ASIAN RICE SALAD WITH SHRIMP

2 cloves garlic, minced
1 2-inch piece ginger, peeled and grated
3 tablespoons toasted sesame oil
1/4 cup rice vinegar
2 tablespoons soy sauce
Pinch of sugar
3/4 pound large shrimp, peeled, deveined and halved lengthwise
1 large carrot, shredded
2 stalks celery, thinly sliced
2 cups snow peas, thinly sliced
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 bunch scallions, thinly sliced
1/4 head iceberg lettuce, shredded
1 cup mung bean sprouts
1/2 cup chow mein noodles and/or chopped peanuts

Steps:

  • Whisk the garlic, ginger, sesame oil, vinegar, soy sauce and sugar in a large bowl. Transfer 2 tablespoons of the dressing to a medium bowl, add the shrimp and toss. Add the carrot, celery and snow peas to the remaining dressing and toss.
  • Heat a large skillet over high heat and add 2 teaspoons vegetable oil. Add the shrimp and stir-fry until they turn pink, 3 to 4 minutes, then transfer to the bowl with the vegetables. Add 3 to 4 tablespoons water to the skillet and scrape up the browned bits with a wooden spoon, then add the liquid to the bowl with the shrimp. Let the skillet reheat, then add the remaining 1 teaspoon vegetable oil and stir-fry the rice until toasted, about 2 minutes. Remove from the heat and let cool.
  • Add the rice and scallions to the shrimp-vegetable mixture and toss. Divide among bowls and top with the lettuce, sprouts, chow mein noodles and/or peanuts.

1/4 cup rice vinegar
3 tablespoons light brown sugar
1 tablespoon cornstarch
1 teaspoon garlic powder

1 lb medium shrimp, peeled, deveined and tails off
2 tablespoons unsalted butter

Steps:

  • Add the water, soy sauce, rice vinegar, brown sugar, cornstarch, garlic powder, sesame oil and red pepper flakes to a bowl. Whisk well to combine and set aside.
  • Heat a large nonstick skillet over medium high heat. Add the butter and let melt. Add the shrimp and season with salt and pepper. Cook until they just turn pink, about 3-4 minutes. Transfer to a plate or bowl.
  • Increase the heat to high. Give the reserved sauce a good whisk and add to the skillet. Let simmer until thickened, about 3 - 4 minutes.
  • Turn the heat down to medium. Add the shrimp and toss to coat. Let cook for 30 seconds. Garnish with sesame seeds.

1 lb. shrimp, peeled and deveined
1 Tbsp olive oil
2 Tbsp chili paste
3 Tbsp ginger sesame dressing (see below)
2 Tbsp lime juice
3 cups shredded napa cabbage
2 cups shredded red cabbage
1 cup shredded carrots
1 cup sugar snap peas, thinly sliced
1/4 cup fresh cilantro, chopped
2 Tbsp fresh mint, chopped
2 Tbsp rice vinegar
1 Tbsp reduced sodium soy sauce
1 clove garlic
1 Tbsp honey
1 Tbsp fresh ginger, peeled and minced
¼ tsp. toasted sesame oil
3 Tbsp olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Toss shrimp with olive oil on a large baking sheet and bake for about 5 to 7 minutes, until shrimp are pink and cooked through. Remove from oven and set aside.
  • To make the ginger sesame dressing, combine all ingredients in a small jar with a sealed lid and shake well until combined. I also use this jar to store any extra dressing to use for the week.
  • To make the sauce for the shrimp, whisk together chili paste, 3 tablespoons of the ginger sesame dressing and lime juice. Add cooked shrimp and toss to combine; set aside.
  • For the salad, combine shredded cabbage, carrots, snap peas, cilantro and mint in a large bowl and toss with the extra ginger sesame dressing. Top with cooked shrimp and enjoy!
  • If making this salad for lunches, store the dressing in a sealed jar and drizzle over salad just before eating so salad stays fresh.

6 tablespoons sour cream
3 tablespoons soy sauce
1 1/2 tablespoons dark or toasted sesame oil
1 1/2 tablespoons rice vinegar

Cayenne pepper, to taste
Kosher salt, to taste
36 (1 pound) medium to large (20-25 count) cooked shrimp, peeled and deveined - can chop if desired
1 1/2 cups cooked brown rice, cooled completely
3/4 cup shredded cabbage
3/4 cup (8-ounce can) drained, chopped water chestnuts
3/4 cup chopped fresh cilantro (optional)
6 tablespoons toasted, coarsely chopped or slivered almonds
6 large green onions, chopped (white, light green and some dark green part)

Steps:

  • In medium mixing bowl, whisk together the mayonnaise, sour cream, soy sauce, sesame oil, vinegar, ginger and cayenne pepper. Season to taste with kosher salt (may not need any).
  • Refrigerate for at least 30 minutes to allow the flavors to blend.

2 tablespoon Soy Sauce
1 tablespoon Sesame Oil
1 teaspoon Cornstarch

5 teaspoon White Wine Vinegar
1 tablespoon Butter
1 tablespoon Sugar

Steps:

  • Melt 1 TBSP butter in a small pot over medium-high heat. Add half the sesame seeds and toast, stirring constantly, until fragrant and lightly golden, 30 seconds to 1 minute. Stir in rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a gentle simmer. Cook until water has absorbed and rice is tender, about 15 minutes. Turn off heat; keep covered until ready to serve.
  • Meanwhile, pat shrimp dry with paper towels. Season with salt and pepper. In a medium bowl, whisk together soy sauce, cornstarch, 2 tsp sugar (4 tsp for 4 servings), half the sesame oil (we'll use the rest in step 4), 2 tsp water (4 tsp for 4), and half the sriracha. Add shrimp and toss to thoroughly coat.
  • Wash and dry all produce. Trim, peel, and halve cucumber lengthwise. Scoop out and discard seeds with a spoon. Slice cucumber crosswise into thin half-moons. Trim and thinly slice scallions, separating whites from greens.
  • In a separate medium bowl, combine cucumber, scallion whites, vinegar, remaining sesame oil, 1 tsp sugar (2 tsp for 4 servings), and a big pinch of salt and pepper.
  • Heat a large pan over medium-high heat. Add shrimp (and any marinade) and 1 TBSP dressing (2 TBSP for 4 servings) from bowl with cucumber salad. Cook, stirring, until mixture begins to thicken and shrimp is firm and cooked through, 3-4 minutes. Season with salt and pepper. Turn off heat.
  • Fluff rice with a fork and season with salt and pepper; divide between plates. Serve with shrimp (and any remaining sauce from pan) and salad alongside. Sprinkle with scallion greens and remaining sesame seeds. Drizzle with remaining sriracha, if desired.
