Categories     Savory Pies

Time 2h40m

Yield 4-6 serving(s)

Number Of Ingredients 15

1 tablespoon beef drippings or 1 tablespoon cooking oil
1 1/2 lbs chuck steaks, cut into 1 inch dice
1/2 lb ox kidney (or lamb's, trimmed and diced)
12 ounces puff pastry
2 onions, chopped
3 carrots, peeled and cut into rough dice (5/8 inch)
butter
4 large flat mushrooms, cut into thick slices
2 tablespoons flour
1 teaspoon tomato puree
1 bay leaf
1 pint veal stock (or water and stock cube or granules) or 1 pint beef stock (or water and stock cube or granules)
Worcestershire sauce
salt and pepper
1 egg, beaten, for glazing

Steps:

  • Heat a large frying pan with a little of the dripping or oil. Season the diced beef with salt and pepper. Fry in the pan until well coloured and completely sealed. Life out the meat and transfer to a large saucepan. Add a touch more oil, if necessary, to the frying pan. Season the kidneys and also fry quickly to seal and colour in the hot pan. Also transfer to the saucepan.
  • Melt a knob of butter in the pan and cook the onions and carrots in the melted butter for 2 - 3 minutes. They will lift any flavours left from the meats. Put into the saucepan with the meat. Fry the mushroom slices in a little more butter, just turning in the pan for a minute or two; keep to one side.
  • Place the saucepan on medium heat, stirring in the flour, and allow it to cook for 2 to 3 minutes. Add the tomato puree, bay leaf and mushrooms. Pour in the stock and bring to a simmer, skimming off any impurities. The meat should just be covered with the stock; if not, top with a little more stock or water. Simmer gently, partially covered, for 1 1/2 to 2 hours. During the cooking time it may need to be skimmed several times.
  • After 1 1/2 hours, check the meat for tenderness. If not quite soft enough, cook for the additional 30 minutes. If the meat is cooking gently, it will not need to be topped up with any additional stock or water. The sauce will have reduced, thickening it's consistency and increasing it's flavour.
  • Taste for seasoning, adding a dash or two of Worcestershire Sauce to the mixture. Transfer to a 2 pint pie dish and allow to cool to lukewarm.
  • Preheat the oven to 220°C/425°F.
  • Roll the pastry 1/4-inch thick. Cut a strip of pastry to sit around the rim of the dish. This will help the top to stay on. Brush the rim of the pie dish with some beaten egg and apply the strip. Brush again with egg. Making sure the pastry top is bigger than the dish, sit it on top. Push down around the sides, trim and crimp for a neat finish. Brush completely with egg wash and place in the preheated oven. Bake for 30 to 40 minutes until golden brown.

EASY STEAK PIE

Easy steak pie image

Nothing beats a classic homemade steak pie, complete with golden-brown flaky pastry and a rich filling. This easy family feast only takes 15 minutes to prep

Provided by Barney Desmazery

Categories     Dinner, Main course, Supper

Time 3h15m

Number Of Ingredients 8

3 tbsp sunflower oil
1kg braising steak, diced
2 onions, roughly chopped
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water
375g sheet of ready-rolled puff pastry
1 egg yolk, beaten

Steps:

  • To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
  • Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
  • To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

THE SHAKESPEARE TAVERN'S SHEPHERD'S PIE

The Shakespeare Tavern's Shepherd's Pie image

I'll be surprised if this isn't the best shepherd's pie you've ever eaten! This recipe is adapted from the New American Shakespeare Tavern in Atlanta, Georgia. I would like to point out that the chef at the Tavern likes to clarify that in England this would be called cottage pie because it is made with beef, not mutton (lamb) - "thus the need for the shepherd." Most Americans are more familiar with the name, shepherd's pie. No matter what you call it, this pie is something special ...chuck roast slow-cooked until it's falling apart tender with delicious vegetables and herbs, topped with garlic mashed potatoes. It smells so heavenly while it's cooking that I guarantee your family (and friends and neighbors) will gather around the oven waiting for you to serve it. Although, this shepherd's pie is fairly easy to prepare, make it on a day that you have some extra time, since it is a little time consuming...but, Oh, So Well Worth It!!!!!!

