RED RUBY SANGRIA

2 large pomegranates
2 red Bartlett pears, seeded and thinly sliced
2 star fruits, thinly sliced
3 bottles red wine, such as Rioja
1 cup brandy or cognac
1 cup pomegranate juice, such as Pom Wonderful or grenadine
1/2-cup sugar
2 cinnamon sticks
2 star anise
1 liter club soda, chilled

Steps:

  • Spread some newspaper out on the counter because the bright red pomegranate juice can stain. Cut the pomegranate in half, open it up and you'll see clusters of very juicy garnet seeds encased in a smooth off-white pulp. Gently pry out the ruby kernels with your fingers or a pointed knife, removing any of the bitter membrane that may adhere. Put the pomegranate seeds in a large pitcher or container and add the pear and star fruit slices.
  • Pour in the wine, brandy, and pomegranate juice. Add the sugar, cinnamon, and star anise; give the mixture a good stir to combine. Chill the sangria in the refrigerator for several hours or up to overnight for the flavors to come together. Just before serving, top the sangria off with the club soda and mix to combine. Spoon the fruits into glasses or goblets and pour in the sangria to fill.

PURPLE CORN AND PINEAPPLE SANGRIA

4 to 5 dried purple corn in husk, about 1 pound
1 fresh pineapple
2 (3-inch) sticks canela or cinnamon
2 quarts water
1/2 cup sugar
1 bottle Sauvignon Blanc
1/2 cup pisco (Peruvian brandy)

Steps:

  • Rinse corn and place in stockpot. Peel pineapple and place skin in stockpot. Cut pineapple flesh into small dice and reserve. Add canela and water to pot. Bring to a boil and then simmer, slightly covered, for 1 hour.
  • Remove from heat and strain. You should end up with about 1 quart liquid. Add sugar, stir, and allow to cool.
  • Add wine, pisco, and diced pineapple. Refrigerate overnight. Serve over ice.

1 cup orange juice
1/4 cup superfine granulated sugar
2 oranges, cut into thin rounds
2 Meyer lemons, cut into thin rounds
3 Key limes, cut into thin rounds
2 apples, cored and cut into 1/2-inch chunks
2 cups cold club soda

Steps:

  • In a large pot or bowl, combine the wine, brandy, orange juice, and sugar and stir until the sugar dissolves. Add the orange, lemon, and lime slices, the apples and refrigerate until well chilled, about 1 hour. Remove from the refrigerator and add the soda. Serve in glasses over ice.

¼ cup lemon juice
⅓ cup frozen lemonade concentrate
⅓ cup orange juice
1 (750 milliliter) bottle dry red wine
½ cup triple sec
1 lemon, sliced into rounds
1 orange, sliced into rounds
1 lime, sliced into rounds
¼ cup white sugar
8 maraschino cherries
2 cups carbonated water

Steps:

  • In a large pitcher or bowl, mix together the brandy, lemon juice, lemonade concentrate, orange juice, red wine, triple sec, and sugar. Float slices of lemon, orange and lime, and maraschino cherries in the mixture. Refrigerate overnight for best flavor. For a fizzy sangria, add club soda just before serving.

1 orange
1 lemon
1 lime
1 medium all purpose apples, pared, cored and sliced
1 cup pitted cherries
1 cup fresh pineapple chunks
¾ cup brandy
1 (750 milliliter) bottle dry red wine
1 (12 ounce) can lemon-lime soda to taste
1 cup orange juice to taste

Steps:

  • Slice the orange, lemon, and lime into thin rounds. Place the citrus in a pitcher with the apples, cherries, and pineapple. Pour in the brandy and refrigerate for 2 hours of more. Chill the bottle of red wine, lemon-lime soda, and orange juice at the same time.
  • Gently crush the fruits with a spoon, then stir in the red wine, lemon-lime soda, and orange juice. Add additional brandy or orange juice to taste.
