SKIRT STEAK WITH SHALLOT-THYME BUTTER
Steve Johnson, the chef at the Blue Room in Cambridge, Mass., has been cooking skirt steak for years, long before it became wildly popular. But never before has he served a better - or simpler - rendition of this long, thin band of wonderfully marbled beef. His secret: a slice of compound butter, flavored with shallots, chives and thyme, that melts over the meat. It had been so long since I had seen flavored butter on steak that this version came as something of a revelation.

- Prepare a gas or charcoal grill; the fire should be so hot you can hold your hand over it for only a couple of seconds.
- Meanwhile, cream the butter with a fork, adding thyme, chives, shallot, 1/2 teaspoon each salt and pepper and the vinegar or juice.
- Grill the steak, 2 minutes a side for rare, about a minute longer per side for medium-rare. As it cooks, season with salt and pepper.
- Spread each steak with about a tablespoon of the flavored butter, and serve. Remaining butter can be wrapped and refrigerated or frozen.

CLASSIC SHALLOT BUTTER
Steps:
- Gather the ingredients.
- Peel and finely chop the shallot. You should end up with about 3 tablespoons in total.
- In the bowl of a stand mixer fitted with the paddle attachment, soften up the butter for a couple of minutes on low speed.
- Add the lemon juice and chopped shallot to the butter and continue mixing until the shallots are fully incorporated.
- Spread out a large (1-foot or bigger) square of plastic wrap across your work surface, then scoop the mixed butter onto the plastic. You are now going to roll the butter into a cylinder inside the plastic wrap.
- Tie the excess plastic wrap at the ends of the cylinder into a knot, or just use little pieces of string to tie off the ends. You can even make a string out of a short section of plastic wrap and roll it into a little rope.
- Chill or freeze until needed.

HAMBURGERS WITH GARLIC AND SHALLOT BUTTER

- Put meat into a mixing bowl and add salt, pepper and mustard. Blend well, using your fingers. Divide mixture into four portions and shape each into a patty.
- Combine shallots and wine in a small saucepan. Cook over moderately high heat about 3 minutes or until the wine is almost evaporated. Remove from heat and let cool briefly. Add garlic, butter and parsley and blend well.
- Burgers may be broiled or cooked in a hot skillet. If they are to be broiled, preheat the broiler to high. Place burgers on a rack and place them under broiler about two or three inches from the source of heat. Cook about 5 minutes, turning burgers occasionally. If burgers are to be cooked in a skillet, heat the skillet, preferably a cast-iron one, until very hot. Brush it lightly with oil. Add burgers and cook about 2 minutes on one side. Turn and cook about 3 minutes longer, turning them occasionally.
- Smear top of each burger immediately with herb butter and serve.

GORGONZOLA SHALLOT BUTTER
This compound butter is delicious on a grilled steak, sautéed chicken breast or pork chops. It's quick to make in a food processor or by hand as long as you've remembered to let your butter come to room temperature.

- Heat 1 tablespoon of the butter and the smashed garlic clove in a small skillet. Add the shallots and sauté for 2 to 4 minutes, until they soften. Pour in the sherry, deglaze the pan and cook for another minute or two, until the liquid has reduced. Remove and discard the smashed garlic clove and set the shallots aside to cool completely.
- Place the remaining butter into a food processor and pulse a few times until the butter is smooth. Add the cooled shallots and Gorgonzola cheese and pulse until the ingredients are well-combined. Stir in the chopped parsley and lemon zest and season with salt and freshly ground black pepper to taste.
- Place a sheet of plastic wrap on the counter and spoon the compound butter onto the plastic wrap in a log shape. Fold the plastic wrap over the butter, squeezing out as much air as possible and roll it into a smooth log, wrapping the plastic wrap around the butter and twisting the ends shut. Chill for at least 1 hour or up to 2 weeks in the refrigerator, or freeze for up to 3 months.

- Pre-heat oven to 375F.
- Place salmon on foil-lined baking sheet (makes for easy clean-up!).
- Coat salmon in olive oil. Add a few dashes of lemon pepper and salt, evenly distributing over fish. Place fish in oven.
- Chop/mince garlic and chop shallot finely and place in small pan.
- Add lemon juice, lemon zest, and butter to the pan. Cook over medium heat for a few minutes, to soften shallots. Reduce heat and keep warm until fish is done.
- When fish is cooked, transfer to plates and pour the shallot butter over it.

- In a small saucepan of boiling water boil the garlic cloves for 6 minutes, drain them, and peel them. In a small heavy skillet heat the oil over moderately high heat until it is hot but not smoking and in it fry the shallot for 3 to 5 minutes, or until it is golden. Transfer the fried shallot to paper towels to drain. In a small bowl mash the garlic to a paste, add the fried shallot, the butter, and salt and pepper to taste, and cream the mixture. Let the butter stand, covered, in a cool place for 1 hour to allow the flavors to develop. Serve the butter with meat, poultry, seafood, or vegetables.
CARAMELIZED SHALLOT BUTTER
Sweet caramelized shallots cooked down with thyme and a splash of nutty marsala wine, folded into soft butter. All you need is some crusty bread or a big, juicy steak to put it on!

- Heat the olive oil and 2 TBS butter in a skillet over medium heat. Add the shallots and season with a pinch of salt. Cook, stirring occasionally, until some color develops - about 5 minutes.
- Turn the heat down to low and continue to cook, stirring the shallots occasionally, until they are soft and dark in color.
- Strip the leaves off the thyme and toss them in, along with a big splash of marsala wine. Cook until the liquid has reduced, about 3 more minutes. Turn off the heat and allow the shallots to cool for about 15 minutes.
