EASY TUNA CASSEROLE RECIPE
Food doesn't get much more comforting than this tuna noodle casserole! Easy to make, this baked casserole is wonderfully creamy and is a great family meal that you can make ahead of time.

Steps:
- Adjust oven rack to middle position and heat oven to 375°F.
- Spray a 9x13-inch casserole dish with nonstick cooking spray.
- Cook the noodles, to al dente, according to package directions. Drain and set aside.
- While the noodles cook, combine the cheeses in a medium bowl and mix to combine. Scoop out ¼ cup of cheese and set the remainder aside.
- In the bowl of a food processor, fitted with the metal blade, add the ¼ cup shredded cheese, potato chips, bread, 2 tablespoons butter, ¼ teaspoon salt, ¼ teaspoon black pepper, and ¼ teaspoon dried herbs.
- Process the mixture about 10 pulses or until the mixture becomes medium-coarse crumbs; set aside.
- Drain the tuna in a fine-mesh strainer and press with a rubber spatula to extract as much water as possible. Place the tuna in a large bowl and use a fork to separate the chunks into smaller pieces.
- Add water chestnuts, 1-tablespoon oil, lemon juice, and the remaining ¼ teaspoon kosher salt, ¼ teaspoon black pepper and ½ teaspoons herbs. Mix lightly; set aside.
- In a large skillet set over medium-low heat, add 1-tablespoon oil, 1-tablespoon butter and chopped onion. Cook and stir occasionally until onion is translucent and soft, about 6-8 minutes. Add the onions to the tuna mixture.
- Melt 2 tablespoons butter in the same skillet set over medium heat. Add flour and cook, whisking constantly, until flour is golden, 1-2 minutes. Slowly, while whisking constantly, add the Half 'n Half, chicken broth and wine.
- Bring to a boil and reduce the heat to medium-low; simmer 5-7 minutes or until slightly thickened.
- Remove from the heat and add the remaining cheese and the mushroom soup; stir until cheese is melted and mixture is smooth.
- Add the milk/cheese mixture to the tuna mixture and mix well.
- Add the drained pasta and toss until noodles are coated with the creamed mixture.
- Taste and season with salt & black pepper, if needed.
- Add frozen peas and stir to incorporate.
- Pour the mixture into the prepared casserole dish and top with the bread-crumb mixture.
- Bake at 375°F for 35-45 minutes or until golden and bubbly. Allow casserole to cool 5-10 minutes before serving.
- Garnish with chopped fresh parsley, if desired, and serve with toasty bread and simple salad.

- Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook according to the package directions. Reserve 1/2 cup of the cooking water, then drain the noodles and return to the pot.
- Meanwhile, melt 1 tablespoon of the butter in a large skillet over medium-high heat. Add the scallion whites and sliced celery. Cook, stirring occasionally, until softened, about 2 minutes. Add the evaporated milk, 1/2 teaspoon salt and a few grinds of pepper. Stir in the peas and carrots and the mustard. Bring to a boil, then reduce the heat to medium low. Cook, stirring occasionally, until slightly thickened, 2 to 3 minutes.
- Pour the sauce over the noodles; stir in the sour cream, 1/2 cup of the cheese, the tuna and reserved cooking water. Transfer to a 1 1/2-quart baking dish.
- Melt the remaining 1 tablespoon butter. Toss with the panko, scallion greens, celery leaves and remaining 1/4 cup cheese; season with salt and pepper. Sprinkle over the casserole. Bake until golden, 15 to 20 minutes.

