This is my favorite recipe. My grandmother and mother used to make this when I was a child. It is absolutely wonderful! You can substitute 7Up® for milk in the glaze.

3 cups white sugar
1 ½ cups butter, softened
5 eggs
3 cups all-purpose flour, sifted
2 tablespoons lemon extract
1 cup lemon-lime carbonated beverage (such as 7Up®)
1 cup sifted confectioners' sugar
¼ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Generously grease a fluted tube pan (such as Bundt®).
  • Beat white sugar and butter together in a bowl using an electric mixer until creamy and smooth; add eggs, 1 at a time, mixing well after each addition. Stir flour, 1 cup at a time, blending well after each addition until batter is smooth; stir in lemon extract. Mix lemon-lime beverage into batter and pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes. Remove cake from pan immediately.
  • Beat confectioners' sugar, milk, and vanilla extract together in a bowl using an electric mixer on medium until glaze is smooth. Pour glaze over warm cake.

1-1/2 cups butter, softened
3 cups sugar
5 large eggs, room temperature
2 tablespoons lemon juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3/4 cup 7UP soda
GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon lemon or lime juice
1 to 2 tablespoons 7UP soda
1/2 teaspoon grated lemon or lime zest, optional

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted or plain tube pan., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7UP, beating well after each addition. , Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely., For glaze, in a small bowl, mix confectioners' sugar, lemon juice and enough 7UP to reach desired consistency. If desired, stir in zest. Drizzle over cake.

1½ cups (3 sticks) unsalted butter (softened)
3 cups white sugar
5 eggs
2 Tbsp lemon juice
2 Tbsp lime juice
2 tsp vanilla extract
1 cup 7-Up Soda
1/2 tsp salt
3 cups all-purpose flour
Zest of one lime
Zest of one lemon
GLAZE:
2 cups powdered sugar
1 Tbsp lime juice
2 Tbsp 7-Up Soda

Steps:

  • Preheat oven to 325 degrees F. Liberally (and I mean it!) grease and flour a bundt pan. If you think you've greased it well, grease it again. Seriously. Set aside.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy, about 2 minutes. Add the eggs in, one at a time, beating well after each addition. Beat in the lemon and lime juice, lemon and lime zests, and vanilla extract to combine. Then, alternating with 7-Up and flour, add each gradually until a thick and smooth batter comes together.
  • Pour the batter into the prepared (and very well greased and floured!) bundt pan and bake for approx. 60-70 minutes or until a toothpick inserted near the center comes out mostly clean. Leave in pan for about 20 minutes before carefully inverting to a wire rack to cool completely.
  • To make glaze, in a medium bowl, whisk together the glaze ingredients. Drizzle on top of the cake and allow glaze to set before cutting into slices.

2 sticks of softened butter
5 eggs
3 cups all-purpose flour
3 cups of granulated sugar

1 cup 7 UP

1 cup of sugar (powdered sugar if you want an icing.. regular granulated sugar for a glaze)
1/4 cup of 7up

Steps:

  • Add all of your dry ingredients in a large mixing bowl, and whisk until everything is throughout.
  • In a separate bowl you're going to whisk all all 5 eggs, until the color is completely yellow.
  • Add your eggs and butter into your large mixing bowl along with your dry ingredients, and mix.
  • Now add your vanilla and 7up into the cake batter, and mix until smooth.
  • Pour your batter into a well cake pan. If your pan is not stick resistant, you may want to grease it.
  • Let the batter sit still in the pan for 3 minutes. While the cake sits, preheat your oven on 325.
  • Let the cake bake on 325 for 1 hour and 5 minutes
  • When cooled, add your icing, or glaze.
  • let the glaze, or icing sit on the cake for at least 20 minutes before serving.

1 box Yellow Cake Mix
1 4 oz box of instant lemon pudding
3/4 cup 7 Up
3/4 cup Vegetable Oil
4 eggs
Glaze Ingredients:
2 cup powder sugar
1 Tbsp fresh lemon juice
1 Tbsp milk

Steps:

  • Preheat the oven to 325 F.
  • Spray a bundt pan with non-sticking cooking spray and gently coat with the pan with flour so the cake can be removed easily.
  • In a large bowl, combine the cake mix ingredients thoroughly with a hand held mixer.
  • Pour the batter into the bundt pan.
  • Bake for 45-55 minutes until an inserted toothpick comes out clean.
  • Allow the cake to cool for 2-3 minutes and then remove it gently from the pan onto a wire rack to cool. Cool completely.

For the glaze

Steps:

  • Preheat oven to 350° and grease a large bundt pan with cooking spray, then add a little flour and tilt pan around to coat.
  • In a large bowl with a hand mixer, beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, then add vanilla and both zests.
  • In a separate large bowl whisk together flour, baking powder, and salt. Add ⅓ of the dry ingredients to butter mixture, beat to combine, then add ⅓ of 7-Up and mix to combine. Continue to do this until you have used up all of the dry ingredients and the 7-Up. Pour batter into prepared bundt pan and smooth top with an offset.
  • Bake for 1 hour or until a toothpick inserted into the middle comes out clean. Let cool 10 minutes then invert onto a cooling rack to cool completely.
  • Meanwhile, make glaze: Whisk together powdered sugar, lime juice, and salt in a bowl. Add 7-Up, 1 teaspoon at a time, until mixture reaches consistency of sour cream. Drizzle over top of cooled cake before serving.
