2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon olive oil
1/2 cup reduced-sodium chicken broth
1/2 cup white wine or additional reduced-sodium chicken broth
4 teaspoons grated Parmesan cheese

Steps:

  • In a large resealable plastic bag, combine the flour, salt, paprika and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large ovenproof skillet coated with cooking spray, brown chicken in oil for 1-2 minutes on each side. Add broth and wine; bring to a boil. Remove from the heat., Cover and bake at 350° for 20-25 minutes or until a thermometer reads 170°. Sprinkle with cheese.

1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon ground black pepper
4 (4 ounce) boneless skinless chicken breasts

1/2 cup chicken broth

4 teaspoons grated parmesan cheese

Steps:

  • Preheat oven to 350.
  • Combine first 4 ingredients in a shallow dish.
  • Dredge chicken in flour mixture.
  • Heat oil in an ovenproof skillet over medium heat.
  • Add chicken; cook 2 minutes on each side or until browned.
  • Add broth and wine.
  • Bring to a boil; remove from heat.
  • Cover and bake at 350 for 30 minutes or until chicken is done.
  • Sprinkle with cheese.

6 skinless boneless chicken breasts, cut into 2-inch cubes
2 tablespoons butter
2 cups sliced fresh mushrooms
1 (10.75 ounce) can condensed cream of mushroom soup
1 (5 ounce) can evaporated milk
1 ½ cups shredded Cheddar cheese
½ teaspoon garlic powder
½ cup white wine
½ cup mayonnaise
½ cup slivered almonds for topping
¼ cup grated Parmesan cheese for topping

Steps:

  • Place the chicken in a saucepan and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Melt the butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until the mushrooms are lightly browned and have released their liquid, about 5 minutes.
  • Place the chicken pieces in the prepared baking dish and add the sauteed mushrooms.
  • In a small saucepan over medium heat, combine and heat the soup, milk, Cheddar cheese and garlic powder. Remove from heat and add the white wine and mayonnaise. Pour mixture over the chicken and mushrooms. Top with slivered almonds and grated Parmesan cheese and bake in the preheated oven for 1 hour.

1 3 1/2-pound chicken, freshly killed, washed thoroughly, fat and membranes removed
3 tablespoons Chinese Shao-Hsing wine, or sherry
1 1/2 teaspoons salt
1/4 teaspoon white pepper
3 tablespoons chicken broth
1/2 teaspoon sugar

Steps:

  • Place the chicken in a large pot, preferably an aluminum Dutch oven. Cover with water and bring to a boil.
  • Lower the heat, cover the pot leaving a slight opening, and simmer chicken for about 30 minutes.
  • Remove chicken from pot, drain and cool on a cake rack.
  • When chicken has cooled, chop into pieces 2 inches by 1 inch, skin and bones included. Place on a serving dish.
  • Mix together the remaining ingredients and pour the marinade over the chicken. Marinate for one hour. Serve at room temperature.

1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup dry red wine or chicken broth
1 teaspoon lemon juice
2 green onions, chopped
1/4 teaspoon dried thyme
3 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon browning sauce

Steps:

  • Arrange chicken in a round microwave-safe dish. Sprinkle with salt and pepper. Combine wine or broth and lemon juice; pour over chicken. 1 (3 lb) broiler-fryer chickens, cut up and skinned
2 tablespoons cornstarch
1/4 cup water
2 tablespoons olive oil
1/2 cup rose wine or 1/2 cup white zinfandel wine

1 clove garlic, pressed
2 tablespoons brown sugar
1/4 teaspoon dried oregano

Steps:
