These Stuffed Dates are an easy and healthy kid-friendly snack or party appetizer and perfect when you're craving something sweet. The filling and toppings are easily customizable using Medjool dates, nut butter, vegan cream cheese and are naturally gluten-free, refined sugar-free, vegan and paleo-friendly.

16 Medjool Dates
Almond Butter or any other nut butter or seed butter such as Peanut Butter (Sunflower Seed Butter, Tahini, Cashew Butter)
Creamy Coconut Manna (Butter)
Dairy-Free Cream Cheese
Shredded Coconut
Crushed Pistachios
Chopped Pecans or chopped walnuts
Finely Chopped Peanuts
Whole Almond
Crushed Freeze-Dried Raspberries
Crushed Freeze-Dried Strawberries
Fresh Blueberries
Pomegranate seeds
Chopped Chocolate
Mini Chocolate Chips
Maldon Sea Salt or Coarse Flaky Salt
Drizzle
Coconut nectar or honey or thick liquid sweetener
Melted chocolate

Steps:

  • Use a knife to make a lengthwise slit into each of the dates and remove the pits.
  • Use a spoon to fill each date evenly with the various nut butters.Top each with different toppings listed above.
  • Sprinkle a little bit of Maldon or coarse sea salt on each.Add a tiny drizzle of honey on a few.Add a tiny drizzle of melted chocolate to one or two.
  • Enjoy immediately or store in an airtight container in the fridge for up to 3 days.

This is a recipe that my mother makes as a quick appetizer for special occasions. It may seem like an odd combination of flavors at first, but trust me, these can be addictive!

Steps:

  • "Butterfly"the dates, making sure that they are still attached along one side Spread the dates open and fill with a generous amount of cream cheese.
  • Place a pecan over the filling.
  • Close the date, shaping it back into its original shape.
  • Eat and enjoy!

24 pitted dates, preferably not Medjool (see notes)
About ½ cup crumbled blue cheese (see notes)
¼ cup balsamic vinegar, ideally a thick, syrupy aged type

Steps:

  • Cut a lengthwise slit in each date. Fill each with a generous ½ teaspoon of the cheese.
  • Arrange the dates on a serving platter or onto individual plates, drizzle with the balsamic vinegar, and serve.

Shad Stuffed with Dates image

This freshwater fish, found in the Sebou River, is popular in Morocco. It is fat but rather full of bones, and its delicate flesh is said to be at its best soon after spawning upriver. In America it is sold already boned, which makes stuffing easy. Dates are stuffed with rice and blanched almonds, and they, in turn, provide the stuffing for the fish.

Number Of Ingredients 12

1/4 cup finely chopped blanched almonds
2-3 tablespoons cooked rice
1 teaspoon sugar
1/2 teaspoon ground cinnamon plus 1/4 teaspoon to garnish (optional)
Pepper
1/4 teaspoon ground ginger
1-2 tablespoons butter
8 ounces fresh dates (dried ones will do, but choose soft, juicy ones)
A 3-pound boned shad
Oil
Salt
1/2 onion, finely chopped

Steps:

  • Mix together the chopped almonds, rice, sugar, cinnamon, and a pinch each of pepper and ginger, and knead with a little butter to hold everything together.
  • Pit the dates and stuff them with the almond-rice mixture.
  • Rub the fish all over with oil, salt, pepper, and a little ground ginger. Open up the 2 top fillets and arrange the stuffed dates down the center, then replace the top fillets. Place the fish on a large, well-oiled sheet of foil and sprinkle with the finely chopped onion. Wrap the fish up neatly and seal the edges of the foil firmly. (The foil allows you to omit sewing up the fish.) Lay the parcel on a large baking pan.
  • Bake in a preheated 350°F oven, about 15 minutes per pound, or until the flesh begins to flake when you cut into the thickest part with a pointed knife. Then unwrap the foil and place the fish under the broiler to become crisply golden. Serve dusted with cinnamon if you like.

2 shad fillets, 1 1/2 to 2 pounds each
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup dry white wine
2 cups mushroom stuffing or other fish stuffing
1/4 cup butter or margarine

Steps:

  • Preheat oven to 400 degrees. Wipe shad fillets with damp paper towel. Season both fillets with salt and pepper and wine. Lay one fillet on a large piece of foil and spoon stuffing onto fillet. Top with second shad fillet, dot with butter and wrap up in foil. Place whole package onto a baking sheet and bake about 30 minutes until fish flakes easily. Serve immediately.

  • Place the softened cream cheese and honey in a medium sized bowl. Beat with an electric hand mixer for about 30 seconds – 1 minute, until smooth and creamy. Place in the refrigerator for about 10 minutes, until chilled.
  • Pit the dates. Carefully slice the dates lengthwise with a sharp paring knife, and then remove the seed. Set the date aside.
  • Fill the dates with the cream cheese using a piping bag and a round nozzle. (In case a piping bag isn’t available, it’s possible to use a Ziploc bag – just snip off the end, fill with the cream cheese mixture, and pipe.) It’s also possible to skip the piping, and fill the dates with a small teaspoon.
  • Place the crushed nuts in a small bowl. Place one date, cream cheese top down, in the crushed nuts. Then turn them around and place in a serving bowl or platter. Do the same for all the dates.