Categories     Savory Pies

Time 2h45m

Yield 8 serving(s)

Number Of Ingredients 18

1 tablespoon vegetable oil
2 teaspoons vegetable oil, divided
2 cups diced onions
2 -3 large carrots, peeled and cut in half lengthwise and then across into 1-inch chunks
1/2 bunch fresh celery, chopped (about 1 1/2 cups)
2 garlic cloves, minced
2 1/4 lbs beef chuck roast, trimmed and cut into 1-inch pieces
salt and pepper, to taste
2/3 cup white wine, divided
1 cup canned low sodium chicken broth, divided
2 tablespoons Worcestershire sauce
1 1/2 teaspoons fresh thyme, minced and divided
2 tablespoons fresh rosemary, minced and divided
1/4 cup cornstarch
2 1/2 lbs russet potatoes, unpeeled and scrubbed
1/4 cup butter (1/2 stick)
6 garlic cloves, minced
salt and pepper, to taste

Steps:

  • Preheat the oven to 350 degrees.
  • In an ovenproof Dutch oven, heat 1 tablespoon oil over medium heat. Add the onion, carrots, celery, and 2 cloves of minced garlic and cook until the vegetables begin to soften, about 8 to 10 minutes.
  • Meanwhile, heat a 12-inch skillet over high heat. Add 1 teaspoon vegetable oil and swirl to cover the pan. Sprinkle the beef pieces with salt and pepper. When the oil is shimmering, but not smoking, add half the beef and brown on all sides, then add the beef to the Dutch oven with the vegetables. Pour 1/3 cup of the white wine into the skillet and cook over high heat until it reduces by half, scraping up any of the browned bits left by the beef. Pour the reduction into the Dutch oven. Repeat the browning process with the oil and beef, and repeat the wine reduction, adding both to the Dutch oven.
  • Pour 3/4 cup of the chicken broth and the Worcestershire sauce into the Dutch oven, and add half of the minced thyme and half the minced rosemary, reserving the remaining chicken broth and herbs. Stir the beef mixture well and bring to a simmer on top of the stove. Once the beef is simmering, cover the Dutch oven and put it in the oven for 1 1/2 hours.
  • While the beef is cooking, start the potatoes. Boil the whole potatoes in plenty of water until the are easily pierced with a fork, about 45 minutes. Pour off the water and let the potatoes sit, off the heat, until they are cool enough to handle. Melt the butter in a small saucepan. Add the 6 cloves of minced garlic and cook for 30 seconds, then remove from heat. Press the potatoes through a potato ricer, or peel and mash them by hand. Pour in the melted garlic butter, and beat the potatoes until they are light and fluffy. Cover and keep warm.
  • After 1 1/2 hours in the oven, check the beef for tenderness - it should be just about falling apart. Stir the cornstarch into the reserved 1/4 cup of chicken broth and stir the mixture into the hot beef. Stir in the remaining minced rosemary and thyme. and continue stirring until the mixture has thickened.
  • Pour the beef mixture into a 9-x13-inch baking dish . Spread the mashed potatoes over the top, return to the oven and bake for 30 minutes until hot and bubbly.

STEAK AND KIDNEY PIE

Steak and Kidney Pie image

Provided by Food Network

Categories     main-dish

Time 26m

Yield 4 to 6 servings

Number Of Ingredients 16

1 1/3 cups flour
1/2 cup (1 stick) cold, unsalted butter, cut into 1/2 inch cubes
1/4 teaspoon salt
1 egg
2 to 3 tablespoons iced water
5 tablespoons oil
1 pound well marbled steak, cut into 1 inch cubes
12 ounces trimmed veal kidney (about 2 kidneys), cut into 1 inch cubes
Salt and freshly ground black pepper
10 ounces mushrooms, quartered 3 onions, chopped
3 tablespoons flour
2 tablespoons Worcestershire sauce
2 cups hot water
Milk, for brushing pastry
Sea salt
Freshly cracked black pepper

Steps:

  • Prepare the pastry: In a large bowl, combine flour with butter and salt. Mix lightly with your fingertips until butter forms peasized pieces. Whisk together egg and 1 tablespoon of the water. Add to flour mixture all at once, mixing gently with your fingertips. You should be able to see chunks of fat, and the pastry should be moist enough to begin to stick together. If the pastry is too dry, add up to 2 more tablespoons of water.
  • Turn the pastry out onto a lightly floured work surface, dust with flour, and knead it until the pastry is smooth, about 3 to 4 times. Transfer to a plastic bag and form pastry into a disk. Refrigerate a minimum of 30 minutes, or as long as 3 days.
  • Meanwhile, heat 2 tablespoons of the oil in a casserole or Dutch oven. Add the steak and kidneys, season with salt and pepper, and cook, stirring, until just browned, about 3 minutes. Remove to a plate and reserve. Add 1 more tablespoon of oil to casserole, and add mushroom quarters. Cook over high heat, stirring, until light brown. Reserve on plate with meat. Add the remaining oil to the casserole, and add onions. Cook until well browned, about 5 minutes. Sprinkle the flour over the onions and stir so that the juices soak up the flour. Cook, stirring constantly, about 1 to 2 minutes.
  • Stir the Worcestershire sauce into the hot water, and pour over the hot onion mixture while whisking. Add the reserved meats and mushrooms, and any juices that have collected, and season with salt and pepper. Reduce the heat to low and simmer 3 to 4 minutes or until slightly thickened.
  • Preheat oven to 400 degrees F. Roll out the pastry to a thickness of 1/4inch. Fill a 9inch pie dish with the steak and kidney mixture. Dampen the edges of the dish with water, then fit the pastry on top, pressing it down well all around the edge to seal. Make a steam hole in the center, brush the top with milk and sprinkle with sea salt and freshly cracked black pepper. Bake for 25 minutes, or until pastry is golden.

