This recipe is all about the perfectly cooked hash browns-crispy on the outside (but not overdone) and creamy on the inside (but not underdone)-which form the base of this all-in-one meal. 1/4 cup vegetable oil
4 cloves garlic, finely chopped

2 cups diced ham steak (about 10 oz)
2 cups shredded cheddar cheese (8 oz)

Steps:

  • Heat oven to 450°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix potatoes, green onion whites, oil, garlic, thyme, salt and pepper. Spread evenly in pan.
  • Bake 30 minutes; stir, and top with ham. Bake 20 to 25 minutes longer or until potatoes are beginning to brown.
  • Remove pan from oven; sprinkle with cheese. Create 6 wells in potato mixture. Gently crack an egg into each well. Bake 7 to 9 minutes longer or until egg yolks are set and whites are firm. Sprinkle with green onion greens and parsley.

1kg/2.25lb of russet potatoes, or similar floury potato
1/2 tsp of sea salt
black pepper
cooking oil spray
Optional (add some sliced onion in with the grated potato)

Steps:

  • Preheat oven to 200c/400f (gas mark 6)
  • Peel potatoes, then grate using a grater or grating blade of a food processor blade
  • Add to a colander or sieve and rinse well with cold water. Shake to remove excess water.
  • Spread out thinly on kitchen paper and blot completely dry.
  • Add to a bowl along with the salt. Spray with cooking oil spray, toss to coat, then spray again, tossing one more time.
  • Line a large baking tray with parchment paper (you may need two trays if you tray is not big enough).
  • Spread the potato out in a thin even layer (don't pile too much on top of each other or it won't crisp).
  • Bake for 20 mins, then use a spatula and carefully flip in areas, making sure you spread back out on the tray.
  • Continue to bake for another 20 mins approx until the hash brown is golden and crispy on the edges.
  • Season to desired taste with a little more sea salt and some black pepper
  • Serve with your choice of breakfast sides.

Steps:

  • Preheat the oven to 450˚ F. Line a baking sheet with foil. Toss the potatoes, bell pepper, onion, vegetable oil, 2 teaspoons salt, a few grinds of pepper, the paprika, garlic powder and thyme on the baking sheet and spread out. Bake, stirring once, until the vegetables are browned around the edges and tender, 40 to 50 minutes. Push the potatoes to one side of the baking sheet so that they cover about half the pan.
  • Make a 6-by-9-inch tray out of a double layer of foil; the sides should be about 1 1/2 inches high. Place the foil tray in a corner of the baking sheet and coat with cooking spray. Whisk the eggs, cheese, milk, 2 scallions, 1 teaspoon salt and a few grinds of pepper in a large bowl. Pour the egg mixture into the foil tray. Arrange the sausage patties, overlapping if necessary, in the remaining space on the pan.
  • Return the pan to the oven and bake until the omelet is puffed and set and the sausages are heated through, 20 to 25 minutes. Let sit a few minutes before serving. Top the omelet with the tomatoes and herbs; sprinkle the sausage with the remaining sliced scallion.

4 cups peeled and grated potatoes
2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 cup grated Parmesan

Steps:

  • 1) Line a sheet pan with parchment paper and preheat oven to 400 degrees F.
  • 2) Peel and grate potatoes until you have 4 cups (about 2 potatoes). Add the grated potatoes to a large bowl and rinse the potatoes well with cold water. Drain and rinse a second time. Drain off as much water as you can.
  • 3) Use a few paper towels to dry off the potatoes as much as possible by rubbing the potatoes in the bowl.
  • 4) In a microwave safe bowl, combine butter, oil, and spices. Microwave on high for 30 seconds to melt butter. Stir spice mixture into potatoes along with grated parmesan cheese. Stir well.

  • A standard home cook sheet pan is roughly 11×17 inches, and will accommodate 4 cups of grated potatoes. If you crowd it too much, the potatoes will not crisp up but rather turn into rösti or latkes, and that's a different recipe! If you want more potatoes, use a second parchment lined sheet.
