1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.

This a healthier, homemade sesame snaps recipe that uses all natural ingredients. Enjoy as a snack or a little treat. These are gluten-free, nut-free, paleo and vegan-friendly (replace honey with maple syrup or extra rice syrup).

1/2 cup sesame seeds
1/4 cup pumpkin seeds/pepitas
1/4 cup desiccated coconut, unsweetened
2 tablespoons brown rice syrup
1 tablespoon honey (or maple syrup)
1/2 tablespoon melted coconut oil
1 teaspoon vanilla essence/extract

Steps:

  • Preheat the oven to 150 C / 300 F.
  • Thoroughly combine all ingredients in a bowl with a spoon, pressing down the mixture against the sides.
  • Measure out a piece of parchment/baking paper to fit a medium flat baking tray (about 40cm x 30cm) and place it on a cutting board or flat surface. See step-by-step pics above.
  • Scoop the mixture into a ball and transfer to the middle of the sheet. Spread into an oval shaped pancake, pressing down with the back of the spoon. Make sure there are no visible holes. Then place another piece of parchment paper over the top and press down with your hands, until the pancake flattens. Make sure not to break it.
  • Using a rolling pin, flatten the mixture into a thin layer. Press and roll the pin over the top starting from the middle in different directions, making sure the mixture doesn't spread beyond the parchment paper. We're after 2-3mm thickness - but don't worry if it's a little thicker.
  • Carefully slide the paper with the snap layer onto a baking tray. Peel off the top piece of paper very carefully, patching up any little holes that might appear.
  • Bake in the oven, middle shelf, for 10-12 minutes, until golden brown. Keep an eye on it as the mixture does cook quickly and can burn easily. It should be golden brown.
  • Remove from the oven and cool completely. If it's cold outside, put the tray out in the cold air.
  • Once completely cooled, break into rectangular snap pieces. Keep in an airtight container for up to two weeks.

1 tablespoon baking powder
1/2 teaspoon salt
2 sticks butter, at room temperature
1 cup sugar
3 eggs
1 teaspoon vanilla extract
1 cup heavy cream
2 cups sesame seeds

Steps:

  • Preheat oven to 350 degrees F.
  • Combine the flour, baking powder and salt in a small bowl and set aside.
  • Put the butter and sugar into the bowl of a mixer and cream until fluffy. Add the eggs, one at a time with the mixer running and beat until smooth. Add the vanilla and beat. Next, add the flour mixture and beat until well incorporated.
  • To form the cookies, divide the dough in half and roll into logs 1-inch in diameter. Cut the logs into 3-inch lengths. Dip each piece of dough into the cream and then roll in the sesame seeds. Place the cookies on a baking sheet and place in the oven until golden brown, about 15 to 20 minutes.
  • Let cool and serve. These will keep in an airtight container for up to 2 weeks.

1 teaspoon baking powder
1/4 teaspoon fine salt
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 cup granulated sugar
1/3 cup light brown sugar
1/4 cup tahini (ground sesame paste)
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup sesame seeds, white, black or a combination of both

Steps:

  • Whisk the flour, baking powder and salt together in a medium bowl. Set aside.
  • Beat the butter and sugars in a large bowl using an electric mixer until well combined, about 3 minutes. Add the tahini, vanilla and egg and beat until light, about 3 minutes. Stir in the flour. Form the dough into two 12-inch logs that are 1 1/2 to 2 inches in diameter, wrap in plastic wrap and refrigerate until very firm, 4 hours and up to overnight.
  • Preheat the oven to 325 degrees F. Line two or three baking sheets with parchment paper.
  • Remove one log of dough from the refrigerator and slice into 1/4- inch-thick slices. Place the sesame seeds on a plate. Coat the cookies in sesame seeds by pressing them lightly into the seeds, and place them on the prepared baking sheets. Bake until lightly golden around the edges, about 12 minutes, rotating the baking sheets top to bottom and front to back halfway through cooking. Cool the cookies on the baking sheet for 10 minutes, and then transfer to a rack to cool completely. Repeat with the remaining log.

