HOMEMADE SWEET SESAME CRISPS
Is it a cookie? Is it a cracker? Hard to say. These homemade crispy, crunchy sesame crisps are found all over Asia, and they're perfect with a cup of coffee or tea!

- Beat the egg whites until they start to get bubbly. Add the powdered sugar and beat until the sugar is dissolved. Beat in the oil and flour and mix well. Stir in the sesame seeds. Let the mixture sit for 20 minutes.
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Fill a zip top bag with batter and cut a ¼ inch hole in one corner. Squeeze out the batter onto the parchment to make circles, about an inch and a half apart. Bake for 15-18 minutes until golden. Cool and serve.

SESAME CRACKERS - THIN AND CRISPY
Steps:
- In the bowl of an electric mixer, dissolve the yeast and the honey in the warm water. Let it sit for 10-15 minutes, until the yeast activates and a foam cap forms.
- Mix in the salt and the sesame oil. Using the dough hook attachment, incorporate the whole wheat flour and all but a handful of the bread flour. Knead until a smooth, elastic dough develops. Keep adding more flour if necessary. Incorporate the sesame seeds. Remove the bowl from the mixer, cover and place in a warm place for 1 hour to proof.
- Cut the dough into 4-6 pieces. Flatten each piece with your hands or a roller to about ¼ - inch thick. Cover the dough pieces with a piece of plastic wrap and let relax for 15 minutes. Roll each piece out to #6 setting on the KitchenAid pasta roller attachment, which is about 1/64 inch or about 0.5 mm thick (see notes).
- Lay the rolled out dough on a large baking sheet lined with parchment paper. Cut the dough sheets into crackers of the desired size and shape. Large triangles or wedges work particularly well. Bake immediately (do not let them rise, or the crackers will be thick instead of thin and crisp) at 375°F (190°C) until deep golden brown (see notes). Rolled out to #6 they need 14-15 minutes of baking.
- Store in airtight containers.

SEEDY CRISPS

- In a medium bowl whisk together both flours, poppy seeds, sesame seeds, salt, and baking powder. Add the oil and stir until combined. Add the water and stir to combine and create a dough. Turn the dough out onto a floured surface and knead 4 to 5 times. Divide the dough into 8 equal pieces, cover with a tea towel and allow to rest for 15 minutes.
- Preheat the oven to 450 degrees F.
- For a thin snacking cracker: On a lightly floured surface, roll out 1 piece of dough to 1/16-inch and place on a parchment lined baking sheet. If there is room on the sheet pan, repeat with a second piece of dough. Bake on the middle rack of the oven for 4 minutes then flip and bake for an additional 2 to 3 minutes or until golden brown. Remove from the oven and place on a cooling rack. When cool, break into desired size pieces. Repeat procedure with remaining dough.
- For a thicker dipping cracker: On a lightly floured surface, roll out the dough as above but to 1/8-inch thick. Bake for 6 minutes on the first side, then flip and bake another 4 to 6 minutes.
- For super even thickness and easy rolling: Roll out using a lightly floured pasta roller. Flatten the dough until it will pass through the first setting and go to the highest number that your pasta roller will allow without tearing the dough. Bake according to the thin cracker instructions.
- Note: Baking times will vary depending on exact thickness of dough and oven temperature, so watch them closely. Store in an airtight container for up to 2 weeks.
HOMEMADE SESAME SNAPS
This a healthier, homemade sesame snaps recipe that uses all natural ingredients. Enjoy as a snack or a little treat. These are gluten-free, nut-free, paleo and vegan-friendly (replace honey with maple syrup or extra rice syrup).

- Preheat the oven to 150 C / 300 F.
- Thoroughly combine all ingredients in a bowl with a spoon, pressing down the mixture against the sides.
- Measure out a piece of parchment/baking paper to fit a medium flat baking tray (about 40cm x 30cm) and place it on a cutting board or flat surface. See step-by-step pics above.
- Scoop the mixture into a ball and transfer to the middle of the sheet. Spread into an oval shaped pancake, pressing down with the back of the spoon. Make sure there are no visible holes. Then place another piece of parchment paper over the top and press down with your hands, until the pancake flattens. Make sure not to break it.
- Using a rolling pin, flatten the mixture into a thin layer. Press and roll the pin over the top starting from the middle in different directions, making sure the mixture doesn't spread beyond the parchment paper. We're after 2-3mm thickness - but don't worry if it's a little thicker.
- Carefully slide the paper with the snap layer onto a baking tray. Peel off the top piece of paper very carefully, patching up any little holes that might appear.
- Bake in the oven, middle shelf, for 10-12 minutes, until golden brown. Keep an eye on it as the mixture does cook quickly and can burn easily. It should be golden brown.
- Remove from the oven and cool completely. If it's cold outside, put the tray out in the cold air.
- Once completely cooled, break into rectangular snap pieces. Keep in an airtight container for up to two weeks.

Makes an excellent accompaniment to hummus or other spread. I just discovered that I love dipping them into garlic/onion flavored cream cheese. I also love them with soups. - Toast the sesame seeds in a 350F oven for 10 to 15 mins, stirring occasionally, until golden brown.
- In a large bowl, combine seeds, flours and salt.
- Add oil, stir until the mixture comes together.
- Add just enough water (a tablespoon at a time) to form a workable dough.
- Divide dough into three equal portions.
- Roll one portion, until it's very thin (about 1/16 inch thick).
- Cut dough into desired shape (s)- use a wine glass/cookie cutter or a pizza wheel.
- Transfer them to parchment-lined cookie sheets.
- Bake the crackers for 25-30 mins, until they're beginning to brown around the edges.
- Remove them from oven and transfer to a rack to cool.
TOASTED SESAME THINS
Steps:
- Preheat oven to 300 degrees F (150 degrees C). Toast sesame seeds on pan, stirring occasionally, until lightly golden (about 10 minutes). Set aside. Increase oven temperature to 350 degrees F (175 degrees C). Grease cookie sheets.
- In large mixing bowl, combine flour, baking powder, salt, brown sugar and white sugar. Melt butter over low heat and add to mixture. Separate two of the eggs and add egg yolks. Add the other two eggs and mix well. Mix in toasted sesame oil (optional) and vanilla. Stir until well blended. Add 1 1/2 cups of sesame seeds and mix with electric mixer at medium speed for 10 minutes. Let dough sit for 10 minutes.
- Place remaining sesame seeds in shallow pan. Drop level tablespoonful sized pieces of dough into pan. Gently roll in sesame seeds while forming 2-inch long log shape. Taper the ends and place on cookie sheet about 1-inch apart.
- Bake until golden, 11 to 13 minutes. Let cool on wire racks.
