Here's a super-simple way to dress up zucchini from Wanda Penton of Franklinton, Louisiana. Asian flavor and sesame seed crunch make this side dish a treat to eat! Tip Idea: Yellow summer squash could be substituted for some of the zucchini.

2 small zucchini
2 teaspoons sesame oil
1 tablespoon lemon juice
1-1/2 teaspoons sesame seeds
1 teaspoon reduced-sodium soy sauce
Dash salt and pepper

Steps:

  • Cut the zucchini in half lengthwise and then into 1/2-in. slices. Place in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes or until tender., Meanwhile, in a small bowl, combine the oil, lemon juice, sesame seeds, soy sauce, salt and pepper. Transfer zucchini to a serving bowl; drizzle with sesame mixture and toss to coat.

2 tablespoons olive oil
¼ teaspoon sesame oil
2 teaspoons sesame seeds
2 tablespoons Parmesan cheese
¼ teaspoon cayenne pepper
½ teaspoon garlic salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss the zucchini with the olive oil, sesame oil, sesame seeds, Parmesan cheese, cayenne pepper, and garlic salt. Spread in a single layer on a baking sheet.
  • Bake 20 minutes in the preheated oven, until lightly browned.

4 zucchini
2 cloves garlic
1 tablespoon olive oil

Steps:

  • Bring a large pot of water to a boil. Trim ends from zucchini. Cut each one in half, then cut each half lengthwise into quarters.
  • Place zucchini and garlic into a steamer basket, then place the steamer basket into the pot. Steam for 10 to 15 minutes, or until the zucchini are tender.
  • Transfer zucchini to a large bowl. Mash the garlic and put it in the bowl with the zucchini. Drizzle the olive oil into the bowl and toss until the vegetables are coated with oil and garlic.

1 1/2 lbs green zucchini
1 1/2 lbs yellow squash
2 tablespoons vegetable oil
3 tablespoons fresh lime juice
1 tablespoon sesame oil

Steps:

  • Using a vegetable peeler, cut zucchini and squash lengthwise to form ribbons, discarding inner seeded core of squash.
  • Heat 1 T vegetable oil in a large nonstick skillet over moderately high heat until hot but not smoking.
  • Add half of zucchini and squash ribbons; cook, tossing with tongs 1 minute.
  • Transfer to a colander set over a bowl.
  • Repeat with remaining 1 T vegetable oil and the ribbons.
  • Let stand in colander 20 minutes to drain; transfer to serving bowl.
  • Toss with juice and sesame oil; salt and pepper to taste.

1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 egg white
2 tablespoons vegetable oil
2 to 3 teaspoons maple flavoring
1-1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/4 cup toasted wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/4 cup chopped walnuts
4 teaspoons sesame seeds, divided
1-1/2 cups shredded zucchini

Steps:

  • In a bowl, combine the first seven ingredients; beat until smooth. In another bowl, combine the flours, wheat germ, baking powder, baking soda and salt. Add raisins, walnuts and 3 teaspoons sesame seeds. Stir into sugar mixture just until moistened. Stir in zucchini. Pour into a greased 9x5-in. loaf pan. Sprinkle with the remaining sesame seeds., Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
