BREAD MACHINE SESAME FRENCH BREAD
I make this bread often, especially when I want a bread that has a bit more body than a white bread, but not as rustic as a traditional French bread. I think the sesame seeds give it a really nice flavor. It makes about a 1 1/4 lb. loaf. Unfortunately, I can't remember where on the web I found this.

Steps:
- Place all the ingredients into the bread machine according to manufacturer's directions.
- Bake using french bread cycle if your machine has it.
- If not, use the dark crust white cycle.
- Start with 2 3/4 cups flour, you might need more depending on a lot of factors.
- My favorite way to get the texture I like is about 10 minutes into the knead cycle I will pinch a good size chunk of dough between my thumb and two or three fingers.
- If it feels just moist and some dough sticks to my fingers, it's just right.
- If no dough sticks, it's a bit dry and add a few teaspoons of water.
- If it feels too soft and very sticky, add more flour until you get the right consistency after about another 5 minutes of kneading.
SESAME SEED BREAD (BREAD MACHINE)
This bread has a fabulous taste from the addition of sesame oil. You can also add other seeds of your choice which I have listed as 'optional.' Cooking time includes cycle time in machine and second proofing. From '100 Bread Machine Recipes' by Vicki Smallwood.

- Place the first four ingredients into your bread machine pan in the order they are listed above.
- Mix the flour with the seeds and pour into the pan, followed by the yeast.
- Set the programme to 'DOUGH'.
- When the cycle has finished, (my machine takes 90 minutes) transfer the dough to a floured surface, knead about 5 times then shape as you like (round, oval, loaf, etc.) Place the dough on a lightly oiled baking sheet and cover it with a piece of oiled cling film/plastic wrap. Leave it to prove until it has almost doubled in size (about an hour).
- Preheat the oven to 200C/400°F
- Using the point of a sharp knife, cut 4-5 slashes in the loaf no more than 1/4 inch deep, making a simple design of your choice. (ex: / / / / or XXXX, etc.).
- Brush the dough gently with the milk then sprinkle the sesame seeds over the top.
- Bake for 25 minutes or until it has turned golden brown. Transfer the loaf to a wire rack and leave it to cool a little before slicing.

- 1. Add ingredients in the correct order for your bread machine, except for the sesame seeds. *** Remember that you can substitute wheat(or some other) flour for part of the bread flour. Add an appropriate amount of gluten if you use wheat flour.
- 2. Set your machine for the correct sized loaf, and desired loaf color.
- 3. Add sesame seeds when the machine beeps for add-ins.
- 4. The next time your machine beeps, you will have a delicious loaf of bread.
- 5. Note: I sometimes use the bread machine to make dough only, then place in a bread pan, sprinkle with more sesame seeds, let rise and bake in the oven at 350 for 20-30 min. until golden brown. (I keep my eye on it for color, sometimes I forget to check the actual time.)
SESAME FRENCH BREAD

- In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt and 4 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Divide in half. Roll each half into a 15x10-in. rectangle. Roll up from a long side; seal well. Place with seam side down on greased baking sheet sprinkled with cornmeal. , Beat egg white and water; brush over loaves. Sprinkle with sesame seeds. Cover with plastic wrap sprayed with cooking spray; let rise until nearly doubled, about 30 minutes. , With a sharp knife, make 4 shallow diagonal cuts across top. Bake at 400° until lightly browned, about 25 minutes. Remove from pan and cool on a wire rack.
