Vegetable Turkey Hoagies image

Flavored cram cheese dresses up these tasty turkey and sweet pepper sandwiches from Lauren Larson, Orrville, Ohio. "A friend makes them for picnic lunches," she says. "You can substitute deli chicken for the turkey."

1 medium sweet yellow pepper, julienned
1 medium sweet red pepper, julienned
1 medium red onion, halved and thinly sliced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 loaves (8 ounces each) French bread, halved lengthwise
1/2 cup spreadable garden vegetable cream cheese
3/4 pound thinly sliced deli smoked turkey

Steps:

  • In a large skillet, saute peppers and onion in oil until tender. Stir in salt and pepper. Hollow out the top and bottom of loaves, leaving a 1/4-in. shell (discard removed bread or save for another use); spread cream cheese over cut sides. Top with turkey and sauteed vegetables. Cut in half.

1/2 cup fat-free mayonnaise or salad dressing
1 teaspoon Italian seasoning
1/2 lb smoked turkey breast slices, cut into strips
2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
4 hoagie buns (6 inch), split

Steps:

  • In small bowl, mix mayonnaise and Italian seasoning; set aside.
  • Heat 10-inch nonstick skillet over medium-high heat. Add turkey and bell pepper and onion stir-fry; cook and stir 1 minute. Cover; cook 2 minutes.
  • Meanwhile, spread about 1 tablespoon mayonnaise mixture on cut sides of buns.
  • Uncover skillet; cook and stir 1 to 3 minutes longer or until liquid evaporates and bell pepper is tender.
  • Spoon turkey mixture evenly onto bottom halves of buns. Cover with top halves of buns. Wrap each sandwich securely with foil; take with you for an on-the-go dinner.

1/2 small onion, sliced into rings
1 garlic clove, chopped
1 tablespoon olive oil
4 slices turkey breast
blue cheese, a smear
hot pepper relish, Chopped
1/4 teaspoon dried thyme or 1/4 teaspoon summer savory
salt and pepper
1 hoagie roll

Steps:

  • In hot skillet (I use wok), add oil and then onion and garlic. Add pinch of salt and fresh ground pepper.
  • Add thyme or summer savory.
  • Saute until onions are brown.
  • Cut open hoagie roll and smear bleu cheese on one side. Add onion/garlic mixture on top of cheese. In the same wok (still hot), lay turkey slices around the sides long enough to heat. Turn and heat the other side. Pile turkey slices over onion/garlic mixture and top with pepper relish.
  • More ground black pepper if you like. Top with hoagie top and enjoy! Tip: This is a fairly pungent sandwich packed full of flavor.
  • A sprig of fresh parsley should take care of things afterwards.

Deli-Style Roast Turkey for Sandwiches image

I'm excited to be sharing just how simple and easy it is to roast and slice your own turkey breast for sandwiches, which might not seem like something worth doing-until you actually do it. And no, enjoying fresh turkey sandwiches once a year after Thanksgiving is not enough.

1 (2 1/2 to 3 pound) skin-on, bone-in split turkey breast
1 tablespoon olive oil
2 ½ teaspoons kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
½ teaspoon dried oregano
1 teaspoon smoked paprika

Steps:

  • Preheat the oven to 450 degrees (230 degrees C).
  • Pat turkey breast with a paper towel to remove any excess liquid and place into a baking dish just big enough to fit it. Use the tip of a sharp small knife to poke the skin of the turkey breast all over. Drizzle over olive oil and use tongs to rub; flip turkey breast over a few times, or until all surfaces are coated with the oil. You can also use a brush. Set aside for 15 to 20 minutes.
  • While turkey rests, mix salt, pepper, thyme, rosemary, oregano, and paprika together in a small bowl until thoroughly combined.
  • Use tongs to grab the turkey breast with one hand while using your other hand to sprinkle the spice rub evenly over the entire surface, including the sides. Finish with the skin side facing up.
  • Add about 1/2 inch of water to the bottom of the baking dish.
  • Place prepared turkey breast into the center of the oven. Immediately lower the heat to 300 degrees F (150 degrees C). Roast until a probe thermometer stuck into center of the thickest part of the breast reads 150 degrees F (65 degrees C), about 1 hour and 15 minutes.
  • Let cool before wrapping. Chill thoroughly in the refrigerator, about 8 hours, or overnight. Once meat is cold, slice thinly and serve.