115 g butter
1 cup brown sugar
1 egg
1/2 cup flour
1/4 teaspoon baking powder
1 pinch salt
1 teaspoon vanilla
1 cup sesame seeds, grilled

Steps:

  • Cream the butter with the sugar.
  • Add the egg, beat then add the flour, baking powder, salt, vanilla and sesame seeds.
  • Beat well.
  • Drop teaspoons of dough on a greased baking sheet making sure to space out each cookie.
  • Bake in a preheated oven of 340 F for 8 to 10 minutes or until the cookies are hard.
  • Let cool few seconds, then take them off the baking sheet carefully.
  • Chilicat had 35 cookies, using a 1-teaspoon scoop.

1 cup white sugar
1 ½ cups shortening
¾ cup milk
.063 teaspoon anise oil
2 ounces sesame seeds

Steps:

  • Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.
  • Add anise oil (optional) small amount for it is very strong, to 1/2 cup of the milk and add to flour mixture. Gradually add more of the milk mixing until dough holds together.
  • Pull off small portions of dough and roll between palms of the hands into a roll about finger size. Roll in sesame seeds. Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
  • Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

Though these are reminiscent of the traditional Greek or Italian cookies of the same name, the recipes originates in the US south and traces its roots to Africa. Nutty toasted sesame seeds are included in the dough as well as serving as the crispy coating. They are now commonly served at Kwanzaa celebrations. I have not tried this yet but am posting for ZWT 3.

1 cup sesame seeds, divided in halves
2 cups all-purpose flour
3/4 cup granulated sugar
3/8 cup butter, softened
2 tablespoons shortening
2 tablespoons water
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 egg

Steps:

  • In a large heavy skillet over medium heat, toast sesame seeds until golden brown, shaking skillet and stirring frequently to keep them moving. Remove from heat and set aside.
  • Measure flour and remaining ingredients into a large mixing bowl.
  • With hand-held mixer at low speed, beat until well blended, occasionally scraping bowl. With spoon, stir in 1/2 cup sesame seeds.
  • Using about 2 teaspoons of dough for each cookie, shape into ovals about 2 inches in length; roll in remaining toasted sesame seeds. Place ovals about 1 inch apart on ungreased baking sheets. Bake in preheated 350° oven for about 20 minutes, or until lightly browned. Remove cookies to wire racks to cool. Store in tightly covered container for up to 1 week.
  • Makes about 36 sesame seed cookies.

1/2 cup powdered sugar
1/2 cup vegetable oil
1/3 cup all purpose flour
1 1/2 cup raw sesame seeds

Steps:

  • Beat the egg whites until they start to get bubbly. Add the powdered sugar and beat until the sugar is dissolved. Beat in the oil and flour and mix well. Stir in the sesame seeds. Let the mixture sit for 20 minutes.
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Fill a zip top bag with batter and cut a ¼ inch hole in one corner. Squeeze out the batter onto the parchment to make circles, about an inch and a half apart. Bake for 15-18 minutes until golden. Cool and serve.

  • Preheat oven to 325 degrees Fl.
  • In a large bowl, sieve the flour with salt and baking soda.

I have tried using less oil, also draining some onto a paper towel after cooking, but without good results. The oil seems to be the magic ingredient for the special slightly chewy texture. The recipe is adapted from the same in "Chinese Cooking" by Mary Wilson.

3/4 teaspoon baking powder
1/2 teaspoon Chinese five spice powder
1/2 teaspoon salt (or less)

1/2 cup corn oil
1 egg
1 teaspoon vanilla
1/4 cup sesame seeds, toasted

Steps:

  • Preheat oven to 350.
  • Toast sesame seeds in a frying pan at medium heat. Stir them occasionally and watch them like a hawk! They will stay light and then suddenly brown in a few seconds - remove them from heat to a small bowl once they are golden brown.
  • Combine flour, baking powder, spice powder, salt, brown sugar, corn oil, egg, vanilla in a mixing bowl. Mix well.
  • Knead dough with hands until slightly rubbery.
  • Roll into balls about one inch in diameter.

  • Preheat oven to 350 degrees Fahrenheit.
