- In a high-speed blender, combine the ingredients for the chocolate mousse layer. Blend on high until smooth. Pour into a 9×9 baking dish. Transfer the dish to the fridge for 20 minutes to set.
- Rinse out the blender, and add in the date caramel ingredients. Blend on high, scraping down the sides, or using the tamper, as needed, until a smooth caramel sauce forms. Add in 1-2 more tablespoons almond milk if needed to get the blender moving. Pour the caramel sauce into the pan and smooth it into an even layer.
- Add the solid cream from the chilled can of coconut milk to a bowl. Use a hand mixer to whip the cream into soft peaks. Add in the maple syrup, if desired, and mix again. Spread the coconut whipped cream in an even layer on top of the dip.

- Prepare the Vanilla Pudding: Combine sugar, salt, and 2 cups of the milk in a large saucepan. Bring to a simmer over medium-low, stirring occasionally.
- Whisk together cornstarch and remaining 1 cup milk in a medium bowl until smooth. Stir egg yolks into cornstarch mixture. Slowly pour warm milk mixture into egg mixture, whisking constantly until combined. Return mixture to saucepan, and cook, stirring constantly, over low until smooth and thick, about 4 minutes. Remove from heat, and stir in vanilla; pour into a shallow dish. Press plastic wrap directly over surface of mixture (to prevent a skin from forming), and chill until cold, about 1 hour.
- Prepare the Whipped Cream: Beat cream and sugar with an electric mixer on high speed until stiff peaks form, about 1 minute. Transfer to a separate bowl.
- Prepare the Peanut Butter Crème: Combine cream, peanut butter, sugar, and vanilla in mixer bowl. Beat on medium-low speed until combined, about 1 minute. Increase speed to high, and beat until stiff peaks form, about 1 minute.

- Choose your dish. I used a 9.25-inch pie plate made for deep dish pies! You could also use a square or round baking dish, a large platter, or a bowl. You decide!
- Layer 1: Blend cream cheese, 1 cup sour cream and 1 package taco seasoning until smooth. Spread in bottom of pie plate.
- Layer 2: Meat or Beans. Brown your ground beef in a medium skillet over high heat until all the pink is out. Drain meat and add 1 package taco seasoning (no water needed). Spread meat over the first layer. If you prefer, use a can of refried beans instead of meat.

- Beans: In a small mixing bowl, add refried beans and mash well, add cumin, chipotle powder and 1/4 cup of water, mix well to combine. The water will help make the beans creamy so they aren’t too thick for dipping, add a little extra water as needed. If you prefer, heat the bean mixture over low until warmed through before assembly.
- To make this simple guacamole, slice avocado lengthwise, twist the two halves to open, and remove the seed. Squeeze out the flesh (or scoop it out with a spoon) and place in a medium bowl with the juice of 1 lime and salt. Mash well, and season to taste with salt.
- Assemble: To layer the bean dip, using a shallow dish of choice (pie dish, baking dish, or bowl), start with a layer of beans, spreading to the edges. Next, repeat with a layer of guacamole, sour cream, and salsa. Next, add the corn, tomatoes, green onion, and olives. Top with cilantro.
