SOY-MARINATED FLANK STEAKS

1 flank steak, about 11/2 pounds
1/3 cup soy sauce
3 tablespoons Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons vegetable oil
4 cloves garlic, crushed
1 teaspoon sugar
Freshly ground pepper

Steps:

  • Poke the steak all over with the tines of a fork; cut in half, against the grain, to make 2 steaks (1steak may be slightly thicker). In a non-reactive bowl or large re-sealable plastic bag, combine the soy sauce, Worcestershire, vinegar, oil, garlic, sugar, and pepper, to taste. Add the steak, and turn to coat. Cover or reseal the bag and marinate at room temperature for 1 hour or refrigerate for up to 6 hours.
  • Remove the steak from the marinade and pat dry with paper towels.
  • Position the rack in the top position in the oven and preheat the broiler. Remove the steaks from the marinade and pat dry. Cook the steaks, for 5 to 8 minutes on each side for rare to medium-rare. Set aside on a cutting board for 5 minutes.
  • Cut the steak against the grain, on an angle, into very thin slices. Arrange the slices on a warmed platter or plates. Serve.

3 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon red-pepper flakes
1/4 teaspoon ground pepper
1 flank steak (about 2 pounds)
Vegetable oil, for grates

Steps:

  • In a 9-by-13-inch baking dish, whisk together soy sauce, sugar, vinegar, Worcestershire, mustard, red-pepper flakes, and pepper. Place steak in dish and cover dish tightly with plastic wrap. Swirl dish so that marinade coats the top of steak. Refrigerate 1 to 2 hours, turning steak occasionally.
  • Heat grill to high. Remove steak from marinade, letting excess drip off. Pour marinade into a saucepan and simmer over medium-high heat until reduced by half, about 10 minutes.
  • Clean and lightly oil hot grates. Grill steak, covered, 6 minutes; turn, brush with glaze, and grill until medium-rare, 6 minutes more. Let rest 8 to 10 minutes before slicing.

1 flank steak, about 24 oz.
Five-Spice Rub (optional)
1 Tbs. vegetable oil
Coarse salt
Sesame-Soy Sauce (optional)

Steps:

  • Just before lighting the fire, rub the steak with the Five-Spice Rub, if using, about 1 Tbs. per side.
  • When the fire is hot (you'll be able to hold your hand just above the grate for 1 second), drizzle both sides of the flank steak with the vegetable oil and sprinkle lightly with salt. Grill the steak for 8 minutes, flipping it a couple of times during cooking. Be sure to keep the thicker part over the hotter area of the fire and the thinner, tapered end over the cooler area. It should be rare to medium rare at this point. Transfer the steak to a clean wooden carving board to rest for 2 to 3 minutes. so the meat relaxes and the juices redistribute. To carve, cut very thin slices across the grain and on a 45-degree angle. Drizzle lightly with the Sesame-Soy Sauce, if you like.

1/4 cup thinly sliced green onions

So easy that I prepare in morning and grill when I get home from work! Do not substitute the sesame oil, it is essential for the flavor.

½ cup chopped scallions
¼ cup ketchup
1 ½ tablespoons sesame oil

  • Combine soy sauce, scallions, ketchup, sesame oil, and garlic in a large resealable plastic bag. Add flank steak, seal, and refrigerate for 4 hours to overnight.

3 tablespoons sesame seeds
1 tablespoon honey
2 tablespoons soy sauce
2 teaspoons dark sesame oil (optional)

1/2 teaspoon salt
2 tablespoons olive oil

Steps:

  • Partially thaw steak and slice across the grain as thinly as possible (if fresh, freeze slightly before slicing).

  • Marinate Steak: • Stir together soy sauce, sesame oil, sugar, 2 1/2 tablespoons Sherry, garlic, 1/4 teaspoon salt, and 1 teaspoon pepper in a liquid measuring cup until sugar is dissolved; reserve 1/2 cup marinade for sauce. • Put steak in a large resealable plastic bag and add remaining marinade.
