. Cool slightly.
  • 3. Transfer sausage to plate. Place 3 cups soup into food processor or blender and process until smooth.
  • 4. Return pureed soup and sausage to Dutch oven. If soup is to thick add water until desired consistency is reached and heat through.
  • 5. TIP: Split peas are very economical and easy to prepare because they do not require soaking. Salt the peas if desired, AFTER they are cooked. Salt in the cooking liquid slows down the cooking and toughens the peas.
