A delicious and festive green St. Paddy's Day treat!

Ingredients

16 cups popped popcorn, or more to taste
1 cup packed light brown sugar
½ cup butter
½ cup light corn syrup
16 drops green food coloring
1 teaspoon vanilla extract
½ teaspoon baking soda

Steps:

Preheat the oven to 250 degrees F (120 degrees C). Spread popcorn into 1 large or 2 smaller greased roasting pans.
Combine brown sugar, butter, corn syrup, and food coloring in a medium saucepan over medium heat. Stir constantly until boiling. Let boil undisturbed for 5 minutes. Remove from heat. Stir in vanilla extract and baking soda; mixture will foam up then subside.
Pour mixture over popcorn and stir until coated.
Bake in the preheated oven, stirring every 15 minutes, for 45 minutes. Stir popcorn as it cools to break it apart.

Ingredients

4 quarts popped popcorn
1 cup sugar
1/2 cup packed brown sugar
1/2 cup water
1/2 cup light corn syrup
1 teaspoon white vinegar
1/4 teaspoon salt
1/2 cup butter
8 to 10 drops green food coloring

Steps:

Place popcorn in a large roasting pan; keep warm in a 250° oven. Meanwhile, in a large heavy saucepan, combine the sugars, water, corn syrup, vinegar and salt. Cook and stir over medium heat until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 260° (hard-ball stage)., Remove from the heat; stir in butter until melted. Stir in food coloring. Drizzle over warm popcorn and toss to coat. Cool. Break into pieces. Store in an airtight container.