- NOODLES: Cook the egg noodles in salted water until barely al dente, about 2 minutes less than packaging instructions. Reserve 1 cup pasta water, drain, rinse until cold and set aside.
- PANKO: Meanwhile, melt 1 tablespoon butter in 1 tablespoon olive oil over medium heat in a nonstick skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Transfer to a plate; set aside.
- CASSEROLE: Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
- SAUCE: Melt butter with olive oil in a very large skillet or Dutch over medium heat (something that can fit all ingredients). Whisk in flour then cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in milk and 1 ½ cups chicken broth. Whisk cornstarch with remaining chicken broth and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings.
- Bring sauce to a boil, whisking constantly then reduce heat to a simmer, whisking often until thickened. Remove from heat and whisk in 1 cup cheddar until melted followed by Gruyere cheese until melted. Whisk in sour cream until blended.
- COMBINE: Add the tuna and peas and stir to combine. Stir in the noodles until evenly combined. Stir in some of the reserved pasta water IF the sauce has become too thick. Transfer to prepared baking dish and top with remaining 1 cup cheddar cheese followed by panko.
- BAKE: Cover with foil and bake at 350 degrees for 30 minutes, uncover and bake an addition 10-15 minutes or until hot and bubbly and cheese is melted; serve piping hot. Season with freshly cracked salt and pepper to taste (I like more salt).

- Preheat oven to 350°F / 177°C. Spray a 9x13 baking dish (or any casserole dish of similar size) with nonstick cooking spray or brush with some oil.
- Boil noodles according to package directions.
- While pasta boils, heat a saucepan over medium heat. Add butter and cook until butter is melted. To melted butter, add flour and celery seeds and stir until no dry spots remain. Continue cooking until butter-flour mixture starts turns golden brown, 2 to 3 minutes.
- Slowly pour in milk while whisking. Bring the mixture to a simmer (adjust heat as needed), whisking constantly. Simmer until mixture thickens slightly, about 3 minutes more. Remove from heat and whisk in cheese.
- Gently fold cooked pasta, peas, tuna, and lemon zest into sauce. Taste and season with some salt and black pepper (don't skip this step - the dish will be slightly salty from the cheese, but will likely need more salt).
- Spread mixture out in prepared baking dish.
- Gently stir together melted butter and cornflakes. Spread cornflakes over top of the casserole.
- Bake until the topping is golden brown and the filling is heated all the way through, 20 to 25 minutes.
- Serve immediately.

- Preheat oven to 375˚F.
- Grease a 9x13 baking dish with cooking spray and set aside.
- Cook the noodles according to the directions on the package.
- Drain noodles and return drained noodles back to the pot; set aside.
- Melt the butter in a large saucepan or large deep skillet set over medium heat.

ONE-PAN TUNA-WHITE BEAN CASSEROLE
This is not the classic, cream-of-something soup tuna casserole you may be familiar with. It's based on a recipe for a Breton tuna and white bean gratin from the food writer Diana Henry's cookbook, "Simple" (Mitchell Beazley, 2016). Several steps were eliminated, and an essential potato chip topping was added, which may put it squarely into tuna casserole territory. But you can call it whatever you like. - Heat oven to 350 degrees. In an ovenproof skillet, sauté a chopped onion (or shallots, scallions or leeks) in olive oil over medium-high heat until soft, about 5 minutes.
- Add red-pepper flakes, salt and garlic cloves. Throw in the rosemary sprig, if using. Add anchovy fillets, if using. Cook for another 2 minutes, until the garlic is slightly golden and very fragrant.
- Add the white beans and the wine. Let it simmer until the liquid evaporates and the beans are soft, about 5 minutes, then mash the beans with a potato masher or a fork. Make them as smooth or lumpy as you like. You just want to release some of their starch. Turn off the heat.
- Now, add the milk and the tuna. If you have the oil-packed kind, add the oil. If you have the water-packed kind, drain them, and drizzle in more olive oil.
- Mash the tuna into the beans, leaving it a little chunky. Mix in the herbs, lemon zest and add lots of black pepper. Finally, mix in 2 to 4 tablespoons of any kind of grated cheese. Taste and add more salt and pepper if needed.
- Spread the mixture evenly in the skillet, and top it with potato chips. Scatter on more grated cheese, about another 2 tablespoons, and dot the top with little nuggets of butter.
- Bake until the tuna mixture bubbles around the edges, 20 to 25 minutes. If you want the potato chips to get more brown, you could run the whole pan under the broiler. Finish with lemon juice.

- Preheat the oven to 450 degrees F and lightly spray a rimmed baking sheet with nonstick spray.
- Bring a large pot of water to a boil over high heat and season generously with salt.
