JIM GOODE'S BBQ BEEF RUB
This beef rub is great for beef, pork and lamb. Once you mix the spices they'll keep about 4 months in an airtight jar. When ready to use, just rub into the meat, wrap in plastic, and refrigerate the night before grilling.

- In a small bowl, mix together the brown sugar, paprika, mustard powder, onion powder, garlic powder, basil, bay leaves, coriander, savory, thyme, black pepper, white pepper, cumin, and salt. Store in an airtight jar at room temperature until ready to use.

SHARON'S ONO BARBECUE BEEF
Ono is Hawaiian for tasty. My friend, Sharon, always takes this to potlucks at work. She also brings copies of the recipe because people always ask for it. I'm generally not a barbecue fan, but I really enjoy this recipe. It is great on buns or over rice.

Steps:
- Place chuck roast into a crock pot.
- Combine remaining ingredients in a mixing bowl.
- Pour barbecue sauce over meat.
- Cover& cook on low for 8 to 10 hours or high for 4 to 5 hours.
- Remove roast from crock pot& shred meat with two forks.
- Place shredded meat back into crock pot& stir to coat meat with sauce.
- Cook for 15 or 20 minutes with lid off on high to reduce sauce. (Lately, I have been transferring the sauce to a pot on the stove top & reducing it while I shred the meat. The other way will work, but the stove top is more efficient.).
- Note: Sharon recommends cutting back just a bit on the vinegar.
SHARON'S TASTY SCALLOPED POTATOES
I took the old Betty Crocker recipe and made some major ingredient changes. My husband said they had great taste and I think this recipe is both tastier and healthier.

Steps:
- Preheat oven to 350°F.
- Peel potatoes and slice. Layer in lightly greased glass baking dish.
- Heat 3 Tbsp butter or margarine in saucepan over low heat until melted. Blend in flour and seasoning. Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat. Stir in yogurt and whipping cream. Heat to boiling for one minute, stirring constantly. Stir in onions.
- Pour mixture over potatoes. Lightly stir the mixture and potatoes together, making sure the potato mixture is spread out evenly in baking dish.
- Cover and cook in 350°F oven for 30 minutes. Uncover and cook until potatoes are tender, about 60-70 minutes longer. Let stand 5-10 minutes before serving.

- Cook macaroni according to package directions; drain and rinse with cold water.
