SENSATIONAL SALMON LOAF
This recipe has been in my family for years. Served with creamed peas and boiled new (red) potatoes, it makes a yummy meal even the kids love!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
- In a large bowl, stir together salmon, crackers, egg, bell pepper, and onion. Mix in milk, Worcestershire sauce, and hot pepper. Season with black pepper. Mix well with your hands, and spread into baking dish.
- Bake in a preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean, about 45 minutes. Cut into squares to serve.

I got this recipe from a 26-year-old issue of 'The Workbasket' magazine. I don't know the particular reason the original submitter named it 'Miracle' Salmon Loaf, but I have made it and can attest that it is quite good, - flavorful and moist. - 1. Combine mayonnaise, soup, egg, onion, green pepper, pimento, lemon juice and salt. Add salmon and bread crumbs to mixture. Bake in a greased 3 x 5 inch loaf pan at 350 degrees for 45 minutes to one hour, or until heated through and flavors are blended.
SALMON LOAF

Steps:
- Preheat oven to 375°F. Grease a 9X5 inch loaf pan.
- Drain salmon, reserving liquid. Remove skin and bones. Flake salmon in a large bowl. Add bread crumbs, onion and celery.
- In a smaller bowl, combine soup, egg, lemon juice and Tabasco sauce. Add this soup mixture to the salmon mixture; mix well. Place in the prepared pan.
- Bake for 30 minutes, add reserved salmon liquid (I got ⅓ cup) and then continue baking for another 20-30 minutes or until nicely browned. Cool salmon loaf in pan for 15 minutes, loosen from sides of pan and turn into platter.
- Serve and enjoy!
BAKED SALMON LOAF
Steps:
- Gather all the ingredients.
- Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan . Preheat the oven to 350 F.
- Flake the salmon and combine it with breadcrumbs in a medium-sized bowl.
- In a separate small bowl, whisk the eggs with cream (or milk) and melted butter .
- Combine the wet ingredients with the salmon mixture and stir in the onion, parsley, dill, salt, and pepper.
- Use a spatula to turn the salmon mixture into the loaf pan.
- Bake uncovered for 45 to 55 minutes or until cooked through. Enjoy!

- 1. Turn oven on and set at 350* Break canned salmon up with fork.
- 2. Mix yolks with mushroom soup, and add to salmon. Then add pepper, oatmeal and lemon juice and onion and mix well..
- 3. Beat egg whites until stiff and fold into salmon mixture. Put into a large bread pan, or casserole dish, and bake for 1 hour or until done.. Enjoy!
SETTLEMENT COOKBOOK SALMON LOAF
When I got my first apartment, my mom gave me her 1954 Settlement Cook Book. The book is well worn, with tape holding it together. This is one of my favorite recipes from the book. We would have it hot for dinner with a white sauce over the top or some Durkee's Sauce on the side. It is also wonderful leftover served cold. This recipe is very mild, so some people may find it bland, but I love it. Already a great source of calcium, I add a little extra powdered milk to make it even more healthy.

- Preheat oven to 350 degrees.
- Heat milk in the microwave or on the stove until hot but not boiling.
- While milk is heating, place salmon in a large mixing bowl, flaking it with a fork. Add bread crumbs, onions, seasonings, eggs and powdered milk. Stir well.
- Add butter to hot milk and stir to melt. Add milk to salmon mixture and stir.
- Spray 1 quart casserole dish with cooking spray, then pour salmon into dish. Place casserole dish in a larger baking dish filled with 1 inch of water.
- Bake for 1 hour.
- Serve topped with white sauce.
- NOTE: This recipe can easily be doubled.
SALMON LOAF
This salmon loaf recipe has been in my family for generations, and has the tested-by-many flavor to prove it.

- Pre-heat the oven to 350° F.
- Add the soda crackers to the ziploc bag.
- Use the rolling pin to crush the soda crackers to make crumbs.
- Remove any skin from the salmon.
- Mix the salmon and all of the other ingredients in the mixing bowl.
- Pack the mixture into a buttered loaf tin.
- Bake for 30 minutes, or until the loaf is set.

- 1. Saute onion and celery in butter until soft; about 10 minutes. Add curry powder and cook one minute more. Scrape into large bowl. 2. Add remaining ingredients and mix gently until well combined. Refrigerate the mixture for 15 minutes. 3. Preheat oven to 375. 4. Shape the fixh mixture into a loaf about 8 inches long by 4 inches wide on a nonstick, heavy baking sheet. Bake until a knife inserted in the center of the loaf for 20 seconds is hot to the touch, about 45 to 40 minutes. Let cool slightly, cut iinto thick slices with a serrated knife and serve.