STEAK PIE

Steak Pie image

This recipe was created by trying to copy a steak pie made at the 'Butt and Ben' Scottish Bakery in Pickering, Ontario. My husband says it's better! You could also add 2 calf kidneys (well washed and de-veined and cut into bite sized pieces) to make Steak and Kidney Pie!

Categories     Dinner

Time 2h20m

Number Of Ingredients 18

2 pound stewing beef
2 tablespoon olive oil
¼ cup all-purpose flour
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1 large onion (chopped)
4 cloves garlic (minced)
2 stalks celery (chopped)
2 large carrots (cut into 1 inch cubes)
2 tablespoon all-purpose flour
1 cup red wine (or Guinness)
2 cup beef broth
2 sprigs fresh thyme
2 bay leaves
6 slices bacon (chopped)
1 pound mushrooms (sliced)
1 sheet puff pastry
1 egg yolk (for brushing pie)

Steps:

  • Season beef with salt and pepper then toss with the 1/4 cup of flour. Sear in an Instant Pot with 1 tbsp of olive oil until fully browned on all sides. You will have to do this in a couple batches. Transfer to a plate.
  • Saute the sauteables and cook the beef: Add the remaining tbsp of olive oil and heat. Add the onion, garlic, celery, carrots to the pot and saute for 5 minutes until the onion softens. Sprinkle the 2 tbsp of flour over the veggies and stir. Add the wine or beer and beef broth and stir until the flour dissolves. Add the thyme, bay leaves, and cooked beef back to the instant pot. Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Cook on high pressure for 35 minutes until the beef is fork tender. After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid.
  • Fry the bacon and mushrooms: In another skillet, fry the bacon, drain some of the fat then add the mushrooms and saute for 5 minutes. Add the bacon and mushrooms to the instant pot. Stir everything together. Remove the bay leaves and thyme. Season with salt and pepper as needed. Switch the instant pot to the saute setting again (do not put the lid on) and simmer for 10 minutes until mushrooms are tender.
  • Preheat oven to 400 F degrees.
  • Finish the dish: Pour the stew into a 9x13-inch casserole dish, then top with a sheet puff pastry. You might need 2 sheets, depends on how big they are. Brush with egg yolk. Bake for 30 to 35 minutes until golden brown. Rest for 5 minutes before serving.

1 medium or 1/2 large onion, chopped
2 cloves garlic, pressed and minced
2 T minced fresh parsley
6 T all-purpose flour
1/2 t crumbled dried thyme
1/2 t crumbled dried sage
1/2 t crumbled dried oregano
1 1/2 t salt
1/4 t freshly ground black pepper

Uncover the pan and set aside to cool. Place the flour, thyme, oregano, sage, salt and pepper into a large, heavy duty zip-type plastic bag and mix well. Add the beef to the bag, zip the top closed and shake until all the cubes are evenly covered with the dry mixture. Butter a 9X12 inch oval au gratin pan. Place the floured cubes into the pan along with the sauteed vegetables, mixing very lightly with your hands, just until the begetables and meat are evenly distributed. Place the filled pan in the refrigerator while you prepare the crust. (Or you can cover the filled pan with plastic wrap, place it in the refrigerator, and chill until you re ready to prepare the crust and cook the pie. It is best not to prepare the crust in advance.) Preheat the oven to 350'F. Remove the pan of meat and begetables from the refrigerator and pour the wine into the pan. Gently fit the crust over the pan fluting the edges and slashing the center in 3 places to vent and decorate the top as directed in the pastry recipe. Carefully insert the thermometer through a slash in the crust, making sure it spears a piece of beef. Bake until the meet thermometer reads 125'F for medium rare, about 25 minutes. Serve immediately.
